Caramel Sauce:
7 eggs, beaten
2 1/2 cups half and half
1/4 cup sugar
1 cup of white chocolate chips
1 tlb. vanilla extract
1/2 french loaf, broken into small pieces
1 stick butter, salted
1/4 cup light brown sugar, packed
1/2 cup pure maple syrup (I used my home canned pear almond syrup)
1 tsp. vanilla extract
1/2 cup heavy cream

Steps:

  • Preheat oven to 350 degrees. Beat the eggs and add the half and half. Add sugar and vanilla, beat until smooth. Add bread and white chocolate chips. Stir. Pour into greased baking dish. Make sure the dish you are using will fit into a larger dish. You'll need to bake the bread pudding in a water bath. Sit the dish with the pudding into the larger pan. Place both pans onto the top rack of the oven. Pour warm water into the larger dish until it reaches approximately 3/4 the way up the smaller pudding dish. Bake at 350 degrees for one hour. Allow to sit in the oven for 10 additional minutes after turning the heat off. Carefully remove the dishes from the oven. Remove the pudding from the water bath and discard the water. Add the caramel sauce to the pudding or serve it one the side. For the caramel sauce: Melt the butter in a sauce pan. Add the brown sugar, maple syrup and vanilla. Stir constantly until the sugar has melted. Continue cooking over medium heat for five minutes, stirring constantly. Add the cream. Cook for an additional 3 minutes, stirring constantly. This recipe was shared with me by a DF when she brought it to one of our Lady Elks Pot Luck Dinners when I lived in Nevada City, CA. All though there is another recipe for a bread pudding with Jack Daniel's sauce it is NOT the same, and this is the recipe my family requests on many of our get togethers. This makes 2 large pans of pudding, and can be halved, or freeze one for later.

15 cups sourdough French bread, cubed and toasted
5 cups milk
8 eggs
12 tablespoons salted butter
2 cups sugar
1 teaspoon nutmeg (I use a bit more of both the nutmeg and cinnamon)
1 teaspoon cinnamon
1 teaspoon vanilla
2 pinches salt
1 cup raisins
1 lb brown sugar
1 cup salted butter
1 cup heavy whipping cream
1 pinch salt
1/2 cup Jack Daniels Whiskey (I use more because I like to be able to REALLY taste this)

Steps:

  • Pudding:.
  • Lightly grease deep dish casserole pans.
  • Fill with toasted bread cubes and raisins mixed together.
  • Heat milk and butter in pan over medium heat.
  • Whisk sugar, eggs, nutmeg, cinnamon, vanilla, and salt. Add 1 cup of the heated milk mixture to this, then mix this into the hot milk mixture. Pour over the bread and raisins. Put your casserole dish (I use two 9x13 inch casseroles and bake one at a time) with the pudding into a deeper pan that has at least an inch of water in it, and cover with foil.
  • Bake at 350°F for one hour. Remove foil and place back in oven for an additional 15 minutes, or until nicely browned. Pour cream sauce over the pudding and keep warm in oven until time to serve.
  • Cream Sauce (I make this while the pudding is cooking):.
  • Combine all ingredients into a large saucepan and heat to boiling. Turn heat down to low and allow to reduce to consistency of your liking.
  • I double the sauce recipe so I can have some to pour over the pudding and ice cream when I serve it.
  • Serve hot with either ice cream and extra sauce or with heavy cream drizzled over it.

1 lb stale bread (loaf)
1 1/3 cups milk
3 eggs
4 ounces evaporated milk
1/4 cup butter
2/3 cup sugar
2 teaspoons vanilla
nutmeg
1/2 teaspoon cinnamon
1/3 cup butter (cut into pieces)
1/4 cup sugar
1/4 cup water
1/4 cup butter
1 ounce Jack Daniels Black Label Mix
sugar
water

Steps:

  • Cube bread.
  • Set aside in a large mixing bowl.
  • Combine all ingredients except butter.
  • Mix well and pour over bread.
  • Soak bread in milk mixture for 15 minutes.
  • Pour into a 13x9 buttered pan.
  • Top bread mixture, with cut up butter.
  • Bake at 325 for 60-90 minutes or until pudding mixture has risen 1 inch.
  • Serve warm Sauce over bread pudding.
  • Sauce
  • combine ingredients and add sugar and water until dissolved.
  • Add butter, and simmer until melted.
  • Cook over high heat of 2 minutes.
  • Add Jack Daniels, and simmer for 3-5 minutes.

1 pound French bread, cut into 1-inch cubes
1 quart heavy cream
2 cups white sugar
3 eggs, lightly beaten
2 tablespoons vanilla extract
1 (12 ounce) package white chocolate chips
1 (12 ounce) package white chocolate chips
1 cup heavy cream

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Place French bread in a large bowl. Pour heavy cream over bread and let soak. Add sugar, eggs, and vanilla extract; mix all together with your hands. Add white chocolate chips and mix thoroughly.
  • Bake in the preheated oven until bubbly, 40 to 45 minutes.
  • While bread pudding is baking, prepare the sauce. Combine white chocolate chips and heavy cream in a small saucepan over low heat. Cook, stirring constantly, until melted. Drizzle a small amount of sauce over each serving.

9 ounces bakers white chocolate
3 loaves French bread, 10 inch each
4 whole eggs
6 egg yolks
4 cups heavy whipping cream
1 cup milk
1 cup sugar

Steps:

  • Preheat oven to 300.
  • Slice french bread into half inch round croutons and set aside.
  • In a large mixing bowl, combine eggs and egg yolks.
  • Whipe until well blended.
  • In a large saucepan, combine whipping cream, milk, and sugar.
  • Bring mixture to a low simmer, then add white chocolate.
  • Whisk until chocolate is completely melted.
  • Remove from heat and stir in whipped eggs.
  • Blend thoroughly to keep eggs from scrambling.
  • In a buttered 9 x 13 baking dish, place bread slices in 2-3 layers.
  • Pour half the the cream mixture over the bread and allow it to soak up most of the mixture before adding the rest.
  • Press the bread gently, allowing the cream mix to be evenly absorbed.
  • Cover the dish and let it soak at last 5 hours prior to baking.
  • Bake covered for 1 hour and then remove cover and bake another 45 minutes until top has browned.
  • Note: This is best if chilled overnight, then cut into squares and reheated in individual portions in the microwave.
  • Serve with caramel sauce.
