Whiskey Brownies with Peanut Butter Frosting image

Incredibly decadent and delicious, these whiskey brownies are topped with a peanut butter buttercream that makes these a dessert to die for!

1/2 cup dutch processed cocoa powder
4 oz chocolate chips or chopped chocolate
1 cup butter
2 cups sugar
2 tbl molasses
4 eggs
1/4 cup Skrewball Peanut Butter Whiskey
1 tsp salt
2 tsp vanilla extract
1 cup flour
1 cup butter, softened
3 cups powdered sugar
1/2 cup peanut butter
4 tbl Skrewball Whiskey

Steps:

  • Melt chocolate and butter in a large bowl over a double boiler. Stir until all the chocolate has melted and the mixture is smooth.
  • Add the molasses, sugar and cocoa and stir until fully combined.
  • Add the eggs, whiskey, vanilla, flour, and salt; mix until just combined. Do not overmix.
  • Prepare a 9×13″ glass or ceramic baking dish with cooking spray and pour batter into pan.
  • Bake at 350 degrees for 35 minutes. Do not overbake.
  • Remove from the oven and cool.
  • Make the buttercream by combining butter, powdered sugar, Skrewball whiskey and peanut butter in a stand mixer and whip on high with a paddle attachment for 5 minutes.
  • Frost with buttercream, slice and serve.

These peanut butter brownies have a rich, fudgy brownie base topped with a salty sweet peanut butter frosting, chocolate ganache and a boozy splash of whiskey.

1 cup unsalted butter, cut into 1″ pieces
2 tbsp dutch-processed cocoa powder
8 oz dark chocolate with 63% - 73% cocoa, coarsely chopped
4 large eggs
1 cup dark brown sugar
1 cup granulated sugar
2 tsp vanilla extract
1/4 cup peanut butter whiskey (like Skrewball)
1 cup all purpose flour
1/2 tsp salt
1 cup creamy peanut butter
1/2 cup unsalted butter
2 1/2 cup powdered sugar
3/4 cup peanut butter whiskey
2 tsp vanilla extract
3 cups chocolate, roughly chopped
1/2 cup heavy cream

Steps:

  • Combine the butter and cocoa powder in a bowl over a pot of boiling water (double boiler). Cook until the butter melts.
  • Add the chocolate to the butter mixture and cook, stirring occasionally, until the chocolate has completely melted (about 10 minutes).
  • While the chocolate melts, line a 9″ x 13″ casserole dish with parchment paper leaving enough for a couple inches to hang over each side.
  • In the bowl of a stand mixer, combine the eggs, sugars and vanilla.
  • Whisk on low until combined (about 1-2 minutes). Scrape down the sides.
  • With the stand mixer on medium, pour the chocolate mixture down the side of the bowl. Add the whiskey and whisk until smooth (about 1 minute).
  • Fold in the flour and salt until just combined.
  • Pour the batter into the prepared casserole dish and bake at 350F for 35-40 minutes.
  • In a saucepan over medium heat, combine the peanut butter and butter for the frosting. Cook, stirring occasionally, until melt.
  • Transfer to a bowl and stir in the whiskey and vanilla extract. Add the powdered sugar and beat with a handheld mixer (or stand mixer) until smooth.
  • Spread the frosting over the top of the cooled brownies.
  • In a bowl over a pot of boiling water, combine the chocolate and heavy cream for the ganache.
  • Cook until the ganache can be stirred smooth (about 5 minutes).
  • Spread the ganache over the frosting. Allow to cool until set (about 1 hour in the refrigerator).

1 can (16 ounces) chocolate fudge frosting

Steps:

  • Prepare and bake brownies according to package directions. 2 cups flour
2 cups sugar
½ cup butter
½ cup shortening
1 cup water
¼ cup cocoa
½ cup buttermilk
2 eggs
1 teaspoon baking soda
1 teaspoon vanilla
8 ounces cream cheese (1 package, softened)
½ cup unsalted butter (softened)
4 cups powdered sugar
⅔ cup creamy peanut butter
1 cup chocolate chips (melted)
½ cup Reese's pieces

Steps:

  • In a large mixing bowl, combine the flour and the sugar. Set aside.
  • In a medium saucepan, combine butter, shortening, water, and cocoa. Stir and heat to boiling.
  • Pour boiling mixture over the flour and sugar in the bowl.
  • Add the buttermilk, eggs, baking soda, and vanilla to the mixing bowl. Mix well using a wooden spoon or high speed on an electric mixer.
  • Pour into a well-greased baking sheet (17.5" x 11") pan.
  • Bake at 400 degrees for 15-18 minutes or until brownies test done in center.
  • To make the frosting, mix cream cheese and butter together with a mixer until completely incorporated. Add in powdered sugar and peanut butter and mix well. If it's too thick, thin it out with a little bit of milk. If it's too thin, add some more powdered sugar.
  • Spread frosting on cooled brownies.
  • If desired, drizzle melted chocolate chips over frosting and sprinkle Reese's pieces candies on top.
