Steps:
- Pour the liquid from the foil in which the salmon baked into a saucepan. Add the chopped or sliced vegetables with which the salmon was baked. Bring this mixture to the boil and let it simmer about 15 minutes or until it is reduced to one and one-half cups when strained.
- Strain the sauce and return it to the saucepan. Add the cream.
- Prepare a beurre manie by blending the room-temperature butter and flour until they form a smooth paste. Bring the sauce to the simmer and gradually add the butter-flour mixture, stirring constantly. When the blend is thick and smooth, add the cold butter bit by bit, stirring. Add the lemon juice, salt and cayenne to taste. Remove from the heat. Serve the salmon hot with this sauce.
BEURRE BLANC (CLASSIC FRENCH BUTTER SAUCE)

- Heat a large frying pan over high heat and add a splash of canola oil.
- Dry the salmon fillets with paper towel and season generously with salt.
- Carefully place the salmon into the hot pan, skin-side down, and turn down the heat to medium-high. Cook the salmon for 3-4 minutes until the skin is golden brown and crisp then flip over. Cook for another 1-2 minutes on the flesh-side until the salmon is cooked through. Remove from the pan and set aside.
- Melt the butter in the pan and add the garlic. Fry until fragrant then add the wine and lemon juice.
- Allow to simmer and reduce for 4-5 minutes then add the parsley and season to taste.
- Add the salmon back into the pan and baste with the sauce, allowing the salmon to heat back up.
- Serve with extra lemon wedges.

- Preheat the oven to 500 degrees. Place a rimmed baking sheet into the oven to heat up.
- Meanwhile, season each fillet with salt and ground black pepper and rub each fillet with oil all over.
- When the oven has preheated to 500 degrees and the baking sheet has been in the oven for about 10 minutes, take out the baking sheet and place the salmon, skin side down, onto the searingly hot baking sheet. You will hear it sizzle and the skin will start to sear right away.
- Place the fish in the preheated oven. Reduce the heat to 250 degrees and roast the fish for 15 minutes.
- While the fish is in the oven, melt 1/2 Tablespoon of butter in a skillet on medium high heat. Add the shallot and garlic clove. Season with salt and pepper. Cook them until the shallots are tender and start to turn golden.
- Deglaze the skillet with the white wine and then add the lemon juice.
- Turn the heat up to high and reduce the liquid until it has reduced to half the amount.
- Turn off the heat and whisk in the butter, one Tablespoon at a time. The sauce will become thick and velvety. Add the parsley to the sauce.
- Spoon the sauce over the roasted fish and serve.

- Preheat oven to 375 degrees F (190 degrees C). Mix butter, white wine, lemon juice, and garlic together in a small bowl.

- Heat the oil over a high heat in a frying pan (skillet).
- Add the salmon, skin-side down and cook for 2 minutes.
- Turn the salmon and cook for a further 2 minutes, until lightly browned, then turn back over so it's skin-side down again.
- Turn the heat down to medium and add the garlic, stir for 30 seconds (no longer or the garlic may burn), then add in the white wine.
- Bring to the boil and allow to bubble for a minute, then add in the chicken stock. Allow to bubble for a further minute.

- Line baking sheet with foil or parchment. Arrange salmon skin-side-down, season with salt and pepper and drizzle the tops with oil. Bake uncovered at 425 for 10-15 min (depending on thickness of salmon) or until salmon is cooked through. My thick wild caught salmon took 14 min.
- In a small sauce pan, combine 1/4 cup finely diced onion, 1/4 cup lemon juice, 1/4 cup wine and simmer over medium heat until reduced to a thick mixture (7-8 min).
- Whisk in 1/2 cup cream and as soon as it comes to a simmer, reduce to low heat and slowly whisk in the 8 Tbsp butter, one tablespoon at a time (whisking constantly). Add 1/4 tsp salt or to taste and remove from heat. Cover with a lid to keep warm until ready to serve.

- Leave salmon whole or remove the head. Rinse under cold running water and place on paper toweling to dry.
- Place the wine in a saucepan and add the remaining ingredients, except the salt and wine sauce. Let the resulting mixture simmer, uncovered,1/2 hour without boiling. Preheat the oven to 375°F(190°C).

- Preheat the oven to 180C/350F. On a large, rimmed baking sheet place a piece of foil large enough to create a pocket to encase the salmon. (see photos) Scatter half of the lemon slices and dill sprigs on the foil and place seasoned with salt and pepper salmon directly on them. Then cover the salmon with the remaining lemon slices, dill and bay leaves.
- Fold the sides of the foil up, so the foil can hold liquid and pour the rose wine all around the salmon, then bring the sides of the foil together and seal while leaving a small opening in the middle. Put in the oven and bake for 25-35 minutes depending on the size of your fish. (Mine baked in 33 minutes.)
- While the salmon is baking, melt the butter in a pan and saute chopped shallots over low heat for 5 minutes, then add the wine, turn the heat up and let it reduce by a half. Lower the heat and pour in the cream and 1 teaspoon of crushed peppercorns, salt to taste and simmer for 2-3 minutes until desired consistency. Add chopped parsley and take off the heat.
- Your salmon is cooked when the thickest part of the fish flakes easily and is opaque all the way through. Remove the fish on a serving plate, pour the sauce over, then sprinkle with additional chopped parsley and crushed pink peppercorns.
