Time 2h20m

Yield 16

Number Of Ingredients 6

1 ½ cups warm water (110 degrees F/45 degrees C)
1 tablespoon active dry yeast
2 tablespoons white sugar
2 tablespoons vegetable oil
1 teaspoon salt
4 cups bread flour

Steps:

  • In a large bowl, stir together warm water, yeast, and sugar. Let stand until creamy, about 10 minutes.
  • To the yeast mixture, add the oil, salt, and 2 cups flour. Stir in the remaining flour, 1/2 cup at a time, until the dough has pulled away from the sides of the bowl. Turn out onto a lightly floured surface, and knead until smooth and elastic, about 8 minutes. Lightly oil a large bowl, place the dough in the bowl, and turn to coat. Cover with a damp cloth, and let rise in a warm place until doubled in volume, about 1 hour.
  • Deflate the dough, and turn it out onto a lightly floured surface. Divide the dough into 16 equal pieces, and form into round balls. Place on lightly greased baking sheets at least 2 inches apart. Cover the rolls with a damp cloth, and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
  • Bake for 18 to 20 minutes in the preheated oven, or until golden brown.

I'm pleased to share the recipe for these light and tender rolls, which I've made for 25 years. I once served them to a woman who'd been in the restaurant business for half a century. She said they were the best rolls she'd ever tasted.

EASY WHITE BREAD ROLLS

Easy White Bread Rolls image

Simple, soft, white bread rolls. Guaranteed not to last long once out of the oven!

Time 30m

Yield Makes Rolls

Number Of Ingredients 0

Steps:

  • Firstly before we start, keep in mind that the doughs first rising can be done over night in the fridge in a well oiled bowl.
  • Combine the flour, yeast, salt and caster sugar in a large bowl. I like to mix the mixture with a regular knife.
  • Once combined make a well in the center of the flour in preparation for the wet ingredients.
  • Measure 300ml of luke warm water and add 3 tbsp of olive oil.
  • Pour the water and oil into the well of flour and gradually mix the flour in until it forms a dough.
  • Transfer the dough to the work top and start to knead. Do not be intimidated if your dough is quite wet. Many people tend to then add to much flour and this will result in a denser bread. Persist in kneading for ten minutes until smooth and elastic.
  • Place your smooth dough into a lightly oiled, covered bowl and leave to prove for an hour. If you have made your dough in the evening then you can leave in the fridge overnight.
  • Once your hour prove has finished knock back the dough for a good 10 minutes, then roll into a long sausage shape and divide into 8 sections. Form these sections into small rounds and place on covered baking trays for another hour.
  • Whilst proving preheat the oven to 220C/fan. (This step also applies for the fridge proving option).
  • Now cook your rolls in the oven for 10-15 minutes. Once out of the oven transfer to a cooling rack, tapping the bottom of the rolls to check that they sound hollow. Cover with a clean tea towel when cooling. This will absorb the moisture from the heat coming of the rolls.
  • Best eaten warm!

  • Weigh your flour; or measure it by gently spooning it into a cup, then sweeping off any excess. , To make the dough: Mix and knead all of the dough ingredients — by hand, mixer, or bread machine — to make a soft, smooth dough.
  • Cover the dough and let it rise until it's nearly doubled in bulk, about 1 to 2 hours., To shape the buns: Gently deflate the dough and divide it into eight pieces (about 100g each); to make smaller or larger buns see "tips," below. Shape each piece into a ball., Flatten each dough ball with the palm of your hand until it's about 3" across.
  • Place the buns on a lightly greased or parchment-lined baking sheet. Cover and let rise until noticeably puffy, about an hour. Toward the end of the rising time, preheat the oven to 375°F.
  • Brush the buns with about half of the melted butter. To make seeded buns, brush the egg white/water mixture right over the melted butter; it'll make the seeds adhere. Sprinkle buns with the seeds of your choice., To bake the buns: Bake the buns for 15 to 18 minutes, until golden. Remove them from the oven and brush with the remaining melted butter; this will give the buns a satiny, buttery crust. If you've made seeded buns apply the melted butter carefully, to avoid brushing the seeds off the buns., Cool the buns on a rack before slicing in half, horizontally. Use as a base for burgers (beef or plant-based) or any favorite sandwich filling., Storage information: Store leftover buns, well-wrapped, at room temperature for several days; freeze for longer storage.

  • In a large mixing bowl combine the warm water and yeast; stir to dissolve yeast. Add 1-1/2 cups of the flour, the sugar, 1/3 cup melted butter, egg, and salt. Beat with an electric mixer on low speed for 1 minute, scraping sides of bowl constantly. Using a wooden spoon, stir in enough of the remaining flour to make a soft dough that just starts to pull away from sides of bowl (dough will be slightly sticky).
  • Coat a 3-quart covered container with cooking spray. Place dough in container; turn once to grease surface of dough. Cover and chill overnight.
  • Punch dough down. Turn dough out onto a lightly floured surface. Divide dough in half. Cover and let rest for 10 minutes. Meanwhile, lightly grease a 13x9x2-inch baking pan or baking sheets.
  • Shape dough into 24 balls or desired rolls (be careful not to overwork dough; it becomes stickier the more you work with it) and place in the prepared baking pan or 2 to 3 inches apart on the prepared baking sheets. Cover and let rise in a warm place until nearly double in size (about 45 minutes).

OVERNIGHT CINNAMON BUNS RECIPE - LOVEFOOD.COM

From lovefood.com
  • Gently warm the milk in a pan until it’s ‘bath-water warm’, then pour into a jug and add the yeast and the tablespoon of sugar. Stir to mix and then leave to activate for 5 minutes, or until it goes foamy.
  • Put the flour, cinnamon and salt into a large bowl. In a separate bowl, combine the 90g (3oz) granulated sugar, vanilla, eggs and melted butter and then pour this into the bowl of flour along with the activated yeast milk.
  • Turn out on to a lightly floured surface and knead for 8–10 minutes until a smooth dough is formed and the dough is no longer sticky. Transfer this dough to a clean and lightly oiled bowl, then cover with cling film and leave to rise in a warm place for about 1 hour, or until doubled in size.
  • Without disturbing the risen dough too much, roll it out on a lightly floured surface to a large rectangle, about 40 x 60cm (16 x 24inch). Spread the softened butter all over the dough rectangle, leaving an unbuttered 1cm (0.5inch) border on all sides.
  • Mix the sugar and cinnamon together and sprinkle this all over the dough, using your fingers to press it into the butter.
  • Starting at a long edge, tightly roll the dough up like a Swiss roll, pinching at the end to seal and keep a tight roll. Use a very sharp knife to score and then cut the roll into 12 slices, each about 4cm (1.5inch) thick.
  • Place the rolls in the greased baking tray, cover tightly with cling film and place in the fridge overnight, or for at least 12 hours.
  • When you are ready to bake, remove the cinnamon rolls from the fridge, uncover and allow to come to room temperature for about 1 hour.
