Steps:
- Pre heat oven 180C. Cream both sugars and butter together until fluffy.
- Add the egg to the creamed butter and sugars. And mix
- Sieve the flour and add the vanilla essence, chocolate chips and mix together until combined
- Roll into balls and place on a non greased proof paper on a baking tray. Bake for 9 minutes so they are still gooey and delicious. Cool on a wire rack

- Preheat oven to 375°F. Microwave 1 cup of the chocolate in microwavable bowl on HIGH 2 minutes or until chocolate is almost melted. Stir until chocolate is completely melted; set aside. Mix flour, baking soda and salt until well blended; set aside.
- Beat butter and sugar in large bowl with electric mixer on medium speed until light and fluffy. Add egg and vanilla; beat until well blended. Stir in melted chocolate. Gradually add flour mixture, beating until well blended. Stir in remaining chopped chocolate. Drop heaping tablespoonfuls of dough, 2 inches apart, onto ungreased baking sheets.
- Bake 11 to 13 minutes or just until golden brown. Cool on baking sheets 1 minute. Remove to wire racks; cool completely.

- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- In a large bowl, cream together the butter, brown sugar and white sugar until light and fluffy. Add the eggs one at a time, beating well with each addition. Combine the cocoa, flour, and baking soda, gradually stir into the creamed mixture. Finally, fold in white chocolate chips. Drop by rounded spoonfuls onto the prepared cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven, until puffy but still soft. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
