Sometime back there was a topic in CC, ( Community Cafe ) about " White Trash/ Redneck Comfort Foods ". I decided to try to come up with a recipe that fit that topic. I think with this recipe it fits the topic very well.Thanks to Kim for Recipe#63684, which the potato part of the recipe is based on. Even if your not " White Trash or Redneck " I think you might like this. Number Of Ingredients 12

2 1/2 cups potatoes, peeled and diced into 2 inch chunks
1 1/2 tablespoons vegetable oil
3 tablespoons parmesan cheese (the stuff in the green shaker )
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt (or to taste )
1/8 teaspoon cayenne pepper
1/2 teaspoon black pepper (or to taste )
6 ounces diced Spam
3 tablespoons margarine
3 tablespoons all-purpose flour
1 cup milk

Steps:

  • Preheat your oven to 450 degrees.
  • In a 3 cup bowl with lid, add all the potato ingredients,cover and shake until potatoes are well coated.
  • Place on a cookie sheet that has been lined with aluminum foil and sprayed with cooking spray, bake for 25 minutes, stirring once or twice during baking.
  • While potatoes are baking, melt margarine in a medium sized skillet add Spam and lightly brown.
  • Add flour and cook until " flour taste " is gone about 5 minutes.
  • Then add a little milk at a time, stirring until desired thickness is reached ( you might need a little bit more milk ) add salt and pepper to taste.
  • Divide potatoes between two plates, and cover with gravy.

1 2-lb bag frozen southern style hash brown potatoes
1 small onion, chopped
salt and pepper to taste
1 can cream of chicken soup
1 16oz container of sour cream
2-3 cups mild cheddar cheese, grated (reserve ½ cup for topping)

Steps:

  • Preheat oven to 350. Butter or "pam" 9 x 13 inch pan. Toss potatoes with onion and salt and pepper. Add soup, sour cream, and cheese, reserving ½ of the cheese for the top. Bake for 45 minutes. Top with remaining cheese and bake for 15 minutes longer.

POTSIE'S WHITE TRASH TRINITY

The Cajuns have a "Holy Trinity" of cooking which consists of celery, onion, and bell peppers. Texas White Trash (which I come from a long and distinguished line of)have our own Holy Trinity of cooking consisting of potatoes, onions, and okra. My family has been making this for years and I remember eating it while I was still strapped in a booster chair. If you love fried potatoes- if you love okra- and if you love onions- you will love this dish for breakfast, lunch, or dinner. May be served with ketchup but if you want real authentic White Trash fare- serve smothered in creamy white gravy! You can get me to do some rather unpleasant things if you wave a plate of this at me.

4 russet potatoes (well scrubbed or peeled and cut into uniform cubes)
1 large yellow onion (sliced, diced, or however you like it)
1 cup sliced okra (cut into half inch slices)
1/3 cup vegetable oil (or Canola oil)
salt, to taste
pepper, to taste
garlic powder, to taste

Steps:

  • Pour oil into a skillet with a tight fitting lid (preferably cast iron but go with what you have)and then add potatoes, onion, and okra and toss.
  • Heat your skillet (with all of the ingredients) over medium high heat.
  • Sprinkle with garlic powder and a generous amount of pepper. Save salt for later(Salting potatoes makes them "sweat". Just like eggplant. You don't want them to do that while trying to brown them -- it will increase your cooking time.).
  • Cover skillet with a tight fitting lid and cook over a medium high heat until potatoes are steamed soft, stirring about every 5 minutes. Don't use a high heat YET -- you are not trying to brown the potatoes yet just get them soft.
  • They should be soft in about 15-20 minutes, depending on the size of your cubed potatoes. I like to cube mine relatively small- I think the end result is a better texture. (For me, anyway).
  • After potatoes are soft, remove the lid (and don't recover anymore) and turn the heat up to brown the potatoes. I usually only turn them two or three times because I like some of them browned and other ones still soft.
  • When browned to your liking remove from skillet and salt to your taste.
  • Serve with ketchup if you must but a creamy white gravy is better.

  • Wash potatoes and pat dry. Leave skin on, and cut into fries while heating up a deep frying pan or dutch oven with oil. Rinse potatoes with cold water in a colander, and place between layers of paper towel, patting dry.
  • When oil is hot, add fries and cook until deep golden and tender inside. Transfer to a paper towel lined colander and shake and toss with Fry Seasoning as desired, then dump onto a wire rack placed over a baking sheet.
  • Place fries onto a serving plate, pour melted cheese over the top, then ladle lots of homemade salad dressing over the cheese. Top with lots of blue cheese and bacon crumbles, and garnish with any or all Optional Extras if desired.
