WILD RICE WITH VEGETABLES
Wild rice recipes often call for a mix of wild rice and white or brown rice. I love the taste of the two rices mixed together as each has a slightly different texture.

- Combine the rice, 1 3/4 cups water, the salt, and butter in a small heavy-bottomed saucepan. Bring to a boil over high heat; reduce the heat to low, stir once, and simmer, covered tightly, for 15 minutes. (I need to pull the pot half off the burner to keep it from boiling over.) SAVORY HERB RICE
"I got this recipe from the mother of one of my college roommates many years ago and filed it away," writes Suzy Mercker of Lawrenceville, Georgia. "I found it one night by accident and made it for dinner. Now it's a staple that I often serve with chicken, beef, pork...or even fish."

RICE WITH FRESH HERBS
Ten Dollar Dinners viewers know how much I love my $5 rice cooker and the perfectly steamed rice it makes. Boiling rice is another easy way of making rice that yields a firmer and less starchy texture. You can even boil the rice ahead of time, refrigerate it for a few hours, and then finish it with the butter before serving warm or at room temperature. For the prettiest presentation, wait to stir in the herbs until just before serving.

Steps:
- Bring a large pot of water to a boil over high heat. Add the rice and 1 tablespoon of the salt and cook, stirring occasionally, until the rice is tender, 12 to 15 minutes. Drain through a fine-mesh sieve and rinse under cold water to stop the cooking. Shake the sieve to drain as much water as possible.
- Melt the butter in a large nonstick skillet over medium heat. Add the rice and the remaining 1/2 teaspoon salt and stir with a heatproof rubber spatula to coat all the rice with the butter. Once the rice is warmed through, about 3 minutes, transfer the rice to a serving bowl and add the herbs plus additional salt, if needed. Stir with a fork to incorporate and fluff the rice and serve warm or at room temperature.
EASY HERB RICE
This is an easy staple to add to a variety of different meals, added to a stir-fry, or just have a few veggies thrown in. Save money by buying rice in bulk and adding your own seasonings rather than buying it boxed and pre-mixed. The required ingredients are shown in the photo.

- Herbs and Seasonings. Whether you have fresh herbs or want to make use of spices on your rack, herbs will give your dish that extra bit of fragrance to take it to the next level.
