Vegan Whipped Cream with Cashews image

This vegan whipped cream recipe can be used on anything you would put whipped cream on!

1 cup cashews
1 cup water, or as needed
1 teaspoon maple syrup, or to taste
½ teaspoon vanilla extract

Steps:

  • Combine cashews and 2 cups of water in a bowl; cover with plastic wrap and refrigerate, 8 hours to overnight.
  • Discard soaking water, rinse cashews, and transfer to a blender. Add just enough fresh water to cover cashews. Blend, adding water as needed to achieve a smooth consistency. Add maple syrup and vanilla; blend to combine.

This yummy cream stands in for dairy whipped cream. Adapted from Chef Tal who wrote The Conscious Cook. The raw cashews have no flavor of their own, thyr'e just a vessel for fat and creaminess.

1 cup thick cashew cream (Cashew Cream(Regular and Thick))
1/4 cup light agave nectar
1/2 teaspoon pure vanilla extract
2/3 cup refined coconut oil, warmed until liquid

Steps:

  • Place the cashew cream in a blender and add agave nectar, vanilla, and 1/4 cup water. Blend until completely combined.
  • With blender running, slowly drizzle the coconut oil in through the hole in the blender lid. Blend until emulsified.
  • Pour into a bowl and chill in the refrigerator, covered, for 2 hours.
  • Stir before serving.

  • Boil the cashews in separate boiling water for about 5 minutes. This eliminates the need to soak overnight and gives the cashews a great creaminess. When finished, rinse and drain the cashews and discard that water.
  • In a blender (preferably a small one so it all gets incorporated), add the boiled and drained cashews, filtered water, maple syrup, vanilla extract, sea salt and tapioca starch and blend until creamy and glossy. This might take several blends on your blender, it took me about 3 to 5 minutes straight of consistent blending and stopping to scrape down the sides to blend. Taste and add more maple syrup if you desire it to be sweeter.
  • Because of the tapioca starch it thickens up pretty quickly, but it might be very hot. Allow to cool in your fridge for at least an hour, preferably three hours or even overnight!
