Orange White Chocolate Bark with Cranberries & Apricots Recipe - (4.2/5) image

1 (12-ounce) package white chocolate chips
1/4 teaspoon McCormick® Pure Orange Extract
1/4 cup almonds, sliced
1/4 cup dried apricots, chopped
1/4 cup dried cranberries

Steps:

  • Microwave chocolate chips in large microwavable bowl on HIGH for 1 1/2 to 2 minutes or until almost melted, stirring after 1 minute. Stir until chocolate is completely melted and mixture is smooth. Stir in orange extract. Spread on large foil-lined baking sheet to 1/4 inch thickness. Sprinkle with almonds, apricots and cranberries, pressing lightly into chocolate with spatula. Refrigerate about 10 minutes or until firm. Break into irregular pieces to serve. Store in tightly covered container at cool room temperature or in refrigerator up to 5 days.

1 3/4 cups Gold Medal™ all-purpose flour
1/4 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/3 cup firm butter or margarine
1/3 cup finely chopped dried apricots
1/3 cup white vanilla baking chips
1 egg
About 1/3 cup half-and-half
1/3 cup white vanilla baking chips, melted

Steps:

  • Heat oven to 400°F. Lightly grease cookie sheet with shortening or cooking spray. In large bowl, mix flour, sugar, baking powder and salt. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture looks like fine crumbs.
  • Reserve 2 tablespoons apricots for topping. Stir remaining apricots and 1/3 cup vanilla baking chips into crumbly mixture. Stir in egg and just enough half-and-half so dough leaves side of bowl and forms a ball.
  • On lightly floured surface, knead dough lightly 10 times. Pat or roll into 8-inch round on cookie sheet. Cut into 8 wedges, but do not separate.
  • Bake 14 to 16 minutes or until golden brown. Immediately remove from cookie sheet; carefully separate wedges.
  • Place melted baking chips in small resealable food-storage plastic bag; seal bag. Cut off small corner of bag; pipe small amount of melted chips over scones. Sprinkle with reserved 2 tablespoons apricots. Pipe remaining melted chips over scones. Serve warm or cool.

6 ounces cream cheese, softened
2 eggs

2/3 cup whipping cream
1/2 cup sliced almonds

Steps:

  • Heat oven to 375°F
  • In large bowl, stir cookie base ingredients until soft dough forms.
  • Spread dough in bottom of ungreased 13x9-inch pan.
  • Bake 10 to 15 minutes or until set.
  • Cool 10 minutes.
  • Meanwhile, in large bowl, beat almond paste and sugar with electric mixer on low speed until crumbly but blended.
  • Add apricots; beat on low speed just until combined.
  • Add cream cheese, 2 eggs and the lemon juice; beat on medium speed until well blended.
  • Pour over warm cookie base.
  • Bake 20 to 25 minutes or until set.
  • Cool 30 minutes.
  • Place baking chips in small bowl.
  • In 1-quart saucepan, heat whipping cream just to boiling over low heat, stirring occasionally; pour over baking chips.
  • Let stand 1 minute.
  • Stir until chips are melted and mixture is smooth.
  • Pour and spread over filling.

  • Slice the oranges into thin rounds. Try to get them as thin as you can while still staying intact. Close to 1/8-inch is ideal. Discard the ends of the oranges.
  • Combine the granulated sugar and water in a medium saucepan and stir until the sugar is moistened. Put the pan over medium heat, and stir occasionally while the sugar dissolves. Bring the sugar mixture to a low boil, and once you’re sure all of the sugar is dissolved, turn the heat to medium-low and add the orange slices and stir them in.
  • Cut a circle of parchment paper the size of the top of the saucepan, and press it gently down on top of the oranges. It might curl up at first, but as it gets wet it will lay down flat. This will help keep the oranges that float to the top moist.
  • Simmer the oranges, stirring them every 20-30 minutes, for about 90 minutes total. At the end they should be very soft and mostly translucent if you hold them up to the light. Use a slotted spoon to remove them from the syrup, and lay them out on a wire rack to cool and dry. (If you’re making more than you need for the bars, keep the orange syrup and store the extra candied orange slices in syrup in the refrigerator.)
