10 soft taco-size flour tortillas
2 cups cooked shredded chicken
2 cups shredded monterey jack cheese
3 tablespoons butter
3 tablespoons flour
2 cups chicken broth
1 cup sour cream
1 (4 ounce) can diced green chilies

Steps:

  • Preheat oven to 350 degrees. Grease a 9x13 pan.
  • Mix chicken and 1 cup cheese. Roll up in tortillas and place in pan.
  • In a sauce pan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly.
  • Stir in sour cream and chilies. Do not bring to boil, you don't want curdled sour cream.
  • Pour over enchiladas and top with remaining cheese.
  • Bake 22 min and then under high broil for 3 min to brown the cheese.
  • *side note - the sauce doesn't freeze very well, so if you're making them ahead of time. Just make and freeze the Enchiladas. Make the sauce the day of.

3 cups shredded cheddar cheese, divided
2 cups shredded Monterey Jack cheese
2 cups chopped cooked chicken
2 cups sour cream
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 can (4 ounces) chopped green chilies
2 tablespoons finely chopped onion
1/4 teaspoon pepper
1/8 teaspoon salt
10 flour tortillas (8 inches), warmed
Pico de gallo, optional

Steps:

  • In a large bowl, combine 2 cups cheddar cheese, Monterey Jack cheese, chicken, sour cream, soup, chilies, onion, pepper and salt. Spoon about 1/2 cup off center on each tortilla; roll up. Place seam side down in a greased 13x9-in. baking dish., Cover and bake at 350° for 20 minutes. Uncover; sprinkle with remaining cheddar cheese. Bake 5 minutes longer or until cheese is melted. Let stand for 10 minutes before serving. If desired, serve with pico de gallo.

12 white or yellow corn tortillas (6 inches)
4 ounces reduced-fat cream cheese
1 tablespoon plus 1 cup fat-free milk, divided

1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of chicken soup, undiluted

1/4 cup butter or 1/4 cup margarine
1/4 cup flour
2 cups chicken stock (or canned broth)
8 ounces sour cream
8 ounces chopped green chilies, undrained
1/4 teaspoon cayenne pepper
3 cups chopped cooked chicken breasts
1 small onion, finely chopped
2 cups monterey jack cheese (or more)
8 flour tortillas

Steps:

  • In medium saucepan, melt butter. Stir in flour, add chicken stock, heat and stir until thickened and bubbly.
  • Add sour cream, green chilies and cayenne. Remove from heat.
  • In a separate bowl, toss cooked chicken and chopped onion. To this bowl, add 3/4 cup sauce mixture from the saucepan. Stir well.
  • Fill each tortilla with scant 1/3 cup chicken mixture, roll up and place seamside down in oblong greased casserole.
  • Pour remaining sauce on top.
  • Bake at 350 for 30 minutes, covered.
  • Remove from oven, take off foil and sprinkle cheese over top.
  • Return to oven or just let it sit on the stovetop while you call everyone to the table. Either way, the cheese will melt.

Wonderful, cheesy chicken enchiladas that are easy to prepare. Everyone I have made these for loved them! These are great with a little salsa, guacamole and sour cream on top!

4 bone-in chicken breast halves
2 tablespoons olive oil
1 (4 ounce) can diced green chile peppers, drained
1 jalapeno pepper, chopped
1 clove garlic, minced
1 (8 ounce) package cream cheese
2 cups shredded Monterey Jack cheese, divided
½ cup water
8 (10 inch) flour tortillas
1 cup heavy cream

Steps:

  • Place the chicken breast halves into a saucepan, and fill with enough water to cover. Bring to a boil, and cook until the chicken is cooked through, about 20 minutes. Remove from the water, and set aside to cool.
  • Preheat the oven to 375 degrees F (190 degrees C). Remove the chicken meat from the breasts, and discard the skin and bones. Set aside.
  • Heat the olive oil in a large skillet over medium heat. Add the green chilies, jalapeno and garlic. Cook and stir for a few minutes, until fragrant, then stir in the cream cheese and half of the Monterey Jack. As the cheese begins to melt, gradually stir in the water. Chop the chicken meat, and stir into the skillet. Remove from the heat.
  • Spoon the chicken mixture into tortillas, and roll up. Place the rolls seam side down in a 9x13 inch baking dish. Sprinkle the remaining Monterey Jack cheese over the top, then pour cream over all.
  • Bake for 30 minutes in the preheated oven, or until the enchiladas are golden brown on the top.

8-10 small flour tortillas
3 cups cooked chicken (shredded or chopped)
3 cups Monterey jack cheese (shredded-divided)
3 tablespoons unsalted butter
3 tablespoons flour
2 cups chicken broth
1 cup sour cream
1 (4-ounce can) diced green chilies mild
2-3 tablespoons green onions (sliced)

Steps:

  • Spray a 9 X 13-inch baking dish with cooking spray and set aside. Preheat oven to 350 degrees.
  • In a small bowl, combine chicken and 1 cup of Monterey Jack cheese. Fill tortillas with this mixture and roll each one up then place seam side down in the prepared pan.
  • Melt the butter in a skillet. Sprinkle flour over melted butter and whisk to combine. Cook for 1 minute to remove the flour taste. Remove the skillet from heat and whisk in broth. Place back on the heat and cook until the mixture has thickened and is bubbly. Cool sauce for 3-5 minutes. (Don't skip this step- if the sauce is too hot and you add the sour cream it will curdle it-yuck!) Add sour cream and chilies and stir until sauce is smooth and sour cream is completely dissolved.

1 cup green chile enchilada sauce
1 cup shredded Monterey Jack cheese
7 ounces green chiles (drained and rinsed (1 can))
1/2 cup diced yellow onion (optional)
10 medium flour tortillas
2 tablespoons salted butter
3 tablespoons flour
8.5 ounces unsalted chicken broth
1 cup low fat sour cream
7 ounces green chiles (drained and rinsed (1 can))
1 1/2 cups shredded Monterey Jack cheese
cilantro for garnish (roughly chopped)

Steps:

  • Preheat oven to 350F. Spray a 9x13 inch baking dish with nonstick spray.
  • In a large bowl, stir together the chicken, enchilada sauce, 1 cup cheese, 7 ounces green chiles, and onion.
  • Place 2-3 tablespoons of the chicken mixture and fill each tortilla down the center, rolling to close. place in the baking dish, seam side down. I put 8 tortillas along the long side of the baking dish and then squeezed in the extra two along the side.
  • Make the cheese sauce.
  • In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour until smooth.
  • Pour in the chicken broth and whisk to combine. Allow to simmer and thicken for 2-3 minutes.
  • Stir in the sour cream and remaining 7 ounces green chiles.
  • When bubbling, stir in 1 cup cheese and stir until melted and smooth.
  • Pour the sauce over the enchiladas, fully covering. Top with the last remaining 1/2 cup cheese.
  • Bake for 25-30 minutes or until bubbly and slightly browned. Garnish with cilantro.

The Pioneer Woman's recipe for white chicken enchiladas is creamy, delicious, nutritious-and it comes together in just about 30 minutes.

2 1/2 c. cooked, shredded chicken
2 c. reserved broth from chicken
3 tbsp. canola oil
12 whole corn tortillas
1 large onion, diced
3 4-ounce cans whole green chilies, diced
1 whole jalapeno, seeded and finely diced
1 tsp. paprika
1/2 c. heavy cream
2 tbsp. butter
2 tbsp. flour
1 c. sour cream
2 1/2 c. Monterey Jack cheese, grated
Salt and pepper, to taste
Picante sauce (optional)
Cilantro, chopped

Steps:

  • Heat 2 tablespoons canola oil in a small skillet over medium-high heat. Fry tortillas for no longer than 20 seconds, just to soften (do not allow to become crisp.) Place tortillas on a large towel or stack of paper towels to drain.
  • Heat 1 tablespoon canola oil in separate skillet over medium heat. Add onions and jalapenos and saute for 1 minute, just to start the cooking process. Add chicken, half of the green chilies, and 1/2 teaspoon paprika. Stir together. Add 1/2 cup chicken broth and stir. Add cream and stir, allowing mixture to bubble and get hot. Turn off heat and set aside.
  • In a separate large skillet, melt butter and sprinkle in flour. Whisk together and cook over medium heat for one minute. Pour in 1 1/2 cups chicken broth. Whisk together and cook for another minute or two. Stir in the other half of the chilies. Reduce heat, then stir in sour cream. Add 1 1/2 cups grated cheese and stir to melt. Add 1/2 teaspoon paprika. Check seasoning and add salt and pepper as needed.
  • To assemble, spoon chicken mixture on top of tortillas, one by one. Top with plenty of cheese and roll up. Place seam side down in a 9 x 13 casserole dish.
  • Pour cheese mixture all over the top of the tortillas. Top with extra cheese if you'd like, then bake at 350 degrees for 30 minutes. Sprinkle generously with chopped cilantro.
  • Serve with picante sauce, if desired.
  • Faint. Repeat as needed.

3 TBS flour
3 1/4 cups chicken stock
1 4 oz can green chilies
1/2 cup salsa verde (I like spicy for this)
1 1/2 cups sour cream
1/2 teaspoon paprika
2 cups shredded Monterrey Jack or Pepper Jack cheese
Salt & pepper
Filling
1 large Vidalia onion (chopped small)
1-2 Jalapenos (chopped small (see notes))
4 oz can green chilies
1/2 cup salsa verde
4 cups shredded chicken
3/4 cup chicken stock
1 teaspoon Paprika
Salt & pepper
3/4 cup heavy cream
Assembly
2 cups shredded Monterey Jack or Pepperjack cheese
Tortillas (I use 7-8 large flour tortillas)

Steps:

  • In a medium pot, melt butter, add flour and whisk until combined. Slowly pour in chicken stock, whisking while you do.
  • Add a can (4oz) of chilies, salsa verde, sour cream, paprika and cheese and whisk until smooth.
  • Taste and add pepper and if necessary add some salt.
  • Set aside.
  • Heat 2 TBS grapeseed or olive oil in a medium pot, add onions and jalapeno and saute for 2 minutes.
  • Add chicken, a small 4 oz can of green chilies, salsa verde, stock, and paprika. Stir to combine.
  • Add cream, salt, and pepper and cayenne if you choose).
  • Heat until mixture begins to bubble, set aside.
  • Add a small amount of sauce to the bottom of your baking dish. (preheat oven to 375 degrees)
  • Fill each tortilla with a couple of big spoonfuls of the mixture, sprinkle shredded cheese over top and roll up.Place in baking dish and repeat until all mixture is used up.
  • Spoon sauce over top the enchiladas and bake for 20 minutes.
  • Remove from oven, sprinkle with cheese and return to the oven until cheese is melted.
  • Sprinkle with parsley, cilantro and/or scallions and serve.

4 boneless, skinless chicken breast fillets
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
2 green bell peppers
2 red bell peppers
2 yellow bell peppers
2 or 3 hot chiles, such as serrranos, jalapenos or the like
1 large onion, diced
1 jalapeno, seeded and finely diced
1 tablespoon vegetable oil
3 cups low-sodium chicken broth, plus more as needed
1 1/2 cups heavy cream
1 teaspoon paprika
4 tablespoons (1/2 stick) butter
1/4 cup all-purpose flour
3 1/2 cups grated Monterey jack cheese
1 cup sour cream, plus more for serving
16 small corn or flour tortillas
1 cup store-bought salsa
1/4 cup fresh cilantro leaves

Steps:

  • Preheat the oven to 400 degrees F.
  • Sprinkle the chicken breasts with salt and pepper and drizzle with the olive oil. Put on a baking sheet and bake until just cooked through, about 15 minutes. Let cool slightly, then shred the meat with 2 forks.
  • Roast the bell peppers and chiles directly on a gas burner (or directly under the broiler) until the skin is mostly black. Throw the peppers and chiles into a plastic storage bag and seal it. Let them steam inside the bag for 30 minutes or so. Core and seed, then scrape off the black skin. Chop and set aside.
  • In a large skillet over medium heat, saute the chopped onions and jalapeno in the vegetable oil until the onions are translucent, 2 to 3 minutes. Throw in the shredded chicken, then stir in 1 cup of the chicken broth and 1 cup of the heavy cream. Add 1/2 teaspoon of the paprika and some salt and pepper, then add half of the chopped roasted peppers and chiles. Stir the mixture around and let it cook for a couple of minutes, then set it aside.
  • In a separate skillet over medium-high heat, melt the butter. Sprinkle in the flour and whisk it together to combine. Cook, whisking constantly, for 1 minute. Then pour in the remaining 2 cups chicken broth, stirring constantly. Cook, stirring, until the mixture is smooth, 1 to 2 minutes. Then add the remaining 1/2 cup heavy cream, the remaining 1/2 teaspoon paprika and 1 1/2 cups of the grated cheese. Finally, stir in the sour cream and the rest of the chopped roasted peppers and chiles. If the sauce needs a little thinning, splash in as much broth as you need. Give the sauce a taste and add salt if it needs it (with all the cheese, it shouldn't need much).
  • Preheat the oven to 350 degrees F.
  • Wrap the tortillas in paper towels and microwave until very soft and pliable, about a minute.
  • Place a small amount of the chicken mixture and about a tablespoon of the grated cheese down the center of each tortilla. Fold over the edges and arrange them seam-side down in a 9-by-13-inch baking dish. Pour the sauce over the top. Sprinkle the top with the remaining 1 cup grated cheese and bake until bubbly, 20 to 25 minutes.
  • Serve with a dollop of sour cream and salsa on top and a sprinkle of cilantro leaves.
