WHITE WINE GARLIC ALFREDO SAUCE
Couldn't seem to find a recipe I liked so I made my own and thus far all my friends have enjoyed it, hope you do too. Also its really important to use freshly shredded/grated parmesan, nothing pre-shredded/grated will melt correctly and it will be grainy and lumpy.

- Preheat oven to 400 degrees F (204 C) and add Brussels sprouts to a baking sheet (use more baking sheets, as needed, if increasing batch size). Drizzle with oil, and season generously with salt and pepper and toss. Arrange in a single layer and set aside.
- Bring a large pot of water to a boil (for cooking the pasta) and salt generously (~1 Tbsp). Set aside while preparing sauce.
- Heat a large rimmed skillet over medium heat. Once hot, add oil and garlic. Sauté for 3 minutes or until fragrant and very slightly golden brown, then add wine (see photo). Be careful - it may flame, but only briefly. Stir and sauté for 2-4 minutes, or until the wine has reduced by about half.
- Add arrowroot and whisk, then add almond milk and whisk. At this point, it will be very clumpy - this is normal. Transfer to a high-speed blender and add nutritional yeast, salt + pepper, and vegan parmesan cheese. Blend on high until creamy and smooth.

- Fill a large stock pot with water and bring to a boil. Season water thoroughly with salt. Cook the pasta in the boiling water according to package instructions.
- When pasta is nearly al dente, use a ladle to scoop out about 2/3 cup of the water the pasta is cooking in. Set this pasta water aside.
- When pasta is al dente, place the chopped spinach in a colander. Pour the cooked pasta into the colander to drain. This will wilt the spinach at the same time that the pasta is drained.
- Meanwhile, heat the olive oil in a large sauté pan over medium-high heat. Season the cubed chicken with salt and pepper and place in the skillet. Allow the chicken to cook until golden brown, about 12-15 minutes. Use a large slotted spoon to transfer the chicken to a plate, and set aside.
