TRADITIONAL WHITE BREAD

A delicious bread with a very light center with crunchy crust. You may substitute butter or vegetable oil for the lard if you wish.

2 (.25 ounce) packages active dry yeast
3 tablespoons white sugar
2 ½ cups warm water (110 degrees F/45 degrees C)
3 tablespoons lard, softened
1 tablespoon salt
6 ½ cups bread flour

Steps:

  • In a large bowl, dissolve yeast and sugar in warm water. Stir in lard, salt and two cups of the flour. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • Deflate the dough and turn it out onto a lightly floured surface. Divide the dough into two equal pieces and form into loaves. Place the loaves into two lightly greased 9x5 inch loaf pans. Cover the loaves with a damp cloth and let rise until doubled in volume, about 40 minutes.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Bake at 375 degrees F (190 degrees C) for about 30 minutes or until the top is golden brown and the bottom of the loaf sounds hollow when tapped.

2 cups warm water (110 degrees F/45 degrees C)
⅔ cup white sugar
1 ½ tablespoons active dry yeast
1 ½ teaspoons salt
¼ cup vegetable oil
6 cups bread flour

Steps:

  • In a large bowl, dissolve the sugar in warm water, and then stir in yeast. Allow to proof until yeast resembles a creamy foam.
  • Mix salt and oil into the yeast. Mix in flour one cup at a time. Knead dough on a lightly floured surface until smooth. Place in a well oiled bowl, and turn dough to coat. Cover with a damp cloth. Allow to rise until doubled in bulk, about 1 hour.
  • Punch dough down. Knead for a few minutes, and divide in half. Shape into loaves, and place into two well oiled 9x5 inch loaf pans. Allow to rise for 30 minutes, or until dough has risen 1 inch above pans.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes.

CLASSIC WHITE SANDWICH BREAD

I got this recipe from one of my cookbooks and I would not change a thing. I started baking my own bread to save money but this loaf is worth twice what you pay in stores for its taste. This bread is easy to slice and is perfect for everything you would normally use bread for. If any gets old then use it for bread crumbs or croutons. Recipe is for 2 loaves.

Number Of Ingredients 9

1/4 cup warm water
2 cups warm milk (recipe calls for whole milk but I use 1%)
4 teaspoons active dry yeast
2 tablespoons sugar (I always use the sugar, never tried honey) or 2 tablespoons honey (I always use the sugar, never tried honey)
1 pinch sugar
2 tablespoons unsalted butter, melted (margarine works well, too)
1 tablespoon salt
6 -6 1/4 cups bread flour, plus extra
canola oil, for greasing (I use regular vegetable oil)

Steps:

  • In a small bowl combine water and 1/4 cup of the warm milk. Sprinkle yeast and pinch of sugar over liquid and stir. Let sit until foamy, about 10 minute.
  • Combine remaining milk, butter and 2 tbs sugar, salt and 2 cups flour in large bowl and mix until creamy. I mix everything by hand but you can use a mixer on med-low for about 1 minute.
  • Add yeast mixture and one cup of flour and mix by hand or beat with mixer.
  • Mix or beat in remaining flour 1/2 cup at a time until the dough pulls away then switch to kneading until all the flour is mixed in, until smooth and elastic.
  • Transfer the dough to an oiled deep bowl and turn the dough once to coat it.
  • Cover loosely with plastic wrap and let rise until doubled in bulk, about 1 1/2 hours depending on the temperature of your kitchen.
  • Lightly grease two 9X5 loaf pans.
  • Turn the dough out onto a lightly floured board and divide in half.
  • Pat each half into a long rectangle.
  • Fold one rectangle like a letter, overlapping the short sides into the middle. Press to flatten.
  • Beginning at the narrow end, roll the dough into a log and roll the log until it is the same length as the loaf pan.
  • Pinch the ends and along the seam to seal and place in loaf pan seam side down.
  • Repeat folding with other half of dough.
  • Cover loosely with plastic and let rise until dough is about 1 inch above pan about 1 hour.
  • Bake in oven preheated to 375 degrees F until loaves are golden brown and pull away from the edge of the pans, about 40 minutes.
  • Turn onto racks and let cool completely.

This Easy White Sandwich Bread is the easiest homemade bread recipe that's hearty and tender, and turns out perfectly every time with the best golden crust!

2 1/2 cups lukewarm water
1 tablespoon instant yeast ((or use active dry yeast))
1 tablespoon honey (or other vegan honey substitute)
6 1/4 cups all purpose flour
1 teaspoon salt
1 egg
1 tablespoon water

Steps:

  • Add the water, yeast and honey to the bowl of your stand mixer and mix with a fork just until the yeast is moistened and the honey is dissolved.
  • Let sit for about 4-5 minutes.
  • Add the flour to the bowl of the stand mixer on top of the water and yeast mixture and then add the salt.
  • Turn the mixer on low speed and mix until a soft dough forms.
  • Continue mixing on medium-low speed and let the mixer knead the dough for about 4 minutes. The dough should have formed a soft ball and the sides of the bow should be clean. Only if the dough is too wet and sticking to the side of the bowl, add a tablespoon or two more flour as it kneads.
  • Shape the dough with your hands into a ball and place it back into the bowl (oil the bowl, if you wish). Cover the bowl with plastic wrap and let rise for 60 minutes in a warm, draft-free place.
  • Grease 2 loaf pans with butter or a high-quality non-stick baking spray.
  • After the dough rises, punch it down and turn it out onto a floured work surface and divide it in half.
  • Roll each piece of dough into a ball with your hands, eventually shaping it into an oblong round shape.
  • Place each piece of dough into one of the greased loaf pans and cover the pans with a clean kitchen towel.
  • Let them rise again in a warm, draft-free place for about 20 minutes.
  • Preheat your oven to 400 degrees Fahrenheit.
  • Whisk together the egg and water to make the egg wash (if using).
  • Brush the egg wash over the tops of the loaves and bake at 400 degrees Fahrenheit for about 25-35 minutes until the tops of the loaves are a deep golden brown colour.
  • After baking, remove from the pans and place the loaves on a wire rack to cool completely.
  • Slice after the loaves have cooled completely to room temperature and use to make your favourite sandwiches or serve alongside soups or stews.

This straightforward loaf is the white bread of your dreams, and its fluffy slices make for evenly browned toast. Steps:

A soft yet hearty, high-rising sandwich loaf that uses everyday ingredients for a versatile, easy-to-make white bread.

3 cups bread flour
1 cup plus 1 tablespoon lukewarm water
2 tablespoons butter (softened)
2 tablespoons sugar
1 ½ teaspoons salt
2 teaspoons instant yeast ((SAF brand is recommended))

Steps:

  • Add all ingredients to the bowl of an electric stand mixer or to a large mixing bowl. Combine until a dough is formed that holds together and does not stick to the sides of bottom of the bowl. If it seems too dry and crumbly, add more water a teaspoon at a time. If it's too sticky, add more flour.
  • Knead the dough by machine or hand for ten to fifteen minutes, until it is smooth, soft, and reaches the windowpane stage (meaning that when the dough is stretched, a translucent area appears). If using a stand mixer, allow the machine to rest every five minutes.
  • Shape the dough gently into a ball and place into a clean, lightly oiled bowl. Cover with a clean, damp tea towel and place into a warm place to rise. Let the dough rise 60 minutes, until it is puffy and has doubled in size.
  • Gently stretch the dough into a rectangle, with the short side of the rectangle as long as the long side of the loaf pan you will be using for baking. Tuck in the corners and top of the dough, and roll into a long. Pinch the seams closed and place the loaf, seam side down, into a lightly oiled loaf pan.
  • Cover with heavily greased plastic wrap and place in a warm place to rise again, until the dough rises to be one inch above the top of the loaf pan. When it is ready, preheat the oven to 350 degrees. Generously flour the top of the loaf with flour.
  • Bake at 350 for 45-50 minutes, until the dough is 200-210 degrees internally and sounds hollow when tapped. Remove from loaf pan and allow to cool fully on wire rack. Bread stays fresh 2 days at room temperature, or 2 months frozen.

Steps:

  • Yeast mixture- In a small bowl or measuring cup, combine the warm water (110F), instant yeast, sugar, and olive oil.
  • Flour - In the large bowl of a stand mixer with the dough hook attachment, add the flour and salt. Stir to combine. Then add the warm milk and yeast mixture. Combine with a wooden spoon or dough whisk. Scrape the sides of the bowl to ensure all dry flour is incorporated.
  • Once all the flour has been incorporated, knead for 4 minutes on medium sped then add the butter and knead for 3 minutes more on low speed. Pro tip -You can also knead the dough by hand on a work surface for 8 to 10 minutes.
  • First rise - Transfer the dough to a greased bowl and leave it to rise on the counter for up to 60 to 90 minutes or until double in volume.
  • Shape - When the dough is double in volume, transfer to a well-dusted floured surface. De-gas, reshape into a ball. Shape each portion into a tight roll. To do this correctly, flatten the dough on an unfloured surface. Fold the top and two sides in. Then roll towards you into a sausage or log shape.Pro-tip - at this point there is no need for additional flour. So use a light dusting of flour.
  • Proof - Place the shaped log in an 8-inch loaf pan. Cover with a clean kitchen cloth or plastic wrap and leave in a warm place for about 45 minutes until almost double in size.Pro tip - Spray the plastic wrap with oil to prevent it from sticking to the rolls.
  • Oven & Pan - When the bread is almost double in volume at about 30 minutes, preheat the oven to 375°F / 190°C / Gas Mark 5. Grease the right size loaf pan with butter (ingredients given for 9-inch as well as 13-inch loaf pan) Pro tip - you can also use an oil spray for the loaf pan, however, the butter will give a wonderful golden crust with a tender crumb.
  • Bake on the middle rack until lightly golden on top. The 9-inch loaf will take about 40 to 50 minutes while the 13-inch loaf will take about 60 to 70 minutes. If the top of the sandwich bread is getting too dark, tent it with aluminum foil. When baked brush with melted butter. Pro tip - This is optional but adds a nice flavor and keeps the top crust soft.
  • Cool - Take it out of the pan and cool on the wire rack. Cover it with a clean kitchen cloth for at least 10 minutes to keep the loaf softPro tip - Do not leave the bread in the pan for too long as the steam will make the bread soggy on the bottom.

  • Combine the yeast and 2 cups warm water in a mixing bowl and stir to dissolve. Add the butter, sugar and salt. Use a wooden spoon to stir in one-third of the flour until smooth. Add another third of the flour and stir, then turn it out onto a floured board to knead. Knead it over 15 minutes, adding the rest of the flour as you knead. Don't let it get dry too fast; it should stay sticky. Put the dough in a buttered bowl and cover with plastic wrap. Let it rise for 1 hour.
  • Knead the dough another 5 minutes, place it back in the bowl and let it rise another hour.
  • Butter 2 loaf pans. Shape the dough into 2 loaves and transfer them to the prepared pans. Cover and let rise for 45 minutes.

  • Bake the loaves until golden brown on top and cooked through, 30 to 35 minutes. Remove to a rack to cool.

2 1/2 cups warm water
1 Tbsp active dry or instant yeast
1 Tbsp sugar
6 - 6 1/2 cups all-purpose flour
2 tsp salt
1/4 cup butter, softened, or vegetable oil

Steps:

  • Pour 1/2 cup of the water into a bowl (preferably that of a stand mixer) and stir in the yeast and sugar. Let sit for 5 minutes, until it dissolves- if you're not sure of its age, make sure it gets foamy. (If the yeast doesn't do anything, toss it out and buy fresh yeast.)
  • Add the rest of the water and about half of the flour. Stir until well blended. Add the rest of the flour, the salt and butter and stir with the dough hook (or by hand) until well combined and shaggy. Continue to knead (I let the dough hook go for about 8 minutes, poking it down once in awhile) until it's smooth and elastic. (You could do this by hand, too.) If you used the dough hook, turn the dough out onto the countertop and knead a few times to make sure it's evenly smooth. Doesn't it feel great?
  • Shape it into a ball and put it back into the bowl. Cover with a tea towel and let it sit for 1 - 1 1/2 hours, until it's doubled in size.
  • Butter two 9x5-inch loaf pans, or line them with parchment. Punch the dough down (love that part!) and pat each piece into a rectangle that's about 9x12 inches - or a bit bigger than a standard piece of paper.
  • Starting at a short end, fold it in thirds, like a letter. Place seam side down in the loaf pans, tucking the ends in. Cover with the tea towel again and leave them for an hour, until they puff right up out of the pan. As it rises, preheat the oven to 375°F, with the rack in the middle of the oven.
  • If you like, brush the tops of the loaves with milk before baking. Bake for 30-35 minutes, until the loaves are honey brown. Immediately turn the loaves out of their pans and onto a rack to cool.
