- Preheat the oven to 350 degrees F (175 degrees C).
- Combine peanut butter, almond flour, sugar substitute, oil, eggs, vanilla extract, baking powder, xanthan gum, and salt in a bowl. Add chocolate chips and peanuts. Mix until a stiff cookie dough comes together.
- Spoon out 1 to 2 tablespoons of dough for each cookie and form into balls; place on a baking sheet. Flatten balls in a criss-cross pattern with a fork.
- Bake in the preheated oven until golden, 12 to 15 minutes.

- Preheat the oven to 400 degrees F (200 degrees C).
- Mix brown sugar, butter, and eggs together in a bowl until light and fluffy. Add vanilla extract.
- Stir almond flour, baking soda, and baking powder together in a separate bowl. Add to butter mixture until well blended. Stir in white chocolate chips and peanut butter.
- Place tablespoonfuls of batter 2 inches apart onto ungreased cookie sheets.
- Bake in the preheated oven until golden, about 20 minutes. Cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.

WHITE CHOCOLATE CHIP PEANUT BUTTER COOKIES
This delicious cookie has a very similar taste to white chocolate REESE'S Peanut Butter Cups. They don't last long in my house. These were inspired by my husband that loves white chocolate. I made him plane peanut butter cookies and he wondered how they would be like with white chocolate in them. NOTE: this recipe does NOT contain flour!!!

- Preheat oven at 350°F.
- Mix all ingredients together well. Roll into balls made from 1 tbs of dough and place on baking paper covered cookie sheet. Place 1 inch apart. Bake in the oven for 16-18 minutes. Leave on the cookie sheet for 5 minutes before placing them on a wrack to finish cooling.

- Preheat oven to 350°F. Line two baking sheets with parchment paper and set aside.
- In a medium bowl, combine flour, baking powder, baking soda and salt and set side.
- In a large bowl, using a hand mixer or stand mixer, beat butter and peanut butter until smooth and combined. Add both sugars and beat to combine. Beat in egg and vanilla extract. Add the flour mixture all at once and beat until just combined. Stir in about 2/3 cup of butterscotch chips (reserving the rest for topping the cookies).
- Scoop the dough into balls (I use a 1 1/2 tablespoon scoop), and place a couple inches apart on the prepared baking sheets. Press a few of remaining butterscotch chips on top of the dough balls. Bake for 8-11 minutes, until the edges are light golden brown, but the center is still slightly underdone. Immediately sprinkle with sea salt, and place the sheets on wire racks to cool. Repeat with remaining dough, allowing the cookie sheets to cool COMPLETELY before placing dough on them.
