CREAMY WHITE BEAN AND FENNEL CASSEROLE



Creamy White Bean and Fennel Casserole image

This one-pan recipe melds roasted fennel, creamy white beans and salty Parmesan, and tops it with crunchy lemon-zested panko. Fennel is often dismissed because of its perceived licorice notes, but the anise flavor is significantly muted after the vegetable is cooked. Tuck fresh, sliced sausages into the mixture before baking to imitate a simplified cassoulet, turn it into a side dish by pairing it with meat or let the dish live as a main, served with a simple green salad and some rustic bread to sop up the sauce. Reserve the fresh fennel fronds for garnish, which add concentrated fennel flavor and a pop of green.

6 tablespoons olive oil
2 large fennel bulbs (about 2 pounds)
Kosher salt and black pepper
2 garlic cloves, minced
2 (14-ounce) cans white beans, such as cannellini, great Northern or navy
1/2 cup heavy cream
1 teaspoon fresh lemon zest plus 2 tablespoons juice (from 1 lemon)
1/2 cup panko
1/2 packed cup finely grated Parmesan (about 1 ounce)

Steps:

  • Heat the oven to 425 degrees. Trim the fennel. Cut it in half lengthwise and slice it crosswise, about 1/4-inch thick (reserve about 1/4 cup roughly chopped fennel fronds). Heat 2 tablespoons oil in a large cast-iron skillet over medium. Add the sliced fennel, season with salt and pepper and cook, stirring occasionally, until softened but still retaining a little bite, about 12 minutes. Stir in the garlic and cook until fragrant, 1 to 2 minutes.
  • Meanwhile, pour 1 can white beans and its liquid into a blender. Add the heavy cream, lemon juice and 2 tablespoons olive oil and purée until smooth. Drain and rinse the remaining can of beans and transfer it to the skillet along with the bean purée. Season generously with salt and pepper.
  • Mix the panko with the remaining 2 tablespoons olive oil in a small bowl. Add the Parmesan, lemon zest and 1/2 teaspoon pepper and toss to coat. Sprinkle evenly over the fennel-white bean mixture.
  • Bake until bubbly and lightly golden on top, about 15 minutes. Broil until topping is browned in spots, 1 to 2 minutes, if desired. Top with reserved fennel fronds and serve.

1 pound hot Italian sausage
1 leek, trimmed, cut in half lengthwise and thinly sliced
1 large shallot, minced
1 fennel bulb, top and bottom trimmed, cut in half, thinly sliced
4 cloves garlic, minced
Kosher salt, to taste
6 cups chicken stock
1 (15 ounce) can diced tomatoes
2 (15 ounce) cans cannellini beans, drained and rinsed
2 tablespoons basil pesto
Fresh minced basil
Fresh minced fennel fronds
Grated Parmesan, for topping

Steps:

  • Add a 5-quart soup pot to the stove over medium heat.
  • If your sausage came in casings, cut it out and add the ground sausage meat to the soup pot.
  • Break up the sausage while it browns. Cook for about 5 minutes or until the majority of the sausage is starting to look brown.
  • Add in the leek, shallot, and fennel. Saute for another 10 minutes or just until the vegetables have started to soften.
  • Add in the garlic and cook for another minute or just until the garlic is fragrant.
  • Pour in the chicken stock and diced tomatoes and stir to combine. Make sure to scrape the bottom of the pan if there was any browning.
  • Add the beans and let the soup simmer over low heat for about 10-15 minutes or until the soup smells fragrant and the vegetables seem soft.
  • Stir in the pesto to add a bit more flavor to the soup.
  • To serve spoon the soup into a bowl and top with a generous sprinkle of fresh basil, minced fennel fronds, and Parmesan cheese.

Fennel grows so well in our garden we tend to use it often. And since we love beans this is something that just came to me. Add whatever smoked sausage you like. I usually use Trietler's garlic sausage. My office is in a strip mall and 2 doors down is a sausage maker who makes THE best sausages. Treitler's Sausages was originally located in Chalmette, LA but Katrina wiped them out. They've relocated up here in Picayune, MS, and their loyal followers make the hour trip up here almost once a week just for sausage. It's that good!

1 lb white beans
7 cups chicken stock
1 large potato, peeled and cubed
1 lb smoked sausage, sliced
2 onions, chopped
3 garlic cloves, minced
1 large fennel bulb, chopped
1/4 cup fennel leaves
1 bay leaf
olive oil
salt and pepper
Tabasco sauce

Steps:

  • Heat a large pot and using enough olive oil to coat the bottom add the onions, garlic and fennal and saute about 10 minutes.
  • Add the beans, stock, and bay leaf.
  • Bring to a boil and then lower to a simmer and cover.
  • Cook until the beans are soft, approximately 1 1/2 hours.
  • Add the potataoes and sausages and Tabasco and cook for 15-20 minutes, or until the potatoes are tender and about ready to fall apart.
  • Season again with salt and pepper and Tabasco.
  • Serve and garnish with either a dab of unsalted butter or fruity, extra virgin olive oil and fennel fronds.

8 cups low-sodium chicken broth
4 carrots, chopped
1 large fennel bulb, chopped, plus 2 tablespoons chopped fennel fronds
1 large onion, chopped
1 cup dried white beans (such as cannellini or navy)
kosher salt and black pepper
1/2 cup ditalini, orzo, or another small pasta
country bread, for serving

Steps:

  • In a 4- to 6-quart slow cooker, combine the chicken, broth, carrots, fennel, onion, beans, 1½ teaspoons salt, and ½ teaspoon pepper. Cover and cook until the beans and vegetables are tender and the chicken is cooked through, on low for 7 to 8 hours or on high for 4 to 5 hours (this will shorten total recipe time). Twenty minutes before serving, transfer the chicken to a medium bowl. If the slow cooker is on the low setting, turn it to high. Add the pasta, cover, and cook until tender, 15 to 18 minutes. Meanwhile, using 2 forks, shred the chicken. When the pasta is cooked, stir the chicken into the soup. Sprinkle with the fennel fronds and serve with the bread.

3 sprigs fresh thyme, plus more for garnish

1 cup dry white wine
2 cloves garlic, minced
1 gallon vegetable stock
6 to 8 cups cooked white beans
Sea salt
White pepper

Steps:

  • Heat a large sauce pot over medium high heat. Add 3 to 4 tablespoons of olive oil. Once oil is hot, add fennel bulb, fresh thyme, and butter. Allow to cook until the fennel begins to turn golden amber brown, about 15 to 20 minutes. Add white wine and garlic. Add vegetable stock and white beans. Reduce heat and allow soup to come to a gentle simmer. Simmer for 30 minutes. Season, to taste, with salt and pepper. Serve by ladling 5 to 6 ounces of soup into a bowl.
