WHITE CHOCOLATE-DIPPED STRAWBERRIES
Sweet, juicy strawberries are the perfect fruit to turn into a delightful dessert. White chocolate-covered strawberries are drizzled with chocolate for a shareable treat that makes the dessert tray look oh-so-pretty. Make homemade white chocolate strawberries by heating white baking chips and shortening until melted. Dip each strawberry three-fourths of the way into melted chips, drizzle with melted semisweet chocolate chips and refrigerate.

- Cover cookie sheet with waxed paper. Heat white baking chips and 1 tablespoon shortening in 2-quart saucepan over low heat, stirring constantly, until chips are melted.
- For each strawberry, poke fork or toothpick into stem end, and dip three-fourths of the way into melted chips, leaving top of strawberry and leaves uncoated. Place on waxed paper-covered cookie sheet.
- Heat semisweet chocolate chips and 1 teaspoon shortening in 1-quart saucepan over low heat, stirring constantly, until chocolate chips are melted. (Or place chocolate chips and shortening in small microwavable bowl. Microwave uncovered on Medium (50%) 1 minute; stir. Microwave 2 to 3 minutes longer, until mixture can be stirred smooth.)
- Drizzle melted semisweet chocolate over dipped strawberries, using small spoon. Refrigerate uncovered about 30 minutes or until coating is set.

A decadent make-ahead dessert that even the most saintly of guests won't be able to resist

- Line a 1.2 litre loaf tin with a double layer of cling film allowing it to overhang the edges. Arrange rows of sponge fingers, widthwise, across the base. Sprinkle evenly with 3 tbsp orange juice.
- Put chocolate in a heatproof bowl with the butter. Microwave on Medium for 1½-2 mins, gently stirring halfway through. Whisk cream with 1 tbsp icing sugar until it just holds its shape. Fold in the melted chocolate until evenly mixed.
- Select 8-10 even sized strawberries. Spoon half the chocolate mix into tin, then put selected strawberries down the centre of the tin, pressing down gently. Spoon over remaining chocolate cream and smooth the top. Fold overhanging cling film over marquise. Chill for at least 24 hrs, preferably 2 days in the fridge until set.
- Weigh out 250g of the remaining strawberries, roughly chop them and put in the food processor with 2 tbsp icing sugar and 1 tbsp orange juice. Blitz until smooth, then press through a fine sieve to remove the seeds. Chill until needed.
- To serve, unmould marquise and cut into thick slices. Serve with strawberry sauce and a few reserved strawberries.

This recipe is very chocolaty and I always get asked to make it. You can substitute half the cocoa powder for drinking chocolate to make it less rich.

- In the microwave or in a small saucepan over low heat, melt chocolate, stirring until smooth.
- In a bowl, cream together butter and cocoa powder. In a separate bowl, beat egg yolks. Dissolve instant coffee in water and beat dissolved coffee, sugar and honey into egg yolks until smooth. Slowly beat in slightly cooled chocolate. Beat in cocoa mixture.
- Whip cream until stiff peaks form and fold into chocolate mixture. Chill until serving.

- Preheat the oven to 180°C/ fan160°C/gas 4 and lightly grease and base line 2 x 20cm round x 4cm deep loose-bottomed cake tins with baking paper. Sift the flour and baking powder into a large bowl. Add all the other cake ingredients and mix with an electric hand whisk until the mixture is a smooth, dropping consistency. If a little stiff, mix in a dash of water to loosen.
- Divide the mixture equally between the tins and level. Bake for 25 minutes, until well risen, springy and golden. Cool in the tin for 5 minutes, then turn out onto a wire rack to cool completely. Using a serrated bread knife, slice each cake horizontally into 3 thin discs, to give 6 in total.
- Put the mascarpone, cream, sugar and vanilla in a large bowl and mix with an electric hand whisk until smooth and thickened.
- Put 1 disc, cut-side up, on a plate or cake stand. Spread over a little of the filling (about a fifth) and scatter with half the raspberries. Place a second disc on top and spread with a little more filling, then top with a third disc and spread with half the jam. Put a fourth disc on top and spread with a little filling, scatter with the rest of the raspberries and sit the fifth disc on top. Spread with the remaining jam and more filling, then sit the final disc on top. Press so the filling oozes out a little. Spread the remaining filling on top. Chill to firm up.

- In a double boiler set to medium low heat, melt the cocoa butter. Stir in the powdered sugar, powdered milk, and seeds from the vanilla bean until completely incorporated and bring the mixture to 120˚F (49˚C), no higher.

- Rinse strawberries with cold water, gently (but thoroughly) pat dry with paper towels, set aside. Line a small-medium baking sheet (something that will fit in your fridge) with aluminum foil.
- In a microwave safe bowl (or double boiler) melt chocolate chips with shortening and stir until smooth. Carefully dip strawberries into melted chocolate, turning all the way around so that ll sides are coated with chocolate. Place on prepared baking sheet.
- When all strawberries are dipped, place baking sheet in the fridge to cool. Add a few drops of food coloring (color of your choice!) into the melted chocolate (if it has begun to set up just put it back in the microwave on half heat for a few seconds and give it a stir) and stir until smooth and coloring is even. Remove strawberries from fridge. Carefully transfer colored chocolate into a zip lock bag, seal it and snip off just a tiny bit of one bottom corner. Drizzle colored chocolate onto strawberries in any design you like. Top with sprinkles. Return to fridge for about 10 minutes to set up. Store in airtight container in fridge up to 3 days.
