COCONUT CHOCOLATE CHIP BANANA BREAD

Coconut Chocolate Chip Banana Bread image

A twist on the classic banana bread, replacing the traditional walnuts with coconut flakes and chocolate chips. I combined and tweaked several traditional recipes to come up with this one. Some suggested additions or substitutions: white, dark, or milk chocolate chips instead of the semi sweet and/or adding chopped macadamia nuts. Hope you enjoy!

CHOCOLATE COCONUT BANANA BREAD

Chocolate Coconut Banana Bread image

Chocolate Coconut Banana Bread is a soft, moist, easy-to-make quick bread bursting with ripe banana, creamy chocolate chips, and chewy coconut!

Provided by Samantha Skaggs

Categories     Dessert

Time 1h15m

Number Of Ingredients 11

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup 1 stick unsalted butter
3/4 cup light brown sugar
2 eggs
1 to 1 1/2 cup mashed banana* (from 3 to 4 overripe bananas)
1 teaspoon pure vanilla extract
1 cup chocolate chips/chunks (semisweet, milk, or a combo, plus additional for top (optional))
1 cup shredded coconut (plus additional for top (optional))

Steps:

  • Arrange an oven rack in the center position of the oven and preheat to 350°F. Grease an 8- by 4-inch loaf pan with softened butter, or generously coat with non-stick cooking spray.
  • In a medium bowl, whisk together the flour, baking soda, baking powder, and salt; set aside. In a large bowl, use an electric mixer to blend the butter until creamy. Mix in the brown sugar and beat for 1 minute. Stir in the eggs, mashed banana, and vanilla until well blended (it's okay if it looks a little curdled at this point). Stir in the flour mixture until just combined. Fold in the chocolate chips and the shredded coconut.
  • Scrape the batter into the prepared loaf pan and smooth the top. Sprinkle with additional chocolate chips and/or coconut, if using, and lightly press into the surface (if stray pieces of coconut are sticking up, they will burn). Bake for 55 to 60 minutes or until the outside of the bread is dark and crunchy and a toothpick inserted into the center comes out clean (unless you stick it in a chocolate chip!).
  • Allow the bread to cool for at least 10 minutes before turning it out of the pan onto a wire rack to finish cooling. Serve warm or at room temperature. Once completely cool, tightly wrap or cover any leftover banana bread and store it on the counter for up to a couple of days (and in the refrigerator after that).

CINNAMON-COCONUT-CHOCOLATE CHIP BANANA BREAD

Cinnamon-Coconut-Chocolate Chip Banana Bread image

This is a riff on a super popular and delicious recipe from the site: Cathy's Banana Bread. This version incorporates other reviewers' suggestions to use a mix of white and brown sugar and to use butter instead of margarine. It also includes a little coconut and cinnamon. The coconut toasts nicely on top, adds great texture, and smells and tastes amazing with the banana and the chocolate.

BANANA FLAPJACKS WITH COCONUT AND WHITE CHOCOLATE

Banana Flapjacks with Coconut and White Chocolate image

Crisp around the edges but chewy in the middle, these flapjacks are tasty and not overly sweet. They're a good way to use up brown bananas but because of the coconut and white chocolate they don't taste overwhelmingly of banana. Use the right oats and they're also gluten-free. They're fairly robust, so make a good addition to lunch boxes and they're a perfect energy boost for outdoor activities.

Provided by Choclette @ Tin and Thyme

Categories     Afternoon Tea     Snack

Time 30m

Number Of Ingredients 8

150 g unsalted butter
1 tbsp golden syrup
50 g white chocolate ((I use Green & Blacks))
2 bananas
60 g light brown sugar ((I use muscovado))
50 g desiccated coconut
300 g rolled oats ((ensure they're gluten-free if you need a gluten-free bake))
1 tsp sesame seeds ((optional))

Steps:

  • Melt the butter in a pan over a low heat along with the syrup, sugar and white chocolate.
  • Mash the bananas in a large bowl.
  • Pour in the butter mixture and give a good stir.
  • Stir in the the coconut, followed by the oats.
  • Press into a 23 cm (9") square silicone mould or lined tin and sprinkle with sesame seeds if desired.
  • Bake for twenty minutes in the middle of a preheated oven at 180℃ (160℃ fan, 350℉, Gas 4).
  • Leave to cool in the tin then cut into sixteen squares.

  • Cream together coconut oil and sugars until light and fluffy: about 5 minutes. Add one egg at a time, waiting to fully incorporate before adding the next. Add in vanilla, pureed strawberries, and bananas: mix until bananas have broken down. Add the flour mixture, chocolate chips, and coconut. Mix until just combined! • In a medium bowl, whisk together the flour, baking soda and salt. Set aside. In a separate large bowl, beat the sugar and butter with a stand or handheld mixer on medium speed until well blended – about 1 minute. Add the eggs one at a time, beating well after each addition. Add the mashed banana, yogurt, and vanilla. Continue beating until blended.
  • Slowly stir in the flour mixture by hand, until *just combined* – do not overmix. Fold in the white chocolate chips and then gently stir in the chopped mangoes. You may sprinkle a few mango pieces and white chocolate chips on top for looks as well.
  • The batter will be very thick, so spoon it into the prepared loaf pan rather than pouring it. Bake for 40 minutes. Remove and sprinkle with shredded coconut. Bake for 15-22 minutes longer or until a wooden pick inserted in center comes out clean. My bread took exactly 62 minutes.
