WHITE STAR COOKIES

Just in time for the holidays, or anytime. I'm not sure you can get the white star chocolate candy anymore, but I use the white chocolate bark they sell in the 1 pound blocks with equal success. (16 oz.) You will then need to up the amount of other ingredients used accordingly. Not sure on the serving amount.

2 tablespoons peanut butter
1 1/2 cups Rice Krispies
1 cup miniature marshmallow
1 cup salted peanuts

Steps:

  • Melt the white star candy and peanut butter together.
  • Add all other ingredients and mix together.
  • Drop by spoonfuls onto wax paper.
  • Refrigerate until hardened.

1/3 cup butter, softened
3/4 cup packed dark brown sugar
1/2 cup molasses
1 large egg, room temperature
2 teaspoons vanilla extract
3 cups all-purpose flour
3 teaspoons ground ginger
1-1/2 teaspoons baking powder
1-1/4 teaspoons ground cinnamon
3/4 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground cloves
1 cup semisweet chocolate chips, melted
1 cup white baking chips, melted

Steps:

  • In a large bowl, beat butter and brown sugar until light and fluffy, 5-7 minutes. Beat in molasses, egg and vanilla. In another bowl, whisk flour, ginger, baking powder, cinnamon, baking soda, salt and cloves; gradually beat into creamed mixture. Divide dough in half. Shape each into a disk. Cover and refrigerate until easy to handle, about 1 hour., Preheat oven to 350°. On a lightly floured surface, roll each portion to 1/4-in. thickness. Cut with a floured 3-in. gingerbread man cookie cutter. , Place 2 in. apart on greased baking sheets. Create lines in each cutout with tines of a fork to look like fur. Bake until edges are firm, 7-9 minutes. Remove from pans to wire racks to cool completely. , To decorate, pipe melted semisweet chocolate for eyes, nose and utility belt, then pipe melted white chocolate for mouth and bullets. Let stand until set.

2 ⅔ cups finely ground almonds
1 tablespoon ground cinnamon
1 teaspoon lemon zest
⅓ cup egg whites
⅛ teaspoon salt
2 ½ cups confectioners' sugar
1 ¾ teaspoons lemon juice

Steps:

  • Stir together the almonds, cinnamon, and lemon zest until combined.
  • Beat the egg whites and salt until soft peaks form. Slowly sift in the confectioner's sugar, continuing to beat until the mixture is stiff. Set aside 1/3 cup of the egg white mixture for the glaze. Fold in the almond mixture.
  • Preheat oven to 325 degrees F (170 degrees C). Line the cookie sheets with parchment paper.
  • Roll the dough to 1/4 inch thickness on a surface that has been sprinkled with confectioners' sugar. Using a 2 1/2-inch star cookie cutter, cut out the cookies and place them on the cookie sheets.
  • To make the glaze, add the lemon juice to the reserved egg white mixture, stirring until smooth. Brush the tops of the cookies lightly with the glaze. (If the glaze starts to thicken, add a few more drops of lemon juice.)
  • Bake for 20 to 25 minutes. When done, they will be light brown and soft in the center. Remove and cool on wire racks.

Peanut butter cookies topped with a milk chocolate star. These cookies are crisp on the outside and chewy on the inside. They are the perfect peanut butter chocolate cookie!

1/2 cup butter, softened
1/2 cup creamy peanut butter
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla
1 3/4 cups all purpose flour
1/2 tsp salt
1 tsp baking soda
24 milk chocolate stars (can be found in the candy aisle at your grocery store.)
1/3 cup white sugar (for rolling the cookie dough)

Steps:

  • Preheat oven to 350°
  • In a stand mixer with the paddle attachment or white a hand mixer, cream the butter, peanut butter, white sugar, and brown sugar, until they are fluffy and completely combined.
  • Mix in the egg and vanilla extract.
  • In a separate bowl sift together the flour, salt, and baking soda.
  • Add the flour mixture the the butter mixture a little at a time until it is fully combined. NOTE: do not over mix at this point, or you will have tough cookies!
  • Roll the dough into balls a little smaller than the size of a golf ball, it will be 1 heaping tablespoon of dough per cookie. Roll the dough balls in the sugar.Place on a parchment or silpat lined baking sheet.
  • Bake for 10 minutes. Remove from the oven and lightly press 1 star in the middle of each cookie. Place back in the oven for an additional 2 1/2 minutes. (NOTE: You may have to bake the cookies in 2 or 3 batches.)
  • Cool the cookies on a cooling rack and then serve!

THE BEST ROLLED SUGAR COOKIES

Whenever you make these cookies for someone, be sure to bring along several copies of the recipe! You will be asked for it, I promise! NOTE: I make icing with confectioners' sugar and milk. I make it fairly thin, as I 'paint' the icing on the cookies with a pastry brush. Thin enough to spread easily but not so thin that it just makes your cookies wet and runs off.

3 cups all-purpose flour, plus more for surface
3/4 teaspoon baking powder
Salt
2 sticks unsalted butter, room temperature
1 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
2 1/2 cups confectioners' sugar, sifted
2 pasteurized egg whites
Edible silver dust, for sifting

Steps:

  • Make the cookies: Sift flour, baking powder, and 1/2 teaspoon salt into a large bowl.
  • Beat butter and granulated sugar with a mixer on medium-high speed until pale and fluffy, about 3 minutes. Beat in egg.
  • Reduce speed to low. Add flour mixture, then vanilla. Refrigerate dough, wrapped in plastic wrap, for at least 1 hour.
  • Preheat oven to 350 degrees. Roll out dough to a 1/4-inch thickness on a lightly floured surface. Cut out various star shapes using 3-to-4-inch cutters. Transfer to parchment-lined baking sheets, spacing each 1 inch apart.
  • Bake until cookies are just turning gold around the edges, 10 to 12 minutes. Let cool on sheets set on wire racks for 10 minutes. Transfer cookies to racks. Let cool completely.
  • Make the icing: Whisk together confectioners' sugar and egg whites with a mixer on medium speed until icing is glossy-white and holds a ribbonlike trail on the surface for 5 seconds when beater is raised, about 5 minutes.
  • Transfer icing to a pastry bag fitted with a small round tip. Pipe an outline of icing around the edges, then flood each cookie with more icing to cover. Sift edible silver dust over cookies. Let cookies dry completely.

120g unsalted butter, softened
85g light brown soft sugar
65g golden caster sugar
1 medium egg
1 tsp vanilla bean paste
180g plain flour
½ tsp bicarbonate of soda
180g white chocolate, broken into chunks

Steps:

  • Heat the oven to 180C/160C fan/gas 4 and line two large baking sheets with baking parchment. Beat the butter and sugars together in a large bowl using an electric whisk, or in a stand mixer until just combined. Crack in the egg and beat again. Stir through the vanilla, flour, bicarb, chocolate chunks and ¼ tsp fine sea salt.
  • Roll the mixture into 10 even-sized balls between the palms of your hands. Arrange over the prepared baking sheets and bake for 10-12 mins until golden brown at the edges. Leave to cool slightly on the sheets, then transfer to a wire rack and leave to cool completely, or eat warm with ice cream.

5 cups cake flour (not self-rising), plus more for surface
2 teaspoons baking powder
1 1/2 teaspoons salt
12 ounces (3 sticks) unsalted butter, softened
1 1/3 cups granulated sugar
4 large egg yolks
1 tablespoon pure vanilla extract
2 tablespoons heavy cream, plus more for brushing
3/4 cup raspberry jam
3/4 cup blueberry jam
2 tablespoons sanding sugar

Steps:

  • Sift flour, baking powder, and salt into a large bowl. Cream butter and granulated sugar, with a mixer on medium speed, until pale and fluffy. Beat in yolks and vanilla until well combined. Add flour mixture in 3 additions, alternating with cream and beating well after each addition. Shape dough into 4 disks, wrap each in plastic, and refrigerate for at least 3 hours (or up to 3 days).
  • On floured parchment, roll 1 disk of dough into a 1/8-inch-thick rectangle. Repeat with remaining disks. Stack sheets of dough and parchment, and refrigerate for 1 hour or freeze for 30 minutes.
  • Spread raspberry jam on 1 sheet of dough, blueberry jam on another. Top each with a plain sheet of dough. Refrigerate for 1 hour or freeze for 30 minutes.
  • Preheat oven to 350 degrees. Cut out cookies using a 2 1/2-inch star-shaped cutter, and space 1 inch apart on parchment-lined baking sheets. Brush with cream, and sprinkle with sanding sugar. Refrigerate for 30 minutes or freeze for 15 minutes.
  • Bake, rotating sheets halfway through, until golden, 16 to 20 minutes. Transfer cookies to wire racks, and let cool completely. If desired, bake dough scraps.

  • In a large bowl using a handheld or stand mixer fitted with the paddle attachment, beat the butter until creamy and smooth, about 1 minute. Add the sugar and beat on high speed until light and fluffy, about 2 minutes. Scrape down the sides and up the bottom of the bowl as needed. Add the egg, maple extract, and vanilla extract then beat on high until fully combined, about 2 minutes. Scrape down the sides and bottom of the bowl as needed.
  • Turn the mixer down to low and add about half of the flour mixture, beating until just barely combined. Add the rest of the flour and continue mixing until just combined. If the dough still seems too soft, you can add 1 Tablespoon more flour until it is a better consistency for rolling.
  • Divide the dough into 2 equal parts. Roll each portion out onto a piece of parchment (or a silicone baking mat, what I prefer!) to about 1/4″ thickness. Stack the pieces, with parchment paper between the two, onto a baking sheet and refrigerate for at least 1-2 hours and up to 1 day. Chilling is mandatory. If chilling for more than a couple hours, cover the top dough piece with a single piece of parchment paper.
