WHITE FRUIT CAKE

White Fruit Cake image

My mother has been making this fruit cake at Christmas time for as long as I can remember. My whole family loves it. I know there are a lot of people out there that have issues with fruit cake, but this recipe has converted even the most reluctant.

WHITE CHOCOLATE, ORANGE & CRANBERRY CHRISTMAS CAKE

White chocolate, orange & cranberry Christmas cake image

Try sponge instead of fruit cake this Christmas. Our white chocolate cake is a crowd-pleaser and you can buy the meringue decorations, or bake them yourself

Provided by Cassie Best

Categories     Afternoon tea, Dessert, Treat

Time 3h5m

Number Of Ingredients 18

300g salted butter , chopped, plus extra for the tin
200g white chocolate , finely chopped
500g plain flour
4 tsp baking powder
1 tsp bicarbonate of soda
500g white caster sugar
300ml natural yogurt
4 tsp vanilla extract
1 large orange , zested and juiced
6 large eggs
4 tbsp milk
200g cranberries
150g white caster sugar
200g white chocolate , finely chopped
500g salted butter , softened
750g icing sugar , sifted if lumpy
280g cream cheese
meringue kisses

Steps:

  • Heat oven to 180C/160C fan/gas 4. Rub a little butter over the base and sides of two 20cm cake tins (use cake tins rather than sandwich tins as the higher sides work better), then line the base and sides with baking parchment. Melt 150g butter with 100g of the chocolate in a bowl set over a small saucepan of gently simmering water - make sure the base of the bowl doesn't touch the water. Stir the butter and chocolate every min or so until it has melted. Set aside to cool a little.
  • Meanwhile, measure 250g flour, 2 tsp baking powder, ½ tsp bicarb and 250g sugar in a large bowl. Make a well in the middle and add 150g yogurt, 2 tsp vanilla extract, half the orange zest and juice, 3 eggs and 2 tbsp milk. Whisk everything together, then stir in the melted butter and chocolate.
  • When the cake mixture is smooth (this makes a very wet pourable batter), divide it equally between the two cake tins. Bake on the middle shelf for 25-30 mins, they will look golden and evenly risen when cooked. Check they are done by pushing a skewer into the centre of the cakes - it should come out clean. If there is any wet cake mixture on the skewer, return the cake to the oven for a few more mins, then check again.
  • Leave the cakes to cool in their tins for 5 mins, then transfer to a cooling rack. Wash out the tins and repeat steps 1 and 2, to make two more sponges in total. You can make them a day or two before icing, then wrap them in a double layer of cling film once cool. They can also be frozen for up to two months.
  • To make the compote, simmer the cranberries and sugar in a small pan for 4-5 mins until jammy, then leave to cool.
  • For the icing, melt the chocolate, either in 20-30 secs bursts in a microwave or in a bowl over simmering water. Set aside to cool a little. Roughly mash the butter and icing sugar together, then beat until smooth with an electric whisk or mixer. Add the chocolate and cream cheese and beat again until smooth.
  • To assemble the cake, place one sponge on a cake board the same size as the sponge, then sandwich the other sponges on top with a little icing and the cranberry compote. Use the cake with the neatest edge, flipped upside down, on top to give your cake a good shape.
  • Pile about half the remaining icing on top of the cake and use a palette knife to spread it thinly over the top and down the sides of the cake. This is a crumb coat, it catches any crumbs, ensuring the final layer looks clean and professional. Chill the cake for 10-20 mins to firm up the icing or leave it somewhere cool for longer. Spread the remaining icing over the top and sides of the cakes, giving it nice sharp edges. We've left some of the cake exposed for the 'naked' cake look, or cover it completely if you like. Will keep for three days.
  • To decorate the cake: dot the top with meringue kisses that you've either bought or made yourself, edible snowflake decorations and gold leaf, if you like.See our guide to decorating a Christmas cake 3 ways for details on this design along with more decorating ideas.

WHITE CHOCOLATE ORANGE FRUITCAKE

White Chocolate Orange Fruitcake image

I haven't tried this yet, but it sounds good. Not bad, coming from someone that doesn't normally care for fruitcake! :) I like the idea that it doesn't use candied/glaced fruits...and white chocolate and orange go very well together. It's too late for Christmas this year, but I thought I'd post this here for others that might be interested. I got this recipe from "365 Great Chocolate Desserts" by Natalie Haughton. Prep time does not include storage/mellowing time in refrigerator.

Categories     Dessert

Time 1h50m

Yield 16 serving(s)

Number Of Ingredients 17

4 cups diced dried mixed fruit (see note)
1 cup Grand Marnier or 1 cup other orange-flavored liqueur, divided
1/2 cup butter (4 ounces)
1/2 cup packed light brown sugar
4 eggs
1 teaspoon vanilla extract
1 teaspoon grated orange zest
1/2 teaspoon ground cinnamon
8 ounces imported white chocolate, melted and cooled slightly
1 cup flour
2 tablespoons flour
1 1/2 cups chopped pecans
1/3 cup heavy cream
6 ounces imported white chocolate, cut up
2 teaspoons Grand Marnier
apricot halves (to garnish)
chopped pecans, to garnish

Steps:

  • Note: For dried fruits, use only nectarines, peaches, pears, apricots or apples; do not use figs, dates or raisins.
  • In a medium bowl, combine dried fruits and 2/3 cup Grand Marnier; let stand several hours or overnight.
  • Preheat oven to 325°F.
  • Line a 9-inch springform pan with a round of waxed paper cut to fit the bottom; butter bottom and sides of pan, dust with flour, then tap out excess flour; set aside.
  • To make batter, in a large bowl, beat together butter and brown sugar with an electric mixer on medium speed until light and fluffy, 1 to 2 minutes.
  • Beat in eggs, one at a time, beating well after each addition.
  • Beat in vanilla, orange zest and cinnamon.
  • Add white chocolate and beat until mixture is light and fluffy, 3 to 4 minutes.
  • Add 1 cup flour and beat until well blended.
  • Add remaining 2 tablespoons flour and 1 1/2 cups chopped pecans to fruit mixture and toss to coat well.
  • Add to batter and mix thoroughly.
  • Turn batter into prepared pan and smooth top.
  • Set springform pan in a larger baking pan and add enough hot water to reach 1 inch up side of springform pan.
  • Bake 1 hour and 20 to 30 minutes, until a cake tester inserted in center of cake comes out clean; if top is browning too quickly, cover springform with foil the last 1/2 hour of baking.
  • Remove springform pan from water bath.
  • Sprinkle remaining 1/3 cup Grand Marnier over top of cake and let cool in pan.
  • When completely cool, run a sharp knife around edges of pan to loosen cake.
  • Remove springform side of pan.
  • Carefully remove cake from bottom of pan; peel off wax paper.
  • Wrap cake in plastic wrap, then wrap in foil.
  • Refrigerate at least 2 to 3 days or up to 2 weeks before serving.
  • For longer storage, freeze cake.
  • Do not frost at this time.
  • To make the white chocolate topping, in a 1 quart glass bowl, heat cream in a microwave oven on high 30-45 seconds, or until very hot.
  • Stir in white chocolate, mixing well.
  • Return to microwave and heat on medium for 30 to 60 seconds, or until chocolate is melted when stirred.
  • Stir in Grand Marnier.
  • Cover and refrigerate until glaze thickens to spreading consistency.
  • An hour before serving time, unwrap cake and frost evenly with White Chocolate Topping.
  • Garnish edge of top of cake with apricot halves.
  • Sprinkle additional chopped pecans over center of cake.
  • Return to refrigerator until serving time.

FRUITCAKE JUNKYARD BROWNIE WITH SPICED ORANGE LIQUEUR AND WHITE CHOCOLATE

Fruitcake Junkyard Brownie with Spiced Orange Liqueur and White Chocolate image

Provided by Erin Campbell

Categories     dessert

Time 1h20m

Yield 6 servings

Number Of Ingredients 18

1 cup (2 sticks) unsalted butter, melted, plus more for greasing the pie tins 1/2 loaf fruitcake (about 1 pound)
1 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1 teaspoon salt
1 cup cocoa powder
3 cups sugar
4 large eggs
1 tablespoon vanilla
1 1/2 cups all-purpose flour
2 cups white chocolate chips
1/2 cup heavy cream
2 tablespoons orange liqueur
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 cut candied fruit, for garnish, optional

Steps:

  • For the fruitcake junkyard brownie: Preheat the oven to 350 degrees F.
  • Grease six 4-inch mini pie tins (each 3/4-inch deep) with butter and set on a rimmed baking sheet. Line a second baking sheet with parchment or a silicone baking mat.
  • Cube the fruit cake and lay it out on the prepared baking sheet. Bake until dry and crispy, 10 to 15 minutes.
  • Combine the flour, baking powder, cinnamon, cloves, nutmeg, allspice and salt in a medium bowl and set aside.
  • Add the dried toasted fruitcake to the bowl of a food processor and pulse until pulverized. Add the fruitcake crumbs, cocoa powder and sugar to the bowl of a stand mixer fitted with a paddle attachment and mix on medium until combined. Add the eggs, vanilla and butter and continue mixing until completely combined. With the mixer running, add the flour mixture until completely combined. Divide the batter evenly among the pie tins, leaving about 1/4-inch of room at the top.
  • Bake until a toothpick inserted in the center comes out with fudge crumbs, about 45 minutes. Allow to cool for about 5 minutes and turn out onto serving plates.
  • For the spiced orange liqueur and white chocolate ganache: Place the white chocolate chips in a medium heat-proof bowl. Heat the cream and orange liquor in a small saucepan over medium-high heat to a bare simmer. Pour the mixture over the chips and allow to sit for a couple minutes to melt. Stir together, and then stir in the cinnamon and cloves.
  • Finely dice the candied fruit, if using. Spoon or drizzle some of the white chocolate ganache over each brownie and sprinkle with the diced fruit to serve.

WHITE CHOCOLATE FRUITCAKE BARS

White Chocolate Fruitcake Bars image

These cookie bars are studded with the best parts of traditional fruitcake (orange zest and dried fruit) and spiced up with lots of fresh ginger. The white chocolate drizzle creates a blank canvas that's perfect for sprinkles and/or sanding sugar.

Yield Makes about 30

Number Of Ingredients 19

For the Shortbread:
1 1/4 cups (2 1/2 sticks) unsalted butter, softened, plus more for pan
1 1/2 cups all-purpose flour
1/2 cup almond flour or meal
1/2 tsp. baking powder
1/2 tsp. kosher salt
1/2 cup granulated sugar
1 large egg
1 Tbsp. finely grated orange zest
1 Tbsp. freshly grated ginger (from one 3" piece)
2 tsp. vanilla extract
1 cup dried cranberries, finely chopped
3/4 cup unsweetened coconut flakes or coconut chips
2 oz. white chocolate, coarsely chopped
For the Glaze and Assembly:
8 oz. white chocolate, finely chopped, or white chocolate chips
1 Tbsp. virgin coconut oil
1/2 tsp. kosher salt
Sprinkles and/or sanding sugar (for sprinkling)

Steps:

  • Make the Shortbread:
  • Preheat oven to 350°F. Line an 8" square metal pan with parchment paper, leaving an overhang on all sides. Butter parchment.
  • Whisk flour, almonds, baking powder, and salt in a medium bowl.
  • Using an electric mixer on medium-high speed (or use a stand mixer fitted with the paddle attachment), beat granulated sugar and 1 1/4 cups butter in a large bowl, scraping down sides, until light and fluffy, about 5 minutes. Reduce mixer speed to medium, add egg, and beat until incorporated, about 1 minute more. Scrape down sides of bowl. Reduce mixer speed to low and beat in orange zest, ginger, and vanilla.
  • With the mixer running on low speed, add dry ingredients and beat just until combined with some visible flour remaining. Add cranberries, coconut, and chocolate. Beat just until incorporated. Scrape down sides of bowl, then fold dough once or twice with a spatula.
  • Scrape dough into prepared pan. Using dampened fingers or a damp offset spatula, press dough evenly into pan. Bake shortbread until lightly golden brown and set, 25-30 minutes. Transfer pan to a wire rack and let cool.
  • Do Ahead: Shortbread can be baked 2 days ahead. Store airtight at room temperature.
  • Make the Glaze and Assemble:
  • Heat chocolate, oil, and salt in a small heatproof bowl in a microwave, stirring every 30 seconds, until smooth and glossy, about 1 minute total. Set aside 2 Tbsp. glaze, then pour remaining glaze over cooled shortbread in pan, spreading to the edges. Let sit at room temperature until set (if you're impatient, chill 10-15 minutes).
  • Run a paring knife around edge of pan to release, then remove shortbread from pan using parchment overhang. Slice into bars. To slice into diamonds, cut into five 1 1/2" strips, then slice each strip on the bias into 1" diamonds.
  • Rewarm reserved glaze and drizzle over bars in stripes with a spoon. Top with sprinkles. Let sit at room temperature until set (or chill for 8-10 minutes).
  • Do Ahead: Bars can be made 5 days ahead. Store airtight at room temperature.

  • Glaze:.
  • While cake is baking, melt the orange marmalade and butter in the microwave about for 45 seconds.

  • Then let cake cool on a rack to room temperature before adding icing.

  • Add a little more juice or milk if too stiff.
  • Mix in the remaining orange zest.
  • Scrape into a zip-top bag, press out the air, and seal.
  • Cut a small corner from the bottom of the bag and drizzle the icing over the top of the cooled orange cake in a zig-zag pattern.
