Steps:
- Preheat the oven to 250 degrees F. Scatter the chocolate into a 9- by 13-inch glass baking dish. Roast the chocolate, stirring and smoothing it out with a rubber spatula every 5 to 10 minutes, until it is the color of peanut butter, 30 to 35 minutes. Don't panic if it looks clumpy and crumbly at first; working the chocolate back and forth with a rubber spatula will help it become smooth and creamy. Store at room temperature in a resealable mason jar for up to 2 months.
- To reheat, warm the jar in a pot of simmering water.

Steps:
- Spray a baking sheet with vegetable spray. Dry the apples well and insert a lollipop stick into the stem end of each apple.
- Combine the caramels and 1/4 cup water in a medium saucepan. Cook over medium heat, stirring constantly with a wooden spoon or spatula, until the caramel is melted and smooth. Holding them by the lollipop sticks, dip the apples in the caramel and roll them around to coat evenly. Lightly shake off excess caramel and set the apples stick-end up on the prepared baking sheet. Refrigerate until the caramel is set, about 15 minutes.
- Place the white chocolate chips in a metal or glass bowl set over a double boiler and heat, stirring occasionally, until melted and smooth. Dip each caramel apple in the white chocolate, rolling it around to coat the caramel with the white chocolate. Lightly shake off excess and set the apple stick-end up on the wax paper. Refrigerate for another 30 minutes to set the white chocolate.
- Melt the semisweet chocolate chips in second bowl set over a double boiler. Spoon the melted chocolate into a piping or plastic bag fitted with a small round tip. Remove the apples from the refrigerator and pipe ghost or skeleton faces onto the apples. Refrigerate for 15 minutes, or until set. Keep chilled until ready to serve.

- Heat a medium saucepan over medium-high heat. Add the brown sugar, corn syrup, and water. Cook the mixture until it turns golden brown and reaches 235°F (soft ball stage) on a candy thermometer. This should take about 10 minutes. Note: Don’t stir the mixture. Just swirl the pan to ensure it doesn’t burn.
- Next, add the butter and heavy cream slowly. It will bubble and may splatter. Stand back! Note: Again, no need to stir. Just swirl the pan to mix.
- The temperature of the caramel will drop when the cream is added. Cook the caramel again on medium-high heat until it reaches the soft-ball stage again (235°F). This should take another 5-7 minutes. Again, don’t stir the caramel, just swirl the pan as needed.

- Melt the caramels in a double boiler (I don’t have a double boiler but use a metal bowl inside of a stock pot and it works great).
- Add about 2 T of the sweetened condensed milk to the melting caramels. Stir constantly until they are melted. Evaluate the consistency of the caramel if it’s too thick add more condensed milk. Don’t get it too thin or the caramel will just fall off of the apples.
- Dip the apples in caramel and let them cool on a baking sheet (you’ll need a silpat so they don’t stick).

- Remove stems from apples and push sticks into center of each apple. Leave enough stick exposed so you can easily hold the apple. Melt caramels according to package directions. Place a large sheet of parchment paper sprayed with cooking spray onto the counter next to the melted caramel. Take one apple at a time and dip and spoon caramel starting at the bottom of the apples, spooning 3/4 way up the apple. Remove any excess caramel and carefully place onto parchment paper to set up. Continue dipping with remaining apples. Cut bottom 1/4 of the marshmallows and place sticky side onto tops of the apples on both sides of the stick to form the Mickey Ears. I stuck a toothpick into each marshmallow/apple so they were secure when adding the white chocolate. I used a small hammer to tap the toothpick into the marshmallow FYI.
- Once caramel has set up mostly, usually takes a good 15-20 minutes, melt the white chocolate in a double boiler. Boil water in a large saucepan, reduce heat to low and place a heat proof bowl over the hot water in saucepan. Add white melting wafers to bowl and stir until melted and smooth. Get a clean pice of parchment paper ready on the counter, to place dipped apples on. Place sugar and cinnamon into a shallow bowl, stirring to combine. Take the caramel apples and spoon the melted chocolate over entire surface of the apple including the marshmallow ears. Once covered, remove any excess chocolate before transferring to parchment paper. While chocolate is still wet, sprinkle top half with cinnamon sugar. Spinning apple to get the entire top half sprinkled. Quickly place apple into a bowl of graham cracker crumbs. Use a spoon to press crumbs up the bottom half of the apple. Continue to spin until crumbs are staying in place. Place onto clean sheet of parchment paper to let set up. When
