This Eggnog Fudge is perfect for Christmastime - It has a smooth and creamy texture, with white chocolate and a mild eggnog flavor everyone is sure to enjoy!

1/2 cup butter (1 stick)
2 Tablespoons heavy whipping cream
3/4 cup eggnog minus 2 Tablespoons
2 cups sugar
1 (11 ounce package) white chocolate chips
1 (7 ounce) jar Marshmallow Creme
1/2 teaspoon nutmeg + more for topping
2 teaspoons vanilla extract

Steps:

  • Line a 9x9 or 8x8 pan with foil, then butter foil well. Set aside. Combine butter, eggnog, cream and sugar in a heavy medium saucepan. Bring to a boil over medium heat stirring occasionally. Once boiling, reduce heat a little bit, using a candy thermometer, continue cooking until temperature reaches 235 degrees (soft ball stage) remove from heat, stir in white chocolate chips. Continue stirring until chocolate is completely melted and blended in. Add in Marshmallow, nutmeg and vanilla. Stir until smooth. Spread into prepared pan. Garnish with a dusting of nutmeg. Let cool at room temperature completely before removing from pan and cutting into squares. Store at room temperature for up to one week or in refrigerator for up to three weeks. Freezes well.

1-1/2 teaspoons plus 3/4 cup butter, softened, divided
3 cups sugar
1 can (5 ounces) evaporated milk (about 2/3 cup)
1 package (12 ounces) white baking chips
1 jar (7 ounces) marshmallow creme
1 teaspoon vanilla extract

Steps:

  • Line a 13x9-in. pan with foil; grease foil with 1-1/2 teaspoons butter., In a heavy saucepan, combine sugar, milk and remaining 3/4 cup butter; bring to a rapid boil over medium heat, stirring constantly. Boil 4 minutes, stirring constantly. Remove from heat; stir in baking chips and marshmallow creme until melted. Stir in vanilla. Immediately spread into prepared pan. Refrigerate until firm, 1-2 hours. , Using foil, lift fudge out of pan. Remove foil; cut fudge into 1-in. squares. Store between layers of waxed paper in an airtight container.

2 cups granulated sugar
1/4 cup eggnog
1/2 cup heavy whipping cream
¾ cup unsalted butter
Pinch of salt
1 jar (7oz) marshmallow cream
1 package (11oz) white chocolate morsels
¼ tsp nutmeg
1 tsp rum flavoring

Steps:

  • Line a 9-inch square baking dish with parchment paper. Set aside.
  • Prepare your mixing bowl by adding the marshmallow cream, white chocolate morsels, nutmeg, and rum flavoring. Place these ingredients into the mixing bowl and set aside.
  • In a large saucepan, melt butter with sugar, eggnog, heavy cream, and salt over medium high heat. Bring to a boil. Stirring continuously, boil for a complete 4 minutes (rolling boil). Remove from heat.
  • Pour mixture over ingredients in mixing bowl. Using an electric mixer with whisk attachment, beat on medium until smooth and white chocolate is melted (about one minute). Pour into prepared baking dish.
  • If desired, sprinkle with extra nutmeg for garnish.
  • Allow to set for about 3 hours, or overnight. Remove parchment paper and cut into bite sized pieces. ENJOY.
  • To store, keep in airtight container at room temperature for up to two weeks.

1 cup marshmallow creme
1 cup finely chopped walnuts
2 teaspoons vanilla extract

Steps:

  • Line a 13-in. x 9-in. pan with foil and grease the foil with 1 tablespoon butter; set aside. In a large saucepan, combine the sugar, eggnog, cream and remaining butter. Bring to a boil over medium heat, stirring constantly. Reduce heat; cook until a candy thermometer reads 238° (soft-ball stage), stirring occasionally., Remove from the heat. Stir in chips until melted. Stir in the marshmallow creme, walnuts and vanilla. , Spread into prepared pan. Cool to room temperature. Using foil, lift fudge out of pan. ¾ cup butter
⅔ cup eggnog
2 teaspoons ground nutmeg
1 teaspoon ground cinnamon
12 ounces white chocolate, chopped
1 (7 ounce) jar marshmallow cream
1 teaspoon vanilla extract
¼ cup chopped walnuts

Steps:

  • Grease a 9 inch square pan and set aside.
  • Combine the sugar, butter, eggnog, nutmeg, and cinnamon in a large saucepan. Bring to a boil, stirring occasionally to melt the butter. Once the mixture reaches a rolling boil, stop stirring, and clip a candy thermometer onto the pan.
  • Heat mixture to 235 degrees F (113 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface.
  • Remove the pan from the heat and stir in the white chocolate pieces, marshmallow cream, vanilla, and walnuts. Beat the mixture with a wooden spoon until fluffy and it starts to lose its gloss. Spoon into the prepared pan, spreading evenly. Cool completely, then cut into small squares for serving.

The year I made this I made 3 batches and served it to company on a deep red platter surrounded by holly sprigs. It looked like something from a magazine. I might add that I made them separately to insure that the fudge came out right. I cut into 2 inch squares so that is the yield I listed.

2 1/2 cups confectioners' sugar
2/3 cup milk
1/4 cup butter
12 ounces white chocolate (coarsely chopped)
1/2 teaspoon almond extract
3/4 cup dried cranberries or 3/4 cup dried apricot, coarsely chopped
3/4 cup toasted sliced almonds

Steps:

  • Line an 8 inch square pan with foil, grease foil.
  • Mix sugar and milk in a 3 quart saucepan over medium heat, add butter and stirring constantly, bring to a boil. Without stirring, boil for 5 minutes.
  • Over low heat, add chocolate and almond extract. Stir, then whisk until chocolate melts and mixture is smooth.
  • Stir in dried cherries and toasted almonds.
  • Pour mixture into pan. Refrigerate 2 hours until firm.
  • Invert pan, peel off foil and cut in 1 inch squares.
  • Tip: To toast almonds, spread in single layer on cookie sheet. Bake in 350 oven for 5-10 minutes, shaking pan occasionally until they begin to brown.
  • Very tasty and pretty.

1 3/4 cups sugar
1/2 cup butter
3/4 cup prepared dairy eggnog
1 (12 ounce) package premium white chocolate chips
1/2 teaspoon grated nutmeg
1 (7 ounce) jar marshmallow creme
3 tablespoons Captain Morgan's spiced rum (or 1 teaspoon rum extract)

Steps:

  • Bring the sugar, butter and eggnog to a full boil in a heavy medium-size saucepan.
  • Continue to boil for 8 to 10 minutes over medium heat, or 234°F on a candy thermometer, stirring constantly to prevent scorching.
  • Remove from heat and stir in the white chocolate chips and the grated nutmeg, stirring until the chocolate is melted.
  • Add marshmallow creme and the rum or rum extract; beat until well blended.
  • Pour into a buttered 8 or 9-inch square pan.
  • Cool at room temperature, then cut into squares.
  • Store in an airtight container in the refrigerator. May be frozen for up to three weeks.
