¼ cup sweetened flaked coconut
1 cup all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt
¾ cup brown sugar
½ cup unsalted butter, softened
¼ cup white sugar
½ teaspoon almond extract
1 egg yolk
2 tablespoons milk
½ cup white chocolate chips, or to taste
¼ cup toasted chopped almonds, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper. Place coconut flakes on 1 baking sheet; leave the second baking sheet for the cookies.
  • Bake coconut in the preheated oven until slightly brown, about 6 minutes. Leave the oven on.
  • Combine flour, baking soda, and salt in a small bowl. Cream brown sugar, butter, white sugar, and almond extract together in a separate bowl. Add egg yolk and milk and mix. Pour in flour mixture and combine until almost fully incorporated. Add chocolate, almonds, and toasted coconut; mix well.
  • Drop 1 1/2-inch balls of dough on the prepared baking sheet.
  • Bake in the preheated oven until golden on the edges and soft in the centers, 8 to 10 minutes.

These are sweet scones and I just adore them with the raspberry jam and whipped cream. A decadent treat!

2 cups flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup butter, cold
1 large egg
2/3 cup buttermilk
4 -6 ounces white chocolate chips
raspberry jam
whipped cream

Steps:

  • Lightly grease a baking pan and preheat oven to 400°.
  • In a large bowl, combine the dry ingredients.
  • Cut the butter into small pieces and incorporate into the flour mixture with a pastry cutter, or a fork, until evenly incorporated.
  • In a separate bowl, beat the egg and buttermilk together and stir lightly into the flour mixture.
  • Mix in the chips.
  • Knead dough together, just until mixed.
  • This is a fairly wet dough-do not add too much flour or handle too much or the scones will get tough.
  • On a lightly floured surface, pat or roll the dough out to about 1-inch thick.
  • Cut with a round 2-inch floured cookie cutter.
  • Place on a baking sheet and bake about 15 minutes, or until scones are a light golden brown.
  • Serve with jam and whipped cream.

3 1/2 cups all-purpose flour
5 teaspoons baking powder
2 tablespoons sugar
1 teaspoon salt
4 ounces butter, cold
3 eggs, divided
2 teaspoons almond extract
3/4 cup cream
1 cup chocolate chips
1/2 cup almonds, sliced, toasted

Steps:

  • Preheat oven to 425 degrees Fahrenheit.
  • Combine flour, baking powder, sugar and salt.
  • Cut in butter until it resembles course meal.
  • Add 2 eggs (1 egg is reserved for later use), almond extract and cream.
  • Stir until soft dough forms; mix in chocolate chips and toasted almonds.
  • Pat out dough until 3/4 inch thick.
  • Cut into diamond shape; brush with reserved egg.
  • Place on baking pan coated with cooking spray.
  • Bake for 10 minutes until lightly browned.
  • Serve warm.

A friend of mine served these at a playgroup coffee date several years ago. I finally got around to making them again today. They are so yummy!

Number Of Ingredients 11

1/3 cup butter
1 3/4 cups flour
3 tablespoons sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg, beaten
6 tablespoons half-and-half (can use milk, but 1/2 and 1/2 is better)
1 teaspoon almond extract
white chocolate chips (as many as desired)
sliced almonds (optional)
1 egg white (just the whites)

Steps:

  • Preheat oven to 400 degrees. Cut butter into flour, sugar, baking powder, and salt with a pastry blender until mixture resembles fine crumbs.
  • Stir in one egg, almond extract, and half and half. (Can add more half and half if the dough isn't coming away from the bowl.)
  • Add white chocolate chips and almonds. I find it easiest to mix the dough with my hands.
  • Take the dough in your hands and form 8 large balls. Set the balls on an ungreased cookie sheet. They don't have to be smooth -- the dough will be sticky to work with.
  • Brush scones with egg white.
  • Bake for 10-12 minutes or until golden brown.
  • Immediately remove from the cookie sheet and cool on a cooling rack.

Steps:

  • Preheat oven to 400. Mix flour, sugar, baking powder, salt together. Cut in butter with two knives or a pastry blending tool.
  • In another bowl, mix eggs, milk and extract. Add to flour/butter mixture, also adding the grated almond paste and white chocolate chips. Mix until no longer dry, not longer.
  • Form a large round and score into 8 sections. Make the scoring deep or just create mounds and bake that way. Bake at 400 for 20-25 minutes.

Steps:

  • Preheat oven to 400 degrees.

  • In separate bowl, whisk together sour cream, eggs, and almond extract until smooth and incorporated.
  • Use a fork to stir sour cream mixture into flour mixture until large clumps form. Then use hands to form dough into two even sized balls. (As you work the dough, it will come together and form balls.)
  • If dough is sticky and needs to firm up a bit, wrap dough balls tightly and chill until it’s easier to work with, about 20-30 minutes. (Depending on the temp of my kitchen and the season, sometimes I don’t need to chill the dough and other times I do.)
