PUMPKIN SPICE SNACK CAKE
Pumpkin Spice Snack Cake is a dense and moist snack cake that is easy to make and full of everybody's favorite fall pumpkin spice flavor!

Steps:
- Preheat the oven to 350°F and line a 9x9-inch baking pan with parchment paper (or lightly grease and flour).
- In a large bowl, combine the melted butter, brown sugar, and pumpkin puree.
- Add the eggs, one at a time, stirring well after each addition.
- Stir in the vanilla extract.
- In a separate, medium-sized bowl, whisk together the flour, cornstarch, baking powder, pumpkin pie spice, and salt.
- Gradually stir the flour mixture into the butter and egg mixture until completely combined.
- Stir in the white chocolate chips.
- Spread the batter evenly into the prepared pan. Bake for 40 minutes, or until the edges just begin to turn golden brown. (For an ooey-gooey cake, reduce the bake time by 5-8 minutes.)
- Allow to cool before cutting and serving.

- Preheat overn to 350°. Grease and flour a 10-in. fluted tube pan. In a large bowl, combine the dry cake mix, eggs, pumpkin, water, oil, pudding mix and cinnamon. Beat at medium speed for 5 minutes. Stir in pecans. , Pour into prepared pan. Bake until a toothpick inserted in the center comes out clean, 45-55 minutes. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Frost cake or serve with whipped cream.

- Preheat oven to 375 degrees F. Spray a 6 count "muffin" Bundt pan and a 12-count "brownie" Bundt pan with nonstick cooking spray. If you do not have bunt pans regular muffin pans can be used. Blend quick bread mix with water or apple cider, oil and eggs. Blend until smooth. Pour batter into pans. Bake until golden and toothpick inserted in center comes out clean. 12 to 14 minutes for "brownie" pan, 15 to 18 minutes for "muffin" pan. Transfer to a rack and cool completely. ;
- For the icing: In a large bowl, combine the confectioners' sugar, the orange liquor and blend with a whisk until smooth. Transfer icing to a large re-sealable plastic bag and snip the corner of the bag off with a pair of scissors. Drizzle the icing over each cake and sprinkle with sanding sugar.
