HOLIDAY EGGNOG CHEESECAKE RECIPE

Steps:
- For Eggnog:
- In a medium bowl, beat egg yolks and sugar until light and creamy.
- In a medium saucepan, heat the milk, vanilla and spices over medium heat until the mixture starts bubbling slightly, whisking constantly. Set aside and cool for a couple of minutes.
- Add a little of the warm milk to the egg yolks and whisk to temper the egg mixture. Add the rest of the milk and blend to combine.
- Return this mixture to the pan, add the brandy and stirring constantly heat for about 1 min. until frothy.
- Cover and reserve at room temperature until ready to use.
- For Crust:
- Heat oven to 325°F.
- Combine all the ingredients in a small bowl.
- Press mixture firmly into the bottom and up the side of a 9-inch springform pan.
- Bake for 10 min., then set aside to cool.
- Cover the bottom of the pan with aluminum foil to prevent water from leaking into the cake during baking.
- For Filling:
- Heat oven to 300°F.
- Fill a baking pan with about 3/4 inch of hot water. Place it on the middle rack of the oven.
- In the bowl of a stand mixer, beat the cream cheese on low speed until light and fluffy.
- Add the sugar, flour and nutmeg, and keep beating, scraping the side of the bowl with a rubber spatula.
- Add 1 cup of the reserved eggnog and blend thoroughly.
- Add eggs, 1 at a time, beating after each just until incorporated.
- Pour cream cheese mixture into the prepared crust, and bake at 300°F in the water bath for 1 hour 15 min.
- Let the cheesecake cool in the oven with the door closed for 30 min.
- Open the oven door and let cool for another 30 min.
- Refrigerate without covering for 5 hours or overnight.
- For Topping:
- Beat the whipping cream, 1/4 cup of the remaining reserved eggnog and powdered sugar in a large bowl until stiff peaks form.
- Fill a piping bag with the whipped cream and use to decorate the top of the cheesecake.

- In a large saucepan, stir together sugar and flour. Gradually stir in the milk. Bring to a boil over medium heat. In a small bowl, whisk egg yolks until smooth. Ladle a small amount of the hot milk into the yolks and quickly whisk in. Pour the tempered yolk mixture back into the hot milk. Cook, stirring constantly, until mixture comes to a boil. Remove from heat and allow to cool.
- In a medium glass or metal bowl, beat egg whites until foamy. Gradually add 4 teaspoons sugar, continuing to beat until stiff peaks form. fold whites into eggnog and refrigerate until chilled. Serve garnished with a dollop of whipped cream and a dash of nutmeg.

This creamy variation of homemade eggnog will have even your self-professed 'non-noggers' asking for seconds. The eggs in this recipe are cooked. Alcohol is not included but can be added to your preference!

- Cream egg yolks and sugar in a large bowl with an electric mixer until light and fluffy. Set aside.
- Combine milk, whipping cream, and nutmeg in a large saucepan. Cook over medium heat until mixture just begins to simmer with 1 to 2 bubbles every 2 to 3 seconds, about 3 minutes. Remove from the heat.
- Add a very small amount of the hot milk mixture into the egg yolk mixture while constantly whisking the eggs. Continue adding small amounts of the milk mixture, whisking until all has been added; transfer eggnog back into the saucepan. Continue to cook over medium heat, whisking constantly, until liquid reaches 160 degrees F (70 degrees C). Pour eggnog into a large pitcher, cover, and refrigerate 6 hours to overnight.
- Blend cooled eggnog with an immersion blender until no lumps remain, about 1 minute. Ladle into 7 cups and top each with a dollop of whipped cream and a sprinkle of cinnamon.

Steps:
- Beat together egg yolks and sugar until thick and light lemon colored. Slowly beat in vanilla and alcohol, if using. Beat cream to soft peaks. Add salt to egg whites and beat until almost stiff, or until firm-soft peaks. In large container, fold whipped cream into yolk mixture, and then fold in beaten egg whites. Chill one hour. Stir in 3-6 cups of milk to thin nog to desired consistency. Transfer to serving bowl and sprinkle top with grated nutmeg. Serve with cognac or whiskey on the side if not already added to the mixture.
