MULLED WHITE WINE
I prefer to make mulled wine with white wine because I think it gives a smoother flavor. This recipe has a little rum added at the end for a bit of a kick!

MULLED WHITE WINE
This warming drink has the flavorful depth of the classic red version but is lighter in body. Choose a white that's not too acidic, such as a Viognier or an oaked Chardonnay (wines that are more astringent can develop a harsh edge when heated).

Steps:
- Wash and cut the orange and lemon. You can set aside a few slices for decoration.
- Add the wine, fruit slices, cinnamon, orange juice, cloves, sugar, rum (optional), and star anise (optional) to a medium-sized pot.
- Heat the wine on low heat for around 45 minutes. It's important that the wine doesn't come to a boil or else this will evaporate the alcohol. Give the mixture a stir occasionally.
- Before serving, taste the mulled wine and add more sugar to taste. Pour the mulled wine through a sifter before serving. You can garnish the wine glasses with those extra citrus slices and a cinnamon stick (optional) before serving.

- Place the cinnamon, nutmeg, cloves and brown sugar into a large saucepan over a medium heat. Stir regularly until the sugar has fully melted. This should take about 5 minutes. Sugar burns very easily, so make sure you keep an eye on it and stir continuously.
- When the sugar has melted, add the white wine, vanilla and orange into the saucepan. The sugar will solidify at the bottom of the pan. Don't worry. Just carry on stirring and the sugar will eventually break off the bottom of the pan and dissolve.
- When the sugar has totally dissolved, leave to simmer for 15 minutes. This gives the flavours time to infuse.

- In a medium-sized stock pot with a tight-fitting lid combine all of the ingredients, except for the honey. Stir to combine.
- Cover and bring the mixture to a boil. Once it reaches a boil reduce it to a simmer, keeping the lid on, and simmer for 10 minutes. Be careful not to let it come to a boil again; if it boils too long all of the alcohol will be cooked out.
- Immediately remove from the heat. Strain the mixture with a fine mesh sieve; discard the aromatics. Return the mixture to the pot and taste-test. Stir in honey one tablespoon at a time, tasting as you go until you reach your desired sweetness.
- Ladle into desired serving glasses. Garnish with sliced fruit, cinnamon sticks, cloves, or star anise pods, if desired. Serve immediately.

- *You can also place the oranges, cloves, cinnamon, and star anise in a cheesecloth. Then simply strain and pull out the bundle when ready to serve.
