1 medium yellow onion, diced
1 poblano pepper, diced
2 cloves garlic, minced
1 (32 ounce) container chicken broth
1 ½ pounds shredded cooked chicken breast
2 (15.5 ounce) cans no-salt-added navy beans, rinsed and drained
1 (10 ounce) package frozen corn
1 teaspoon ground cumin
½ teaspoon chili powder
½ teaspoon ground black pepper
salt to taste

Steps:

  • Preheat a deep skillet over medium heat. Add olive oil, then onion, poblano pepper, and garlic. Saute until onion is translucent, about 5 minutes. Add chicken broth, shredded chicken, navy beans, corn, cumin, chili powder, pepper, and salt; bring to a boil.
  • Reduce heat and simmer for 10 minutes.

This White Chicken Chili is hearty, warming, creamy and perfectly comforting. It's a great alternative to traditional beef chili and makes a simple, yet completely delicious dinner! Makes about 8 cups.

1 small yellow onion (, diced)
1 tbsp olive oil
2 cloves garlic (, finely minced)
2 (14.5 oz) cans low-sodium chicken broth
1 (7 oz) can diced green chilies
1 1/2 tsp cumin
1/2 tsp paprika
1/2 tsp dried oregano
1/2 tsp ground coriander
1/4 tsp cayenne pepper
salt and freshly ground black pepper (, to taste)
1 (8 oz) pkg Neufchatel cheese (aka light cream cheese), (cut into small cubes )
1 1/4 cup frozen or fresh corn
2 (15 oz) cans cannellini beans
2 1/2 cups shredded cooked rotisserie or left-over chicken*
1 Tbsp fresh lime juice
2 Tbsp chopped fresh cilantro, (plus more for serving)
Tortilla chips or strips, monterrey jack cheese, sliced avocado (for serving (optional))

Steps:

  • Heat olive oil in a large pot over medium-high heat. Add onion and saute 4 minutes minutes. Add garlic and saute 30 seconds longer.
  • Add chicken broth, green chilies, cumin, paprika, oregano, coriander, cayenne pepper and season with salt and pepper to taste. Bring mixture just to a boil then reduce heat to medium-low and simmer 15 minutes.
  • Drain and rinse beans in a fine mesh strainer or colander then measure out 1 cup. Set whole beans aside, transfer 1 cup beans to a food processor along with 1/4 cup broth from soup, puree until nearly smooth**.
  • Add Neufchatel cheese to soup along with corn, whole beans and pureed beans and stir well. Simmer 5 - 10 minutes longer.
  • Stir in chicken, fresh lime juice and cilantro. Serve with Monterrey Jack cheese, more cilantro, avocado slices and tortilla chips if desired.

1 broiler/fryer chicken (3-1/2 pounds), skin removed and cut up
2 celery ribs, cut into chunks
1 small onion, quartered
1 teaspoon whole peppercorns
3/4 teaspoon salt
6 cups water
CHILI:
8 corn tortillas (6 inches), cut into 1/4-inch strips
4 teaspoons canola oil, divided
3 celery ribs, chopped
2 medium onions, chopped

1/4 cup all-purpose flour
1 tablespoon ground cumin
1 tablespoon chili powder
1/2 teaspoon salt
1/2 teaspoon pepper
2 cans (15-1/2 ounces each) navy beans, rinsed and drained
2 medium tomatoes, chopped
1/2 cup reduced-fat sour cream
4 green onions, chopped
1/2 cup shredded reduced-fat cheddar cheese

Steps:

  • Place the first six ingredients in a Dutch oven. Bring to a boil. Reduce heat; simmer, covered, 1 hour or until chicken is tender. Remove chicken; cool slightly. Strain broth, discarding vegetables and peppercorns; skim fat from broth. Set broth aside., Preheat oven to 400°. Remove meat from bones; cut into bite-size pieces and set aside. Discard bones., In a bowl, toss tortilla strips with 1 teaspoon oil. Arrange strips on a baking sheet coated with cooking spray. Bake 8-12 minutes or until crisp, stirring once., In a large saucepan, heat remaining oil over medium-high heat. Add celery, onions and garlic; cook and stir 6-8 minutes or until tender. Stir in flour and seasonings until blended. Gradually add 4 cups chicken broth (save remaining broth for another use)., Bring to a boil; cook and stir 1-2 minutes or until slightly thickened. This is NOT a copycat recipe.....I'll take this over the 'real thing' anyday...but I found it after the local Don Pablo's closed and I was desperately searching for a 'copycat' of their White Chicken Chili (which is actually very good white chili!). ..... never found one that fit the bill, but my sister sent me this recipe and I fell in love with it. It has some similarity to the Don Pablo's version, but I actually find it to be so much more hearty and flavorful! I make this at least every couple of months now, no matter the time of year. It has a LOT of heat, but the sour cream added at the end helps tone it down. You can also use a milder pepper (could use mild green chilis, roasted, skinned and chopped) if you or yours are not fans of spicy food.

1 -1 1/2 lb boneless skinless chicken breast, cubed (the smaller the better)
2 (14 ounce) cans great northern beans, rinsed
1 medium white onion, diced
1 cup frozen white corn
1 red bell pepper, diced (or yellow bell pepper...or both!)
3 -4 fresh garlic cloves, minced
4 -6 jalapeno peppers, seeded and diced (Don't forget to wear rubber gloves!)
1/2 cup beer (or white wine)
1 (14 ounce) can chicken broth
2 teaspoons ground cumin
1 teaspoon ground coriander
1 tablespoon white pepper (do not substitute!)
3 tablespoons olive oil
1 lime, juice of
1/2 cup sour cream
1/2 cup monterey jack cheese, shredded (or cheddar)
4 tablespoons fresh cilantro, chopped

Steps:

  • Heat olive oil in large sauté pan over medium heat.
  • Add garlic, onions, and chicken. Sauté for 10-15 minutes or until chicken is no longer pink. Set aside.
  • In a large stock pot combine chicken broth, cumin, coriander, ground white pepper, lime juice, jalapeno peppers and bring to a boil.
  • Reduce heat to medium-low, cover with lid, and let simmer for 10-15 minutes. (The aroma of this soup base is very pungent -- don't let it scare you! Once it's all put together, the base blends beautifully with the other ingredients, mellows out a bit and creates a wonderful flavor.).
  • Add the chicken, garlic, and onion mixture, plus the corn, beans, bell pepper, and beer.
  • Cover and let simmer for approximately 30-35 minutes.
  • When finished, remove from heat and stir in the sour cream and fresh cilantro.
  • Garnish each bowl with the shredded pepper jack cheese and/or pico de gallo and serve with tortilla chips. Enjoy!

1 cup dry white wine or 1 cup chicken broth
2 cans great northern beans, rinsed and drained
1 teaspoon mustard powder
1 teaspoon ground cumin
1/2 teaspoon salt
1/8 teaspoon ground black pepper
4 cups baked corn tortilla chips (optional)
1/2 cup shredded reduced-fat sharp cheddar cheese
sour cream (optional)

Steps:

  • Heat oil in large skillet over medium-high heat.
  • Add chicken and cook until no longer pink.
  • Remove chicken and set aside.
  • Add onion and garlic to skillet and cook until tender.
  • Place chicken, onion, and garlic in crockpot.
  • Add wine, beans, mustard powder, cumin, salt and pepper.
  • Cook on low 5 to 6 hours.
  • Place servings into bowl (If using tortilla chips put them in bowl first).
  • Sprinkle with cheese and add sour cream.

I have used substitutions myself on this recipe, such as cream of mushroom vs. chicken, as well as using fresh beans and peppers vs. canned. It works out great either way. So I am posting it using cans for ease.

2 boneless skinless chicken breasts
1 large finely chopped onion
2 (4 ounce) cans of chopped green chili peppers
2 (15 ounce) cans great northern beans
2 (14 1/2 ounce) cans chicken broth
2 (10 1/2 ounce) cans Campbell's Cream of Chicken Soup
3 minced garlic cloves
1/4 teaspoon ground cayenne pepper
1/4 teaspoon ground cloves
1/2 teaspoon salt
2 teaspoons dried oregano
1 tablespoon olive oil
1 cup shredded monterey jack cheese

Steps:

  • Place chicken in very deep frying pan. Cover with water and bring to a boil over high heat. Reduce heat to medium and cook chicken for approximately 10 minutes until done.
  • Remove chicken and allow to cool. Drain water from frying pan.
  • In the same pan add olive oil and onion over medium high heat. Stir constantly, as not to brown for about two minutes. Add chili peppers, garlic, cayenne pepper, ground cloves, salt and oregano. Stir constantly as not to brown for about two minutes.
  • Add chicken broth, cream of chicken soup and beans. Mix well, until consistent.
  • Allow to simmer over medium-low heat for about 15 minutes.
  • While this is simmering, cut the chicken into cubes. After 15 minutes, add chicken. Continue to simmer for about 30 minutes to heat through. Prior to serving stir in Monterey Jack cheese and allow to thicken.
  • Serve with additional Monterey Jack if desired. Salt and pepper to taste.

This is one of our go-to recipes when it gets "cold" in Los Angeles (and by cold we mean like 50 or 60 degrees F). It's great to serve by itself or over rice, but we like to hollow out a large sourdough bread bowl to serve it in. It's a fun, comforting meal for the entire family.

1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon dried oregano
1 1/2 tablespoons olive oil
1 pound chicken breasts, sliced into 1/2-inch-by-2-inch strips
1 slice bacon, finely diced
1/2 medium yellow onion, finely diced
1 clove garlic, minced
1/4 cup all-purpose flour
2 cups chicken broth
One 15.5-ounce can white beans, drained
1/4 cup canned green New Mexico chiles or roasted, peeled, seeded and chopped fresh chiles
1/4 to 1/2 teaspoon sugar
1/4 cup sour cream
Kosher salt and freshly ground black pepper
Sourdough bowls, warmed, for serving (see Cook's Note), optional
Sliced scallions, for garnish

Steps:

  • For the spice mix: Combine the cumin, chili powder, salt, pepper and oregano in a small bowl. Set aside.
  • For the chili: Heat a medium pot or Dutch oven over high heat for 1 to 2 minutes. Add the oil. Add the chicken breast. Sear on all sides until browned but not cooked through, about 3 minutes. Remove from the pot with a slotted spoon and set aside.
  • Add the bacon to the same pot and cook, stirring, until rendered and lightly browned, 2 to 3 minutes. Add the onions and garlic and reduce the heat to medium. Cook, stirring, until the onions are translucent, 1 to 2 minutes. Add the spice mix and stir until fragrant, about 30 seconds.
  • Stir in the flour until it's mixed and forms a roux, about 1 minute. Whisk in the chicken broth, whisking until no lumps remain. Raise the heat to high and stir in the beans, roasted chiles, sugar and the cooked chicken. Bring to a boil, reduce the heat until the mixture simmers. Simmer, stirring occasionally, until the chili is thick enough to coat the back of a spoon and the chicken is cooked through, 10 to 15 minutes.
  • Stir in the sour cream. Taste and adjust the seasonings. Ladle into the sourdough bowls if using. Serve garnished with scallions.
