1-1/2 cups dried great northern beans
1 large onion, chopped
2 garlic cloves, minced
1 tablespoon olive oil
4 cups chicken or vegetable broth
4 cups water
3 medium carrots, sliced
2 medium sweet red peppers, chopped
2 celery ribs, chopped
1/2 cup medium pearl barley
1/2 cup minced fresh parsley, divided
2 bay leaves
1 teaspoon salt
1/2 teaspoon dried thyme
1/2 teaspoon pepper
1 can (28 ounces) diced tomatoes, undrained

Steps:

  • Place beans in a Dutch oven or soup kettle; add enough water to cover beans by 2 in. Bring to a boil; boil for 2 minutes. Remove from heat; cover and let stand 1 hour. Drain and rinse beans, discarding liquid. , In a Dutch oven, heat oil over medium-high heat. Add onion and garlic; cook and stir until tender, 3-5 minutes. Stir in broth, water, beans, carrots, red peppers, celery, barley, 1/4 cup parsley, bay leaves, salt, thyme and pepper. Bring to a boil. Reduce heat; cover and simmer 1 hour or until beans are tender. Add tomatoes; heat through. Discard bay leaves. Sprinkle with remaining 1/4 cup parsley.

WHITE BEANS WITH CELERY



White Beans With Celery image

This dish is inspired by a Greek recipe from Diane Kochilas's "The Glorious Foods of Greece" that calls for giant white beans and about three times as much olive oil. I had regular white beans in my pantry and a bunch of celery left over from a recipe that called for only a couple of stalks (which happens so often). I love the textures here. The celery retains a little crunch, which contrasts nicely with the soft beans.

Number Of Ingredients 8

1/2 pound (about 1 1/8 cups) white beans, rinsed, picked over and soaked for six hours or overnight in 1 quart water
Salt to taste
1/4 cup extra virgin olive oil
4 to 5 cups chopped celery, including the leaves
4 large garlic cloves, minced
1 8-ounce can tomato sauce, or 2 tablespoons tomato paste diluted in 1 cup water
1/4 to 1/2 cup finely chopped parsley (to taste)
Juice of 1 to 2 lemons, to taste

Steps:

  • Drain the beans, and combine in a large saucepan with enough water to cover by 2 inches. Bring to a boil, reduce the heat to low, add salt to taste, cover and simmer until the beans are just tender, about 45 minutes to an hour. Do not let the beans boil hard or they'll fall apart before they're cooked through.
  • Heat 2 tablespoons of the olive oil over medium heat in a large skillet, and add the celery and a generous pinch of salt. Cook, stirring often, until it just begins to soften, about three minutes, and add the garlic. Stir together for a minute, until the garlic is fragrant, and remove from the heat.
  • Preheat the oven to 350 degrees. Drain the beans over a bowl. Place in a large baking dish, preferably earthenware, and toss with the celery and garlic, the remaining olive oil and the tomato sauce or diluted tomato paste. Add enough of the drained broth to cover by an inch, and stir in the remaining olive oil. Cover the dish tightly with foil, and place in the oven. Bake one hour, or until the beans are soft and creamy.
  • Uncover the beans, stir, and add salt and pepper to taste. Add a tablespoon or 2 of lemon juice, or more if desired, and adjust salt and pepper. Serve hot, warm or room temperature, with a little more olive oil drizzled over the top if desired.

1 ham bone with meat
4 quarts water
1 pound dry great Northern beans
2 cups diced fully cooked ham
1 cup diced celery
1 cup diced carrots
1 cup diced onion
2 cloves garlic, minced
4 tablespoons dry sherry
salt and pepper to taste
¼ cup minced fresh parsley

Steps:

  • Combine ham bone and 4 quarts of water in a large stock pot of Dutch oven at least the night before. Bring to a boil, cover, reduce heat and simmer for 10 to 12 hours.
  • In the meantime, place beans in a large pot with water to cover; soak overnight. Drain beans the next day and return to the pot.
  • Remove ham bone from the pot and pick off any edible meat. Strain the stock and measure out 3 quarts for the soup. Remaining stock can be frozen.
  • Pour 3 quarts of stock over the soaked beans. Add ham, celery, carrots, onion, and garlic. Season with salt and pepper. Bring soup to a boil, then reduce heat to a simmer. Cover, tilting the lid to allow steam to escape, and simmer until beans are tender, 1 1/2 to 2 hours. Add sherry in the last 30 minutes of cooking and season with salt and pepper.
  • Ladle soup into bowls and sprinkle with fresh parsley.

1/4 cup basil flavored olive oil, plus more as needed
1 small yellow onion, chopped
1 large clove garlic, chopped
1 (14.5-ounce) can cannellini beans, drained and liquid reserved
Kosher salt and freshly cracked black pepper
6 to 8 celery stalks cut lengthwise into thin strips, about 1/4-inch by 6-inches long

Steps:

  • Heat the oil in a large skillet over medium heat. Add the onions and garlic and cook until very soft, but not brown, about 10 minutes. Add the beans and 1/4 cup reserved liquid from the can and season well with salt and pepper. Raise heat to medium-high and continue cooking until beans begin to break down, about 5 minutes. Cool slightly and transfer the mixture to a food processor and puree, drizzling in more reserved liquid, if needed, until it is the consistency of thick hummus. Taste and adjust seasoning.
  • Transfer to a wide, tall glass and drizzle with additional basil oil before serving.
  • To serve, stand the celery stalks upright in the dip. (Choose a container that's small enough with high sides to allow the celery to stand upright).

GREEK WHITE BEAN SOUP WITH GARLIC & LEMON



Greek White Bean Soup With Garlic & Lemon image

A very easy and nutritious white bean soup, with a nice and thick texture. All made from scratch with few basic ingredients.

250 grams / 8.8 oz cannellini beans (or other small white beans) (soaked in water overnight)
6 tablespoons olive oil (extra virgin)
1/2 onion (minced)
3 garlic cloves (chopped)
1 carrot (cut into very thin slices)
1 stick of celery (finely chopped)
1 lemon zest + juice
kosher salt + freshly ground pepper
OPTIONAL: 500 ml vegetable stock

Steps:

  • Drain the beans from the water they've soaked in overnight.
  • Half fill a cooking pot with water and add the beans. Bring to a boil over high heat. Cook for 3-4 minutes and then drain beans in a strainer.
  • In a medium-sized cooking pot add the olive oil and heat over medium-high heat. Add the onion and garlic and cook until softened and golden in color.
  • Add the beans along with 1.5 liters of water (or 1 liter of water + 500 ml vegetable stock) and bring to a boil. Then reduce heat to medium-low and with the lid on partly open on the side, simmer for about 2 hours or until beans are completely soft and tender (cooking time may depend of the variety and quality of the beans).
  • Add the celery and carrot and season with salt and pepper. Continue simmering, stirring occasionally until the soup gets nice and thick. Then add the lemon juice and zest and cook for 2 minutes more. Remove from heat and serve with freshly ground pepper on top and an extra squeeze of fresh lemon if you like.
  • Using the saute function, add the olive oil and cook the onion and garlic until softened and golden in color.
  • Add the remaining ingredients along with 1,5 liters of water (or 1 liter of water +500 ml vegetable stock) and close the lid. Cook on manual for 20 minutes. Let the pot sit for 5-10 minutes and then turn the valve to venting. Once it releases the steam open the lid. Finish off with the lemon juice + zest.
  • If using a slow cooker, take the time to separately saute the garlic and onion in olive oil until golden using a separate skillet as it will make a huge difference to flavor instead of adding everything in at once. Add the sauteed ingredients in your slow cooker along with the remaining ingredients except for the lemon juice + zest, and 1,5 liters of water (or 1 liter of water +500 ml vegetable stock) and cook either on low for 8 hours or on high for 4 hours. Add the lemon juice and zest and cook for 5 minutes more.
  • Using the saute function, add the olive oil and cook the onion and garlic until softened and golden in color.
  • Add the remaining ingredients along with 1,5 liters of water (or 1 liter of water +500 ml vegetable stock) except for the lemon juice+ zest. Put the lead on and switching on the slow cooker function to normal, cook for 8 hours or for 4 hours on high. Finish with the lemon juice + zest.

16 oz dried navy beans (or other white beans)
1 large yellow onion (chopped into bite size pieces)
2 large carrots (chopped into bite size pieces)
2 stalks celery (chopped into bite size pieces)
2 tbsp olive oil
2 cloves garlic ( crushed)
4 sprigs thyme (tied, or 1/2 tsp dried thyme)
1 tsp salt
1 tsp freshly ground black pepper

Steps:

  • Add dried white beans to large pot, then enough water to cover beans by 1 inch. Allow beans to soak for 8 hours. To save time, feel free to quick soak beans.
  • Heat olive oil in large soup or stock pot over medium-high heat. When oil is hot, add chopped onion, carrot, and celery. Sauté for 6-8 minutes, stirring occasionally.
  • Use a colander to drain and rinse soaked beans. Add beans to the stock pot of sautéed vegetables and stir to incorporate. Add bundle of thyme sprigs (or dried thyme), garlic and fresh water to cover beans by 1 inch. Bring to a boil, cover pot and lower heat to simmer; Cook for 4 hours or until beans are soft, but not mushy (See Note 1). To make this navy beans recipe in a slow cooker or Instant Pot, see Note 2.
  • Season to taste and serve with crusty bread.

6 garlic cloves, unpeeled
3 tablespoons olive oil
1 large onion, chopped
2 stalks celery, chopped (reserve leaves for garnish, if desired)

2 (19 ounce) cans white kidney beans, drained and rinsed (cannellini)
1 bay leaf
1 teaspoon fresh rosemary leaf, chopped

Steps:

  • Heat toaster oven or oven to 425 degrees Fahrenheit.
  • Tightly wrap garlic cloves in aluminum foil.
  • Place on top shelf of oven and roast 30 to 35 minutes or until very tender.
  • Set aside until cool enough to handle.
  • Meanwhile, in 4-quart saucepan, heat oil over medium heat.
  • Add onion, celery, and carrots; saute 8 to 10 minutes or until softened.

  • Salt and pepper to taste.
