Apple Cinnamon White Cake image

A buttery white cake that comes together in minutes but tastes like you spent all day making it. Adding apples and cinnamon with brown sugar in layers makes this cake into an autumn delight. A scoop of ice cream is especially good with this cake.

⅓ cup brown sugar
1 teaspoon ground cinnamon
⅔ cup white sugar
½ cup butter, softened
2 eggs
1 ½ teaspoons vanilla extract
1 ½ cups all-purpose flour
1 ¾ teaspoons baking powder
½ cup milk
1 apple, peeled and chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5-inch loaf pan.
  • Mix brown sugar and cinnamon together in a bowl.
  • Beat white sugar and butter together in a bowl using an electric mixer until smooth and creamy. Beat in eggs, 1 at a time, until incorporated; add vanilla extract.
  • Combine flour and baking powder together in a bowl; stir into creamed butter mixture. Mix milk into batter until smooth. Pour half the batter into the prepared loaf pan; add half the apples and half the brown sugar mixture. Lightly pat apple mixture into batter. Pour the remaining batter over apple layer; top with remaining apples and brown sugar mixture. Lightly pat apples into batter; swirl brown sugar mixture through apples using a finger or spoon.
  • Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, 30 to 40 minutes.

2 eggs
1 cup vegetable oil
2 cups white sugar
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon vanilla extract
4 cups diced apple without peel

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour one 9x13 inch cake pan.
  • Beat vegetable oil and eggs until foamy. Add the sugar, flour, ground cinnamon, baking, soda, salt, and vanilla and mix well. Stir in the diced apples. Pour batter into prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes. Cool cake in pan for 10 minutes. Cake needs no frosting.

This is a Biden family favorite for the holidays. Chocolate chip ice cream is the President's favorite, but feel free to use whatever flavor your family enjoys!

9 medium Honeycrisp apples
1 teaspoon lemon zest plus 2 tablespoons fresh lemon juice
1/4 cup dark brown sugar
1/4 cup granulated sugar
1/2 teaspoon ground cinnamon
1/8 teaspoon kosher salt
2 tablespoons local honey
2 teaspoons vanilla extract
1 tablespoon unsalted butter
2 tablespoons cornstarch
1/4 cup apple juice
Nonstick cooking spray, for the casserole dish
1 1/2 cups quick-cooking oats
1 1/2 cups all-purpose flour
3/4 cup dark brown sugar
1/4 teaspoon kosher salt
1/2 teaspoon ground cinnamon
1 tablespoon plus 1 teaspoon local honey
1 1/2 sticks (12 tablespoons) unsalted butter, melted
Chocolate chip ice cream, for serving, optional

Steps:

  • For the filling: Preheat the oven to 345 degrees F.
  • Peel, core and slice the apples to 1/4-inch thickness. Combine the apples, lemon zest and juice, brown and granulated sugars, cinnamon, salt, honey, vanilla and butter in a large pot. Cook on medium heat, gently stirring, until the apples are slightly tender, 8 to 10 minutes.
  • Mix together the cornstarch and apple juice in a small bowl. Pour over the apple filling, stir together and cook until it comes to a boil. Pour the apple mixture into a lightly sprayed 8-cup casserole dish. Set aside.
  • For the topping: Place the oats, flour, brown sugar, salt and cinnamon in a large bowl. Lightly stir together by hand. Pour in the honey and melted butter. Mix until incorporated. Sprinkle all over the apple filling.
  • Bake for 45 to 55 minutes or until the topping is golden all over and the filling has begun to bubble around the edges. Serve with chocolate chip ice cream on top if desired.

3/4 cup canola or safflower oil
1/2 cup light brown sugar (tightly packed)
1/2 cup honey
2 eggs
1 teaspoon vanilla
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1 cup peeled grated apples, like Granny Smith
1 large orange, optional
1/4 cup amber maple syrup
1/3 cup confectioner's sugar

Steps:

  • Make the cake: Heat the oven to 350 degrees. Grease a 10-inch cake pan and place a silicone sheet or parchment paper on the bottom. (You can substitute a 10-inch spring-form pan, as long as it is tightly sealed at the bottom.)
  • With a handheld or electric mixer, combine the oil, brown sugar, honey, eggs and vanilla in a large bowl.
  • In a separate bowl, sift the flour, baking soda, salt and cinnamon. Add half the sifted dry ingredients to the liquid mixture, and mix on a low speed until combined.
  • Add the grated apples and the remainder of the dry ingredients. Finish mixing by hand, and pour into the greased cake mold. Bake for 40 to 50 minutes, or until a toothpick inserted in the center comes out clean.
  • Make the maple glaze: Stir maple syrup and confectioner's sugar over low heat in a small saucepan until combined. Then increase the heat and boil for 30 seconds. Set aside on the stove top, off the heat.
  • To finish the cake, run a paring knife around the edge of the cake pan. Invert a serving dish on top of the cake and then flip the cake over onto the dish, carefully lifting away the cake pan. Re-warm the maple glaze, stir it and pour it over the warm cake. You may decorate the platter with peeled orange sections. The cake will stay moist overnight if covered with foil. It does not need to be refrigerated.

Came across this in The Seattle Times. Pie without an exquisite crust is simply not the real thing. They said, "White House pastry chef Bill Yosses' light, flaky pie crusts have earned him the nickname "The Crustmaster" from President Barack Obama." This recipe is adapted from Bill Yosses, White House Pastry chef - hope this version is as good as the one being served in the White House. Note it makes use of lard, the secret of all great pastry. Just in time for prime pie making! Use a good cooking apple for this pie.

3 cups all-purpose flour
1/4 cup sugar
1 1/2 teaspoons salt
10 ounces unsalted butter, cold, cut into small chunks
3 ounces lard, cold, cut into small chunks
1/2 cup ice water
2 lbs apples, peeled, cored and cut into chunks
1 cup sugar
1/2 cup honey
1/3 cup cornstarch
1 teaspoon vanilla extract
1/4 teaspoon cinnamon
1 lemon, zest and juice
1 egg
1 teaspoon salt
sugar, for sprinkling

Steps:

  • To make the crust, in a food processor pulse together the flour, sugar and salt. Add the butter and lard, then pulse briefly until the mixture forms small crumbs. Add the ice water and pulse just until a dough forms.
  • Divide the dough into 2 pieces and shape into discs. Wrap each disc in plastic wrap and refrigerate at least 1 hour or overnight.
  • To prepare the pie shell, on a floured surface roll out one disc to a 14-inch circle. Transfer the dough to a lightly greased, deep 9-inch pie pan, leaving a 1 inch overhang. Refrigerate the crust in the pan for at least 30 minutes or overnight.
  • When ready to bake the bottom crust, heat the oven to 375°F Line the cold crust with foil and fill with baking weights, rice or dry beans to hold it in place. Bake the pie shell for 30 minutes. Leave the oven on once the crust is done.
  • Meanwhile, prepare the filling. In a large saucepan, toss together the apples, sugar, honey, cornstarch, vanilla, cinnamon and lemon zest and juice. Let sit for 20 minutes.
  • Bring the fruit mixture to a boil over medium heat. Cook, stirring occasionally to prevent sticking, until the fruit thickens. Let cool.
  • When the bottom crust is baked and the filling has cooled, pour the fruit into the crust.
  • Roll out the second disc of dough to about 12 inches.
  • In a small bowl, beat the egg with the salt. Use a pastry brush to brush the egg on the edges of the cooked crust. Place the top crust over the filling. Gently crimp the top crust, sealing the pie around the edges.
  • Puncture the top of the crust with a paring knife in several places to create steam vents. Brush egg wash over the crust, then sprinkle with sugar. Bake for another 30 to 40 minutes, or until the filling is bubbling and the top crust is golden brown.
  • Let cool for 1 to 2 hours before serving.
