- Preheat oven to 375 degrees F (190 degrees C). Line 2 baking sheets with parchment paper.
- Roast almonds on 1 baking sheet in the preheated oven, stirring occasionally, until toasted, about 10 minutes.
- Microwave white chocolate melting wafers and butter in a microwave-safe bowl on medium-high for 1 minute 30 seconds; stir. Microwave until completely melted, 20 to 30 seconds more. Add almond extract and stir until smooth. Stir in toasted almonds.
- Spread chocolate mixture evenly onto the second baking sheet. Chill in the refrigerator until hardened, about 1 hour. Break into small pieces by hand.

- Preheat oven to 350 degrees F (175 degrees C). Spread almonds onto a baking sheet.
- Bake in the preheated oven until almonds start to turn golden brown and become fragrant, 10 to 15 minutes.
- Melt candy melts in a microwave-safe bowl in 15-second intervals, stirring after each melting, 1 to 3 minutes. Add almond extract quickly and stir in the toasted almonds.

- Prepare cake mix as directed. I needed to add 1 cup water, ? cup oil, and 3 eggs. I bake the cake in a 13 x 9 pan for 30 minutes at 350 F (175 C).
- Let the cake cool for about 15 minutes and then crumble it! Yup, break it up into your largest bowl and then go to town. You might have to get your hands a little dirty on this one.
- Scoop all of the frosting into the crumble cake and mix, mix, mix. I used a large wooden spoon and mixed it for a couple of minutes until it was well combined.
- Take small amounts (about a tablespoon or so) and roll into a ball. Repeat multiple times. I lost count, but I think I was able to make 3-4 dozen cake balls.
- Melt your almond bark as per the directions on the package (I only used just over half of the almond bark package). Dip each ball into the melted almond bark and place on a cookie sheet to cool. If you are having trouble dipping the cake balls in the almond bark, you can just spoon some almond bark over the cake balls and coat them manually (though this will take longer).
- I like to store my cake balls in the freezer. I find they keep for quite some time and we like to eat them when they're nice and cold.

- In a medium bowl, combine Rice Krispies, peanut butter, confectioners' sugar and butter or margarine. Mix until very well combined. Firmly compress into balls 1 1/2 inches in diameter. Place on a baking sheet, cover and refrigerate until well chilled, about four hours or overnight.
- Line a baking sheet with waxed paper and set aside. In a double boiler over medium-low heat, melt white chocolate until completely smooth. Remove from heat and pour chocolate into a wide, shallow bowl. Working quickly in small batches, roll chilled balls in chocolate, turning gently with a fork. Transfer to waxed paper. If desired, sprinkle tops of cookies with colored sugar.

- Tempering the chocolate for the bark requires a double boiler. If you don't have a double boiler, improvise one by using a saucepan and a stainless steel bowl: Nestle the bowl into the saucepan, allowing a few inches of space to remain between the bottom of the bowl and the bottom of the saucepan. Keep an extra bowl of a similar size on hand to transfer the chocolate for cooling. Rest the chocolate thermometer on a towel. Line a baking sheet with foil.
- Pour a couple inches of water into the bottom half of the double boiler and heat over medium-low to just below a simmer. Put the chocolate in the top half of the double boiler and set over the hot water. Slowly melt the chocolate, stirring with a heat-resistant rubber spatula. As the chocolate melts, check the temperature periodically to make sure it stays between 82 and 86 degrees F. If it starts to rise above this temperature, quickly transfer the chocolate to the bowl on reserve and stir briskly to reduce heat. Return bowl to double boiler to maintain heat between 82 and 86 degrees F.
- Remove bowl from over the hot water just before all the chocolate melts. Stir vigorously until the chocolate melts completely. Check temperature again. Stir in the oil until evenly blended. Chocolate is now tempered and ready to use. Keep within the 82 to 86 degree F range, returning bowl briefly to the double boiler if necessary.
- Quickly stir the fruit and nuts into the chocolate. Spread chocolate mixture out on the prepared baking sheet so it's about 1/2-inch thick and the fruit and nuts are coated. Set bark aside at room temperature to harden. Break into angled pieces. Store in an airtight container at room temperature.
OREO BALLS
My sister's co-worker brought these to a party and they were quite a hit. I don't know where the recipe came from originally. "Bark" is an artificial chocolate or vanilla candy coating/confectioner's coating used to make a treat called almond bark and can be found at most grocery stores near the chocolate chips. You can use chocolate chips and white chocolate chips if you don't have almond bark, but I have found that almond bark melts better and is easier to work with.

- Using a blender or hand held mixer, mix Oreos and cream cheese together.
- Roll into walnut size balls.
- Chill for an hour.
- Melt approximately 3/4 package of white almond bark.
- Stick a toothpick in an Oreo ball and dip it in the melted white almond bark.
- Allow to harden on wax paper.
- Takes about 15 minute.
- While waiting, melt about 1/4 package of chocolate almond bark.
- When Oreo balls are no longer sticky to the touch, decorate with drizzles of chocolate and white almond bark.
- I just use a sandwich bag with a tiny hole cut in one corner to drizzle the almond bark.
