Yield Makes 8 to 10 servings

Number Of Ingredients 12

1 large egg
1 large egg yolk
1/3 cup (packed) golden brown sugar
1/4 cup light corn syrup
1/4 cup dark corn syrup
2 tablespoons (1/4 stick) unsalted butter, melted
1 teaspoon vanilla extract
Pinch of salt
2 cups pecan halves and pieces
1 cup (about 5 ounces) finely chopped good-quality white chocolate (such as Lindt or Baker's)
1 Flaky Pie Crust
Additional pecan halves, toasted

Steps:

  • Position rack in center of oven; preheat to 350°F.Using electric mixer, beat egg and egg yolk in large bowl until light. Add brown sugar; beat until mixture forms soft ribbons when beaters are lifted, about 5 minutes. Mix in both corn syrups, butter, vanilla and salt. Stir in 2 cups pecans and 3/4 cup white chocolate.
  • Transfer filling to prepared crust. Bake until filling is set and top is golden brown, tenting pie with foil if crust browns too quickly, about 1 hour. Transfer pie to rack and cool completely.
  • Place remaining 1/4 cup white chocolate in small metal bowl. Bring water to boil in small saucepan. Remove from heat. Set bowl of chocolate atop saucepan and stir chocolate until melted and smooth. Using fork, drizzle melted chocolate decoratively over cooled pie. Arrange toasted pecans around edge. (Can be prepared 1 day ahead. Cover and let stand at room temperature.)
  • Serve pie at room temperature.

I have tried many pecan pie recipes but I always enjoy this one the best. This is for you, Nancy...only if the hubby doesn't throw the pecans out!

Number Of Ingredients 8

3/4 stick butter (or 1 st margarine), melted
3/4 c granulated sugar
1 c dark karo or king syrup
1/4 tsp salt
1 1/2 tsp vanilla extract
3 medium eggs, slightly beaten
3/4 c pecans, chopped
9" pie shell

Steps:

  • 1. Melt butter. Preheat oven to 350. Smear a little egg white or a little milk in bottom of uncooked pie shell, which will prevent the bottom from being soggy once cooked.
  • 2. Blend sugar, syrup, salt & vanilla then add in melted butter and combine well. Add in the eggs and mix gently until well blended. Fold in pecans and pour into pie shell.
  • 3. Bake @ 350 for 10 minutes then reduce heat to ***325 & continue baking an additional 30 to 40 minutes.
  • 4. ***Tip: you may need to cover outer crust with aluminum foil to prevent too much browning. Or use a pie shield if you have one.

  • On a lightly floured surface, roll out your pie crust to about 12" and then gently place in a 9" pie pan. Be sure to guide the crust (don't pull) it into the corners. Trim any overhang, crimp the edges, and prick the bottom all over with a fork. This prevents bubbling while baking. Place the crust in the freezer while you assemble the filling.
  • In a light colored skillet or sauce pan, brown the butter over medium heat. Browning butter simply means cooking it a few minutes after it melts until brown flecks form. The second you see the brown flecks, lower the heat to medium low then add the brown sugar and corn syrup and stir until the mixture is smooth. You do not need the sugar to melt. Remove from the heat.

  • Unfold piecrust, and press out fold lines; sprinkle with flour, spreading over surface. Place crust, floured side down, in a 9" pieplate; fold edges under, and flute. Bake at 450° for 5 minutes.
  • Combine butter, sugar, and corn syrup; cook over low heat, stirring constantly, until sugar dissolves. Let cool slightly. Add chopped pecans and next 3 ingredients; stir well. Pour filling into prebaked piecrust; sprinkle with two-thirds of chopped white chocolate. Top with pecan halves.
  • Bake at 325° for 50 to 55 minutes or until set. Cover with aluminum foil during last 10 minutes of baking to prevent excessive browning. Let cool on a wire rack.
  • Place remaining chopped white chocolate in a small heavy-duty, zip-top plastic bag; seal bag. Submerge bag in hot water until chocolate melts. Remove bag from water. Snip a tiny hole in one corner of bag, using scissors; drizzle chocolate over pie.
