Steps:
- Cook bacon: Place a large stock pot over medium heat and add bacon. Cook until bacon is crisp and cooked through. Use a slotted spoon to remove bacon to a paper towel lined plate, leaving bacon drippings in pan. Set aside.
- Remove bacon - leave fat: You want about 1 tablespoon of bacon drippings in the pot, if you do not have enough fat, add extra virgin olive oil to pan until you have about 1 tablespoon of liquid (just eyeball this).
- Saute vegetables: Increase heat to medium high. Add shallots, carrot, and celery to pot. Cook, stirring frequently until softened, about 3 minutes. Add garlic and crushed red pepper flakes, salt and pepper; cook until aromatic, 30 seconds - 1 minute.
- Deglaze the pan: Add white wine to deglaze pan, scraping up brown bits from the bottom of the pan. Cook until wine is reduced to 2 tablespoon, about 3-4 minutes.
- Add liquid, beans + herbs: Add the chicken stock, beans with their liquid, rosemary sprigs, bay leaf and parmesan rind (if using).
- Boil, then simmer: Increase heat to high and bring soup to a boil. Immediately reduce heat to a gentle simmer. Cover and simmer for 15-18 minutes.
- Add bacon, cream, parsley + parmesan: Use tongs to remove the rosemary sprigs and bay leaf. (I leave in the parmesan rind, but you can remove and discard it.) Add in the bacon, 1/4 cup of cream, chopped parsley leaves and grated parmesan. Taste and adjust for seasoning. Taste the soup, add more cream for a richer taste and texture.
- Optional To Thicken Soup: (You can serve the soup as is for a brothy consistency, or you can thicken the soup with one of the two methods below.) For an ultra creamy, bisque-like texture, puree the entire soup. 1. Use an Immersion blender to blend some of the soup until desired consistency is reached. Or, use a potato masher to mash some of the beans. Blend about 1-2 cups of the soup for a slightly creamy yet rustic texture.2. Stand Mixer: Remove 1-2 cups of the soup to a stand mixer. Puree the soup and then add the mixture back to the pot. , add back in removed beans.
- To serve: Ladle soup into serving bowls. Garnish with more grated parmesan cheese and fresh herbs. Drizzle with a bit of good-quality extra virgin olive oil for a flavorful finish. Serve and enjoy!

Steps:
- Put the dried beans in a large bowl and cover with cold water. Soak the beans overnight in the refrigerator.
- Drain the soaked beans, place them in a large pot and cover with fresh cold water. Put the beans over medium-high heat and bring to a boil. Toss in the bay leaves and garlic. Reduce the heat to medium and simmer for 11/2 hours until tender. Drain the cooked beans and spread them out on a sheet pan to cool slightly.
- Put about 1/2 cup of flour in a shallow platter and season it with salt and pepper; mix with a fork to distribute evenly. Toss the beans in the seasoned flour to coat completely.
- Place a large skillet over medium-high heat and coat with the oil. When the oil is hot, add the pancetta, fry for a couple of minutes to crisp it up. Toss in the sage leaves and fry for about 1 minute. Remove the pancetta and sage to some paper towels; now you have a flavor base. Shake off excess flour from the beans and put them in the pan in a single layer. Fry the beans for a good 10 minutes to form a golden crust on the outside of the beans, tossing to cook both sides.
- Return the pancetta and fried sage to the pan, stir everything together, and serve.

Add herbs, salt, pepper, chicken broth, and beans. Cook on low 4-6 hours, or on high 2-3 hours. Puree about 1/3 of the soup in a blender then return it to the pot, or run an immersion blender in the soup until the desired thickness is achieved.
- Add escarole and pasta and cook another 30-40 minutes on high (if you have been cooking on low up to this point, be sure to turn it up), until pasta is al dente. Stir in parsley at the last minute.

- Rinse beans in a collander and remove any stones. Add beans to a large pot, along with the 6 cups water and salt.
- Bring to boil, then reduce heat to a gentle simmer. Cook until beans are tender to the bite, but not grainy or mushy. This will take at least 1 hour.
- Just before beans are cooked, warm a skillet over medium heat. Add olive oil, red pepper flakes, bay leaf, pancetta, onions, thyme sprigs, garlic and black pepper. Cook and stir until onions are caramelized and the pancetta has rendered its fat and is slightly crispy (8-10 minutes). Stir in butter, turn off heat and allow the mixture to sit until the beans are ready.
- Remove ~1 cup of the cooking liquid from the beans and keep it nearby. Stir the onion mixture into the beans. Continue cooking, over low heat, partially covered, about 30 minutes. Check the beans to see if there is sufficient liquid and add a bit more of the reserved liquid if you think they need more. Cover the pot, allow it to come up to heat again, then turn off the heat and let the beans sit for 30-45 minutes, untouched. The beans should be very soft but still retain their shape, and most of the cooking liquid should get absorbed by this point. If there's still too much liquid (i.e., like soup), simply remove some before serving.

- Heat pancetta (or bacon) in a large stockpot over medium-high heat. Cook until crispy, stirring occasionally. Transfer the bacon to a separate plate, using a slotted spoon, reserving about 3 tablespoons of bacon grease in the stockpot. (Discard any extra grease, or you can substitute olive oil in place of the 3 tablespoons of bacon grease.)
- Add onion and cook for 5 minutes, stirring occasionally, until soft and translucent. Add garlic and cook for 1-2 minutes until fragrant, stirring occasionally.
- Add chicken stock, beans, bay leaf, rosemary and half of the cooked pancetta (or bacon). Stir to combine. Continue cooking the soup until it reaches a simmer. Then reduce heat to medium-low, cover partially, and let the soup simmer for 10-20 minutes so that the flavors will meld.
- Add salt and pepper to taste. (I definitely recommend a generous pinch or two of black pepper, and extra salt if needed, depending on your chicken stock.) Remove the bay leaf and rosemary.
