Treat your guests with these candies that are made with chocolate, coconut and macadamia nuts - a tasty dessert.

3/4 cup sugar
3/4 cup whipping cream
2 tablespoons light corn syrup
1 bag (12 oz) white vanilla baking chips (2 cups)
1 1/2 cups miniature marshmallows
1 cup flaked coconut
1 cup chopped macadamia nuts

Steps:

  • Line 2 cookie sheets with waxed paper. In 4-quart heavy saucepan, cook sugar, whipping cream and corn syrup over medium-low heat, stirring frequently, until sugar is dissolved. Heat to boiling over medium heat; cook about 6 minutes, without stirring, to 234°F on candy thermometer or until small amount of mixture dropped into cup of very cold water forms a soft ball that flattens when removed from water. Remove from heat. Add baking chips; stir until smooth.
  • Gently stir in marshmallows, coconut and nuts. Drop mixture by 2 tablespoonfuls onto cookie sheets. Let stand until firm.

1 pound white chocolate (For ease and convenience I use vanilla almond bark)
3 cups crispy rice cereal squares
3 cups crispy corn cereal squares
3 cups toasted oat cereal
2 cups thin pretzel sticks
2 cups peanuts
1 (12 ounce) package M&Ms

Steps:

  • In the microwave, melt the white chocolate according to the insructions. In a large bowl, combine cereals, pretzels, peanuts and candy coated chocolates. Slowly pour the chocolate over the cereal mixture and stir to evenly coat. Spread the mixture onto wax paper and cool. Break into small pieces, store in an air-tight container and refrigerate to keep fresh.

4 medium red potatoes, peeled & sliced, matchstick cut
1/2 small sweet onion, diced
2 clove garlic, minced or 1/2 tsp of garlic powder
2 Tbsp sour cream
2-3 pinch mozzarella cheese
salt and pepper
1 1/2 tsp greek seasoning
2 Tbsp olive oil
1 Tbsp butter

Steps:

  • 1. Peel & slice up your red potatoes, sweet onion and garlic while you heat your oil & butter in a frying pan. Put it on a low heat as these will be cooked low and slow....no browning on the potatoes for this recipe. Add your onions and cook for about 5 -7 minutes on low heat stirring often. Then add your potatoes and garlic. Next time I will take a pic of how I slice the potato.
  • 2. Cook your potatoes for 7 - 10 minutes stirring often on a low heat...low & slow for the entire cooking time. Add your Greek seasoning, salt & pepper. Once potatoes are cooked through add 2 - 3 tbps of sour cream and stir around in pan. Then, add your mozzarella cheese and let it cook just till cheese is melted. Serve immediately.

This recipe is very easy to make. It's very delicious made with rice, pineapples, marshmallows and whipped cream. It has been a favorite in my house for years - you've got to try it!

1 ½ cups water
¾ cup uncooked white rice
2 cups crushed pineapple, drained
1 (10.5 ounce) package miniature marshmallows
1 (4 ounce) jar maraschino cherries, halved
1 cup heavy cream
½ cup confectioners' sugar, or to taste

Steps:

  • In a saucepan bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes. Cool completely.
  • In a large bowl, combine rice, pineapple, marshmallows, cherries and about 1 tablespoon cherry juice. In a chilled bowl, whip the cream until peaks form. Fold in confectioners sugar. Fold whipped cream into rice mixture. Refrigerate for 2 hours.

1/2 cup nuts, chopped

Steps:

  • Preheat oven to 350 degrees.
  • Mix eggs and sugar, stir till very thick.
  • Add dry ingredients until smooth.
  • Add dates, vanilla and nuts.
  • Mix till blended.
  • Place in a greased cake pan.
  • Bake approximatly 30 minutes.
  • Cake should be very dry.
  • Crumble cake onto a platter and place fruit on top with whip cream.
  • Or other favorite fruits of your choice.

A brownie-like cake that's a family birthday favorite. Stick to the recipe by melting the butter. It is key to a moist cake. No mixer is necessary. Most times I use two 9" round cake pans.

1 cup butter (2 sticks)
3 1/2 tablespoons cocoa powder
4 eggs
2 cups granulated sugar
1 1/2 all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups chopped pecans
1 teaspoon vanilla extract
1 (10 1/2 ounce) bag miniature marshmallows
1 (16 ounce) confectioners' sugar
4 tablespoons cocoa
4 tablespoons butter
6 -8 tablespoons evaporated milk

Steps:

  • Preheat the oven to 350 degrees Fahrenheit.
  • Melt butter in a small saucepan over medium heat or in microwave; remove from heat and let cool several minutes. Add the cocoa and stir to mix; set aside.
  • In a mixing bowl, with a whisk beat the eggs and granulated sugar until well blended.
  • To the egg/sugar mixuture, add the melted butter/cocoa and vanilla extract; stir or whisk until blended.
  • Stir together the flour, baking powder and salt. Add the flour mixture to the butter mixture. Whisk to mix well. Add pecans and incorporate.
  • Spoon the mixture into a lightly oiled 9x13x2 inch baking pan. The batter will be thick.
  • Bake for 30 to 40 minutes.
  • Remove the cake from the oven and immediately pour the marshmallows evenly over the top of the hot cake. They will soften, but will not melt.
  • For the topping:.
  • Sift the confectioners' sugar with the 4 tablespoons cocoa. (This is easily done by using a seive and it, also, breaks up the lumps.).
  • A few minutes before the cake is done, melt the 4 tablespoons butter and the evaporated milk in a saucepan over medium-low heat; remove.
  • Combine the sugar and cocoa mixture with the butter and milk mixture. Pour over the warm cake.
  • Cool completely.
  • Cut into squares to serve.
