WHITE TRASH CHOCOLATE PIE
My mother has been making this recipe for over 20 years. The original recipe comes from the cookbook White Trash Cooking by Matthew Meckler. This has a dense texture and intense almost dark chocolate flavor instead of a creamy pudding type filling.

Steps:
- Beat egg yolks with half of the sugar and the melted butter.(melt butter in the micro for about 20 seconds -- you don't want it to be too hot or it will cook the egg yolks when you add it).
- Mix the other half of sugar with the cocoa and flour and add the 1/4 cup of scorching hot water. Mix with a whisk until smooth.
- Combine the two mixtures and mix thoroughly.
- Add vanilla and milk and mix thoroughly.
- Don't get upset if mixture seems thin. It will set after baking.
- Pour into an unbaked pie shell and cover the edges with foil or a pie ring to prevent the crust edges from browning excessively. Bake for 55-60 minutes at 325. It will still be a little "jiggly" bit it will set up nicely as it cools.
- Let cool at room temperature for a couple of hours and then put it in the fridge for a couple of hours to cool good and proper.
- Then -- serve well chilled with homemade whipped cream or just be white trash like me and use Cool Whip.

Steps:
- Melt the white chocolate in small increments to prevent burning, in the microwave. Meanwhile, dump the cereals, pretzels, and candy into a big bowl.
- As soon as the white chocolate is melted, pour over mixture and toss gently until well coated {the more white chocolate the merrier, I have found}.
- Spread out the mixture on wax paper and leave to dry.
- Optional - Melt a small amount of chocolate and drizzle over the top as desired, or add sprinkles.
- Once cooled, break-up and store in resealable containers or bags.

Steps:
- Line 2 rimmed baking sheets (or 1 very large baking sheet) with wax paper. Set aside.
- Add rice chex, cheerios, pretzels, peanuts and m&m candies in a very large bowl and stir to combine.
- In a large microwave-safe bowl, add white chocolate, vegetable oil (if using), and microwave on MED power (50%) for 1 minute 30 seconds, stirring every 30 seconds.
- If needed, microwave again, in 15 second intervals, stirring after each cooking interval, until chocolate is JUST melted.
- Pour melted chocolate over ingredients in large mixing bowl and use a rubber spatula to gently stir, until all ingredients are coated.
- Spread out onto prepared baking sheet in an even layer. Let sit for 1 hour, or until set and hard. You can refrigerate the baking sheets to speed up this process if you'd like. Break apart into pieces and enjoy!
