CEREAL MILK™ WHITE RUSKIE

We use the cereal milk ice cream base (the unfrozen ice cream; stop after step 2 in the ice cream recipe) to make white Russians because it stands up to the Kahlúa and vodka better than regular cereal milk does. The liquor in this recipe dulls the cereal milk flavor, so we add freeze-dried corn powder to bring it back. Why Ruskies? Because I have a younger sister from Kazakhstan and a younger brother from Russia, whom my family affectionately called our "little Ruskies" when they were kids. Here's to Zha-Zha and Dima.

1/4 recipe Cereal Milk Ice Cream base (page 38); not frozen [200 g (1 cup)]
4 g freeze-dried corn powder (see page 18) (2 teaspoons)
42 g Kahlúa (3 tablespoons)
42 g vodka (3 tablespoons)

Steps:

  • You don't have to be a mixologist to bang this girl out. Whisk together the ice cream base, corn powder, Kahlúa, and vodka in a small pitcher or bowl. Pour into two ice-filled glasses. Or, if you've got the mixology gear, pour into a cocktail shaker filled with ice, cover, and shake until the shaker is frosty. Strain into two old-fashioned glasses filled with ice.
  • When we make these with frozen ice cream, we call them fancy shakes™. We sell them at Milk Bar and they kill it, every night.

1 cup chocolate chips
2 tablespoons unsalted butter
2 tablespoons coffee liqueur
1 tablespoon instant espresso
1 tablespoon vanilla
1/8 teaspoon grated nutmeg
2 cups confectioners' sugar
5 cups square rice cereal
5 cups popcorn

Steps:

  • In a double boiler, combine the chocolate chips, butter, coffee liqueur, instant espresso, vanilla and nutmeg. Heat until the chocolate melts, stirring the mixture until smooth and blended.
  • Put the confectioners' sugar in a large resealable bag. Combine the rice cereal and popcorn in a large bowl.
  • While stirring, slowly pour the melted chocolate mixture over the cereal mixture; mix until everything is well coated. Transfer to the resealable bag with the confectioners' sugar and shake the bag to coat everything with the sugar. Store in an airtight container or clean resealable bag.

3 tablespoons butter
1 tablespoon instant espresso coffee powder or granules
2 tablespoons coffee-flavored liqueur
3 cups miniature marshmallows
1/2 cup dark chocolate chips
6 cups Cocoa Puffs™ cereal
3/4 cup white vanilla baking chips
1 1/2 cups powdered sugar
1/3 cup butter, softened
2 tablespoons vanilla-flavored vodka
1/8 teaspoon salt
Chocolate shavings or unsweetened baking cocoa, if desired

Steps:

  • Grease 9-inch square pan with shortening or cooking spray. In large microwavable bowl, microwave 3 tablespoons butter uncovered on High until melted. Stir in espresso powder and coffee liqueur until well combined.
  • Add marshmallows to butter mixture. Microwave uncovered on High 45 to 60 seconds or until marshmallows are melted. Stir in chocolate chips until chocolate is melted and marshmallows are smooth. Stir in cereal until well combined. Press mixture in pan. Refrigerate about 1 hour or until set.
  • In 2-quart microwavable bowl, microwave vanilla baking chips uncovered on High about 60 seconds or until chips can be stirred melted and smooth. Add powdered sugar, 1/3 cup softened butter, the vodka and salt; beat with electric mixer on medium speed until smooth.
  • Spread frosting over cereal bar base. Sprinkle with chocolate shavings. Store covered in refrigerator. For bars, cut into 4 rows by 4 rows.
