WHITE BEAN, PARSLEY & GARLIC MASH
Canned beans and chickpeas are perfect for mashing when you need a speedy side dish

- Heat the olive oil in a saucepan and tip in the shallots (or onion). Cook gently for 5 mins, then add the garlic cloves and cook for another 2 mins until soft.
- Tip the cannellini beans into the pan and mash roughly, adding a little stock or water to loosen. Stir in the parsley with plenty of seasoning. Great with roast white fish, spicy chorizo and griddled scallops
WHITE BEANS WITH GARLIC, LEMON & PARMESAN
Steps:
- Spread the beans on a baking sheet. Rinse the beans well, put them in a large pot, cover by 3 to 4 inches of water, add the salt, onion, and rosemary, and bring to a boil. Reduce the heat to a simmer, cover and cook until the beans are very tender but not falling apart, 45 minutes to 1-1/2 hours, longer if necessary. Start checking early because beans cook at different rates; if the water level gets low, add more. When the beans are cooked, let them cool in their liquid for about 15 min. and then drain. Transfer them to a large bowl and keep them warm. (If using canned beans, rinse and drain them well.)
- Meanwhile, in a small saucepan or skillet, combine the olive oil, garlic, and rosemary. Heat gently until the rosemary starts to sizzle lightly, remove the pan from the heat, and leave to steep for about 20 min. Discard the rosemary.
- Take the garlic cloves from the oil (reserve the oil) and put them in a food processor, along with the anchovies, grated cheese, salt, pepper, zest, and lemon juice. Process to a fairly smooth mixture. Taste for seasoning; the dressing should be highly seasoned.
- Toss the dressing with the warm beans, using a rubber spatula to gently fold so the beans get well coated but not smashed. Let the beans sit for a few minutes and then toss a few more times. It may seem like too much liquid at first, but the beans will gradually absorb it all. Fold in the reserved infused oil, the tomatoes, and the parsley. Taste for seasoning and serve.

WHITE BEANS WITH GARLIC

- If time allows, soak dried beans for several hours or overnight, then drain. (If not, proceed, but expect cooking time to be somewhat longer.) Place the drained beans in a large pot with water to cover. Turn the heat to high and bring to a boil. Add the herb and partially cover; adjust the heat so the mixture simmers steadily.
- Cook, stirring occasionally, about an hour. Add about 1/2 tsp salt and some pepper. Continue to cook, adding water if necessary, until the beans are quite soft, another 15 to 30 minutes or so.
- If the mixture is very soupy, raise the heat a bit and cook off the remaining liquid. When the beans are moist but not soupy, add the garlic and cook, stirring occasionally, for another 5 minutes or so. Add the olive oil, taste and adjust the seasoning, and serve or refrigerate for up to 3 days before reheating. (Or add water to cover and freeze for up to a month.).
WHITE BEANS RECIPE WITH TOMATO AND GARLIC

- Heat olive oil in a medium skillet over medium heat.
- Add the sage and sliced garlic. Shake the pan so the garlic doesn't stick, but don't stir it because the garlic might clump.
- Reduce the heat to medium-low and cook 3-4 minutes or until the garlic turns very light gold and the sage darkens a bit.
- Add the tomatoes and salt. Simmer, stirring often, until the tomatoes are shiny and their juices have evaporated; 8-10 minutes.
- Add the pepper, sugar and chicken broth, stirring often, and bring the broth to a boil.
- Reduce heat to low, add the beans, simmer (stirring often) until the liquid has evaporated, 18-20 minutes.
- Remove the beans/tomatoes from the heat and stir in the parsley. Season, if needed, with more salt & pepper.
- Serve with extra olive oil for drizzling and a sprinkle of crispy bacon (optional).
- Enjoy!

WHITE BEANS WITH ROSEMARY AND GARLIC
Steps:
- Soak overnight in 4 cups water: 1 cup dried white beans (cannellini, white runner, Great Northern, navy, and so on).
- Drain and transfer to a heavy pot. Add water to cover by 2 inches. Bring to a boil. Lower the heat and skim off any foam. Simmer gently for 2 hours or so, until the beans are tender. Add more water if necessary during the cooking. Season to taste with: Salt.
- In a heavy-bottomed saucepan or skillet, warm over low heat: 1/4 cup extra-virgin olive oil.
- Add: 4 garlic cloves, coarsely chopped, 1 teaspoon coarsely chopped rosemary leaves.
- Cook just until the garlic is soft, about 2 minutes. Stir into the beans, taste for salt, and adjust as needed. Let the dish sit for a few minutes before serving to allow the flavors to marry.
- Variation
- Leaves of either sage or winter or summer savory are delicious substitutes for rosemary.
WHITE BEANS WITH GARLIC & PARSLEY
Steps:
- Soak beans overnight as follows: Put the amount of beans (2 cups)in a pot and cover with cold water by at least 3 inches. In the morning, drain them, rinse them in cold water, cover by at least 3 inches. Put a lid on the pot and turn on the heat to medium. When the water comes to a boil adjust the heat so it simmers steadily, but gently. Cook beans until tender but not mushy, 45 minutes to 1 hour ( or more if needed). Add salt only when the beans are nearly tender so the skins do not crack. Keep the beans in the cooking liquid until ready to use. Put the oil and chopped garlic in a soup pot. Cook garlic stirring until is becomes coloured a very pale gold. Add the drained beans, a pinch of salt and pepper. Cover and simmer gently for 5-6 minutes. Take about 1/2 cup of beans from the pot and purée them through a food mill. Put them back into the pot with the rest of the beans along with the broth. Correct seasoning and simmer for another 5-6 minutes. Swirl in parsley and turn off the heat. If using as a soup, spoon over thick slcies of toasted bread. It is a very thick soup by North American standards! If using as a bruschette, let cool and serve over toasted bread or crackers. Also delicious as a side with a meat course.

- Preheat broiler. Heat 2 Tbsp. oil in a large, heavy, ovenproof skillet over medium heat.
