That very first sip of a Guinness is what inspired this quick and easy dessert. The rich, creamy foam that gathers on the top of a freshly poured draft made me think of vanilla ice cream. At that point, I knew I had to combine the two in a Guinness float. -James Schend, Taste of Home Deputy Editor

Number Of Ingredients 3

1 cup vanilla ice cream, softened if necessary
2 cups Guinness or other stout beer
2 tablespoons chocolate syrup

Steps:

  • Divide ice cream between 2 glasses. Slowly top with beer; drizzle with chocolate syrup. Serve immediately.

How many of my favorite flavors can be packed into a glass? Plenty. Stout, coffee, chocolate, and vanilla make for a grown-up, earthy (but still fun) take on a float. I prefer a deeply chocolatey stout for this, but it's just grand with any deep, dark porter you love-although I'd steer clear of oyster stouts for this. The vanilla seeds in the whipped cream may seem like a minor detail, but they're not: they help to bring all the flavors together, and the small, brown flecks complement the rich color of the stout.

1/2 oz. coffee liqueur (preferably Fair Café)
2 scoops vanilla ice cream
6 oz. stout (I like Young's Double Chocolate)
Unsweetened whipped cream flavored with vanilla seeds
Dark chocolate for grating

Steps:

  • To a tall, soda-fountain-style glass (or an imperial pint glass), add the coffee liqueur and one scoop of the ice cream. Slowly add the stout and the second scoop of ice cream. Top with as much freshly whipped cream and grated dark chocolate as you like.

2 cups cold seltzer
One 12-ounce bottle cold stout or chocolate stout beer
2 cups (1 pint) chocolate ice cream, slightly softened at room temperature

  • Divide the coffee liqueur between 4 tall glasses. Top evenly with the seltzer and then the beer. Stir gently to combine. Carefully add 2 scoops of ice cream to each glass. Serve with a long spoon and straw.

1 tablespoon Stout Syrup, recipe follows, or more to taste
1 scoop vanilla ice cream
1 scoop chocolate ice cream
1 (12-ounce) bottle stout (recommended: Guinness)
1 cup sugar
1 (12-ounce) bottle stout (recommended: Guinness)

Steps:

  • Drizzle syrup into a tall glass. Add a scoop each of vanilla and chocolate ice creams. Top with stout and serve immediately, to adults only!
  • Bring sugar and stout to a boil in a saucepan. Reduce heat and simmer until thick, about 5 minutes. Let cool before using.

1 tablespoon chocolate syrup
2 scoops cherry chocolate chip ice cream (about 1 cup)
1 can stout beer, such as Guinness, chilled
Whipped cream, from da can, as desired
Crushed chocolate candies, such as M and M's, as desired
Jacked Cherries, recipe follows, as desired, optional
1 shot whisky, such as Jack Daniel's, optional
1 cup favorite whisky, such as Jack Daniel's
2 tablespoons brown sugar
1 cup dried cherries

Steps:

  • Swirl the chocolate syrup around in a glass all fancy-like. Place the ice cream on the bottom and pour the cold stout slowly into the glass. Top with whipped cream, crushed chocolate candies and Jacked Cherries if using. Serve with a straw, a long spoon and a shot of whisky, if desired.
  • Bring the whisky and sugar to a gentle simmer in a small saucepan and simmer until the sugar is dissolved. Pour the mixture over the cherries in a mason jar and let it sit in the fridge overnight.
