A yummy baked donut recipe using White Chocolate Mocha creamer by International Delight.

For the Donut Batter
6 TBS butter, softened
3 eggs
1 tsp. vanilla extract
⅓ cup white chocolate mocha creamer by International Delight
1¼ cup flour
½ cup granulated sugar
¼ tsp. baking soda
¼ tsp. salt
½ cup of white chocolate chips
For the Crumb Topping
⅓ cup granulated sugar
⅓ cup brown sugar
2 TBS. ovaltine or other powdered chocolate mix
¼ tsp. salt
¼ cup butter, melted
1¾ cups flour

Steps:

  • Preheat oven to 325 degrees F.
  • Whisk together the dry ingredients except the chocolate chips. Add in the butter and beat until the mixture is crumbly.
  • In a small bowl, combine the eggs, vanilla extract and creamer. Mix until smooth.
  • Add the wet ingredients to the dry, mixing until the batter is smooth. Add the chocolate chips.
  • Spoon the batter into the donut molds. Make sure each donut mold is about ½ full as you still have to add the crumble.
  • To make crumble: Add dry ingredients except flour and then pour the melted butter over the mixture and stir. Add flour gradually and mix.
  • Spoon the crumb mixture over the top of each donut.
  • Bake for about 13 minutes.
  • Be sure to let cool before removing from pan. Enjoy!

1 cup flour
1/4 cup plus 2 tablespoons white sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup plus 2 tablespoons buttermilk (or regular milk with a teaspoon of white vinegar added)
1 large egg (beaten)
1/2 teaspoon vanilla
1 1/2 teaspoons vegetable oil
1/4 cup white chocolate (melted)
1/4 cup boiling water
6 tablespoons espresso powder
1 1/2 cups powdered sugar
1/2 teaspoon vanilla
Pinch of salt
1/4 cup white chocolate chips
1 teaspoon milk

Steps:

  • Preheat the oven to 325 degrees. Lightly grease a donut pan.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • In a small bowl, stir together the buttermilk, egg, and oil.
  • Add the wet ingredients to the dry and stir with a wooden spoon until combined. Stir in the melted white chocolate.
  • Fill the donut pan and bake for 8-10 minutes or until lightly browned and cooked through.
  • Remove from the oven and cool in the pan for a few minutes before transferring to a wire rack.
  • Add the boiling water and espresso powder to a small bowl and whisk until combined. Whisk in the powdered sugar, vanilla, and salt. The glaze will be thin.
  • Dip the donuts in the glaze and set on a cooling rack for 10-15 minutes.
  • Melt together the white chocolate and milk in a microwave safe bowl or in a double boiler.
  • Use a spoon to drizzle the white chocolate over the donuts.
  • Allow chocolate to harden before serving.
