15 Minute Chicken and Rice Dinner

- If you have 15 minutes to spare, you can make this perfectly creamy and delicious chicken and rice dinner tonight! This flavor-packed recipe couldn't be simpler or more satisfying. Step 1
- Heat oil in a large, nonstick skillet on medium-high heat. Step 2
- Add chicken and cover. Cook for 4 minutes on each side, or until lightly browned. Remove chicken from skillet and set aside. Step 3
- Add soup, chicken broth and water to skillet. Stir to combine and bring to a boil. Step 4
- Stir in rice, garlic powder and onion powder. Top with chicken; cover. Step 5
- Cook on low heat for 5 minutes, or until chicken is cooked through (170º F). Step 6
- Let sit for 5 minutes, or until liquid is absorbed. Serve sprinkled with chopped parsley, if using.
QUICK AND EASY CHICKEN AND RICE CASSEROLE
This takes no time to prepare, I have tryed this using different flavor soups, I find that cream of chicken and celery are the best, or use 2 cans cream of chicken, I also like to add the garlic powder and also a pinch of cayenne pepper to the soup mixture :)

Steps:
- Set oven to 350 degrees F.
- Grease a medium-size casserole dish.
- Mix the first 6 ingredients in a bowl.
- Add the uncooked rice to the soup mixture; mix until combined.
- Transfer the soup/rice mixture to the casserole then spread out in the dish.
- Place the chicken on top of the mixture.
- Sprinkle with the dry onion soup.
- Cover with foil and bake for 1 hour 30 minutes or until rice is cooked and the chicken is done.
- Allow to stand for 10 mins before serving.
- Delicious!

MAMAW'S CHICKEN AND RICE CASSEROLE
I grew up on this recipe, my Grandmother got it from a lady from church at a pot luck a long time ago! She passed it down to my mom and it's always been a family favorite. Quick and easy for school nights, and the leftovers are just as good! You can use less butter on top of course, my Momma and Mamaw always put the full stick on top (gotta love Southern ladies and their butter!)

- Preheat oven to 400 degrees F (200 degrees C). Grease sides and bottom of a casserole dish.
- Stir chicken, water, rice, cream of chicken soup, cream of celery soup, and cream of mushroom soup together in the prepared casserole dish; season with salt and pepper. Arrange butter evenly over the top of the chicken mixture.

- Preheat the oven to 350°F (177°C). Lightly grease a 9x13-inch casserole pan.
- Heat the oil in a skillet over medium-high heat. Add the onion and saute for 3 to 4 minutes, until slightly translucent.
- Add the garlic, turmeric, salt, pepper, ginger, and cumin, and stir for another 30 seconds. Then add the canned coconut milk and gently stir until there's no longer lumpy coconut milk bits. Transfer the mixture to the casserole pan.
- Add the water, rice, carrot, and lime juice to the casserole pan, and stir together.
- Nestle the chicken breasts on top of the rice mixture (I like to coat both sides of the chicken breast in the liquid for more flavor). Cover the pan with aluminum foil and bake for 45 to 50 minutes, until the rice is tender and the chicken is cooked through.
- Before serving, fluff the rice with a fork, season the chicken with additional salt and pepper, and sprinkle with cilantro.

- Cut the chicken breast into 1-inch chunks and toss the chicken with 1.5 tablespoons of all purpose chicken seasoning. Be sure the chicken is covered in chicken seasoning. Set aside.
- Heat a large skillet (that has a cover) over medium/high heat. Add olive oil.
- When the olive oil is fragrant add the onion to the skillet and saute for 2-3 minutes.
- Add the garlic to the onion and saute for another minute.
- Next, put the coated chicken pieces to the skillet pan and brown the chicken for 2 minutes on each side.
- Move the chicken pieces to one side of the skillet and add the rice to the cleared side of the skillet. Toast the rice in the skillet for 3 minutes.
- Toss the toasted rice with the chicken breast, onion, and garlic and then add the broth, salt, and remaining 1 tablespoon of chicken seasoning to the skillet and mix.
- Bring the broth to a boil, stir, and turn heat to low. Cover the skillet and let the rice mixture simmer for 10 minutes.
- Uncover the skillet and add the broccoli florets. Fold the broccoli into the mixture and cover.
- Cook everything together for an additional 10 minutes.
- Finally, remove the cover one last time and sprinkle the cheese over the top of the rice, chicken, and broccoli.
- Cover and let the cheese melt for 1-2 minutes.
