WHITE CHOCOLATE PRETZELS
My girls love these so much--if I don't have some made they buy them in the stores and they are very expensive. But they are quite cheap to make and very little trouble.

Steps:
- Gather the ingredients.
- Unfold a piece of newspaper and place it on a table or counter. Top the newspaper with parchment or wax paper.
- Place white chocolate in a microwavable container. Microwave the mixture on high for 1 minute. Stir and, if needed, continue to cook for 15 seconds at a time until the chips are melted. You might also want to put the chocolate in a bowl over a pot of near-boiling water (double-boiler style) being careful not to let the water touch the bottom of the bowl.
- Working quickly, use kitchen tongs to dip one pretzel at a time into the melted chocolate. Cover the pretzels completely with chocolate, or cover only half of the pretzel for a distinctive look (that also lets people know what's under the chocolate and is ideal for party presentations).
- Place the dipped pretzels on the prepared work surface. The chocolate will cool and dry onto the pretzels quickly. Dip as many pretzels as you have chocolate. Allow all of the chocolate-covered pretzels to dry (this typically takes less than an hour) before storing in a cool, dry place in an airtight covered container with parchment paper or wax paper between each layer of pretzels.

- Melt the white chocolate melting wafers, candy coating, or almond bark in the microwave, according to package instructions. If you are going to use white chocolate chips, place the chocolate chips in a microwave-safe bowl. Microwave for 1 minute and 30 seconds at 50% power. Stir the chips. Microwave for 30 seconds at 100% power. Stir until chocolate is melted and smooth. It might take a little more or less time, depending on your microwave. The key is to not over cook the chocolate.
- Dunk each pretzel crisp into the melted white chocolate, making sure the entire pretzel is coated. Use a fork to remove the pretzels from the chocolate. Gently shake the fork back and forth to remove any excess chocolate.
- Place the dipped pretzels on the parchment paper or wax paper and sprinkle immediately with crushed candy canes. Let the pretzels sit until the chocolate hardens. If your house is warm or if you want to speed up the process, place the baking sheet in the refrigerator. Store the chocolate covered pretzels in an airtight container on the counter or in the fridge for up to 2 weeks.

- To a medium, microwave-safe bowl, add about half the bag of white chocolate chips and heat for 1 minute on high power to melt. Stop to check and stir. White chocolate scorches easily, do not overheat. Heat in 15-second bursts until chocolate can be stirred smooth. If you prefer to melt over a double-broiler, feel free. I prefer to melt about half the bag of chocolate at one time so it doesn’t start hardening up before I’ve gotten through dipping. As needed return bowl to micro to heat for 15 seconds to re-soften chocolate.
- Add about 5 pretzels to the bowl of chocolate, and using a fork, lift pretzels out one at a time, letting the excess chocolate run off, before placing on prepared baking sheet. After all 5 pretzels are dipped, optionally add sprinkles before chocolate sets. Repeat dipping process with remaining pretzels and chocolate. As needed, return the bowl of chocolate to micro and heat for 15 seconds to re-soften if it’s getting thick. If desired, melt the second half of the bag of white chocolate for a larger batch. I get about 2 dozen pretzels from a half bag.
- Allow pretzels to set up at room temp for at least 2 hours, or expedite by transferring to the freezer for 15 minutes. Pretzels will keep airtight at room temp or in the fridge for many weeks (or months). I prefer them chilled and store in the fridge.

- Place the semisweet chocolate and 1 1/2 teaspoons coconut oil in a microwave-safe bowl. Heat for 30 seconds, stir, then continue heating in 15-second bursts, stirring between each. Repeat until the chocolate is almost but not entirely melted. Remove from the microwave, add 1/2 teaspoon of the peppermint extract, and stir, letting the residual heat melt the chocolate the rest of the way. Chocolate can burn quickly and easily, so don’t walk away or be too ambitious with the amount of time you are adding. Your patience will be rewarded.
- Place the white chocolate and remaining 1 1/2 teaspoons coconut oil in a separate microwave-safe bowl and melt, following the same process above. Stir in the remaining 1/2 teaspoon peppermint extract.
- Dip half of the pretzels into the white chocolate, leaving one corner undipped. Shake off any excess and use a knife or fork to wipe some of the excess chocolate off of the back of the pretzels so that the holes are open. Place on the prepared baking sheet. With the tines of a separate fork, drizzle with semisweet chocolate and immediately sprinkle with the crushed candy pieces. I was able to dip about four pretzels in a row before sprinkling and have enough time before the coating hardened.
