Steps:
- Prep. Whisk together all the sauce ingredients in a large bowl and refrigerate in a jar for at least 2 hours, if possible, to allow the flavors to meld.
- At Big Bob Gibson's, Chris Lilly butterflies his chickens, which makes sense in a high production environment, but I prefer to quarter them so I can make sure no part is overcooked since breasts and thighs cook at a different rate. I recommend you cut the bird into quarters: Two drumstick and thigh combos, two breasts, and remove the wings from the breasts. Sprinkle liberally with salt and pepper on both sides
- Fire up. Crank up your smoker or prepare the grill for 2-zone indirect cooking. Shoot for 325°F/162.8°C in the indirect side.
- Cook. Place the chicken skin side up on the indirect side of the grill. Put a handful of wood chips, chunks, or pellets on the heat source. Use a foil packet with wood on a gas grill and on a charcoal grill put the wood right on the coals (no need to soak the wood). Just a handful of wood. Don't overdo it. Nothing will ruin chicken faster than too much smoke.
- Check the temp of each piece independently because they will cook at different rates. Place your probe in the thickest part of each chunk but don't touch the bones. The wings will finish much faster than the other parts so put them on late and be prepared to remove them early. When all parts hit about 155°F/68.3°C, flip the bird and put the skin face down on the hot side. When they reach 165°F/73.9°C, paint them generously on all sides with the sauce (at Big Bob's they dunk the birds in a vat of sauce).
- Serve. Plate the chicken and serve immediately with additional white BBQ sauce.

ALABAMA WHITE BBQ SAUCE
My boys use to spend their summers with their grandmother in the South. She would treat them to a meal at a restaurant that served Alabama white sauce over chicken and my family thought it was wonderful. I started making it at home and it always brings back memories of those summers in Tuscaloosa. This Alabama white sauce recipe should be applied only at the very end of your grilling or smoking because it will break down and separate if it is heated too long. -Sabrina Everett, Thomasville, Georgia

ALABAMA WHITE BBQ SAUCE
If you've lived in the South for more than a minute, you know that BBQ-and the sauce that's served with it-is a matter of regional pride. Texans love their brisket, Kentucky claims chipped mutton, and in North Carolina they'll take their pork with dip. Next time you're talking 'cue in Alabama memorize these three little words: Alabama white BBQ sauce.Bob Gibson of Decatur, Alabama is credited with creating this mayonnaise-based sauce all the way back in 1925. "We marinate with it, use it to baste, plus we use it as an all-purpose table sauce," says Chris Lilly, a world barbecue champion and current pitmaster at Big Bob Gibson Bar-B-Q. "It's the only sauce we know here, because it's what everyone grows up on." Most folks like to serve Alabama white sauce with smoked or grilled chicken, but this versatile condiment can jazz up just about any piece of meat. Southern Living Test Kitchen Pro Ivy Odom likes to fry up turkey cutlets and serve them with Alabama white sauce on the side. This could become your family's new favorite spin on a Southern Thanksgiving. We think everyone should make a pilgrimage to Big Bob Gibson's barbecue joint, but we also like to keep this white BBQ sauce recipe on hand for any moment that the craving might strike.

Steps:
- 1. Turn on your outdoor BBQ grill so the grill is hot & the grates are clean & ready when you place the chicken on it 2. Combine 1st 6 ingredients in a medium size bowl & stir well. 3. Pour 1/2 of the White BBQ sauce into a large Zip-lock bag with your chicken to coat (you can marinate the chicken overnight to really get the flavors in or grill right away). Save the rest the white BBQ sauce to baste or dip your chicken in later. 4. Grill the chicken over medium heat turning often. Baste with a little bit of the white BBQ sauce 1/2 way through. The chicken is done when it is no longer pink in the middle. For bone in chicken it takes approximately 15-20 mins & much less if you are grilling boneless. 5. Take off the Grill & enjoy!
