1 cup uncooked wheat berries, rinsed
2 celery ribs, finely chopped
1 medium tart apple, diced
4 green onions, sliced
1 cup dried cranberries
1 cup chopped pecans
DRESSING:
3 tablespoons walnut oil
2 tablespoons cider vinegar
1 tablespoon minced fresh sage or 1 teaspoon rubbed sage
2 teaspoons minced fresh thyme or 3/4 teaspoon dried thyme
2 teaspoons Worcestershire sauce
1 teaspoon Dijon mustard
3/4 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Cook wheat berries according to package directions; drain and cool. Meanwhile, combine the next 5 ingredients; add wheat berries. Whisk together dressing ingredients. Pour over salad; toss to coat. Serve at room temperature or chilled.

1 cup raw soft wheat berries
3/4 cup julienned carrots
3/4 cup shredded red cabbage
3/4 cup finely chopped celery
1/2 cup sliced green onions
1/3 cup chopped water chestnuts
For the vinaigrette:
3 tablespoons extra virgin olive oil
2 tablespoons toasted sesame oil
2 tablespoons hoisin sauce
Homemade Hoisin Sauce ((click for recipe))
2 tablespoons soy sauce
2 tablespoons rice vinegar
2 teaspoons honey
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

Steps:

  • To prepare the wheat berries, let them soak overnight. Then drain and rinse. Bring 4 cups of water to boil in a small pot. Add the salt and the wheat berries. Reduce the heat to a simmer and cook until the wheat berries are soft but still have some "bite." The time will vary depending on the age of your wheat berries and whether you fermented them (see below) but plan on 20-30 minutes. Drain. Set aside and let cool a little.See NOTE about fermentation.
  • Combine all the vinaigrette ingredients in a small bowl and whisk together. Place all the vegetables and cooked wheat berries in a large mixing bowl (the wheat berries can be warm but not hot). Pour the vinaigrette over the salad and stir to combine. Refrigerate for at least 2 hours before serving or overnight. Can be served cold but we like it best at room temperature.

1 ½ cups whole wheat berries
1 (8 ounce) package cream cheese, softened
1 (15.25 ounce) can crushed pineapple in juice, drained
2 tablespoons lemon juice
1 (3.4 ounce) package instant vanilla pudding mix
1 (8 ounce) tub frozen whipped topping, thawed

Steps:

  • Soak wheat berries in a bowl of water for at least 5 hours or overnight. Drain and place in a slow cooker with enough water to cover by one inch. Cover, and cook on Low setting for 5 to 6 hours, until tender. Add more water if needed. When tender, drain, and rinse under cold water to chill.
  • In a large bowl, stir together the cream cheese, pineapple and lemon juice. Stir in the dry pudding mix until smooth. Stir in the wheat berries until evenly coated. Fold in whipped topping just before serving. Refrigerate any leftovers.

Wheatberries have a delicious nutty flavor. Look for ones labeled "soft," which will cook more quickly than the hard variety.

1 cup soft wheatberries
6 cups water (or vegetable or chicken stock) with 1/2 tsp. salt
1 bay leaf
1/2 cup chopped artichoke hearts
1/2 cup quartered cherry tomatoes
1/4 cup diced roasted red bell pepper
2 Tbs. capers, drained and chopped
3 Tbs. sliced scallion (white and green parts)
1/4 cup sliced almonds, toasted
2 Tbs. chopped fresh basil or cilantro
1/2 to 1 tsp. finely minced garlic
2 Tbs. fresh lime juice
1 Tbs. white-wine vinegar
1/4 cup fruity olive oil
Salt and freshly ground pepper to taste
Young greens such as arugula, red mustard, cress, mizuna, or a mix

Steps:

  • In a heavy saucepan with a lid, combine the wheatberries, water or stock, salt, and bay leaf. Bring to a boil and then simmer partially covered until the wheatberries are pleasantly chewy, which may take anywhere from 50 to 90 minutes. Remove the pan from the heat, discard the bay leaf, and let the berries cool in the liquid. When cool, drain off all the liquid and put the berries into a large mixing bowl. Add the artichoke hearts, tomatoes, roasted pepper, capers, scallion, almonds, and basil or cilantro.
  • Whisk together the garlic, lime juice, vinegar, olive oil, salt, and pepper; toss with the salad. Arrange the greens on chilled plates and top with the salad.

1 cup uncooked wheat berry
2 1/2 cup water
1 tsp salt
1/2 cup Mint leaves (packed)
1/2 cup Cilantro (packed)
1 clove of garlic
1 shallot
1/2 cup extra virgin olive oil
1/2 cup lemon juice
4 tbsp maple syrup
1 tbsp Dijon mustard
1 tsp salt
1/2 tsp black peppercorn
2 cups chopped cucumber
2 cups chopped apple
1 cup chopped onion
2 cup packed kale (chopped)
1/4 cup sliced almonds
1/2 cup dried cranberries

Steps:

  • First of all, wash the wheat berries and drain all the water.
  • Now cook them according to the package instruction.
  • I have cooked them in my Instant Pot. Take all the wheat berries in the inner pot of the instant pot, add water and salt. Stir it.
  • Now close the lid, vent valve on sealing position.
  • Press the pressure button and set the timer for 25 minutes under high pressure. Once cooking time is done, let the pressure release naturally.
  • Open the lid and drain the remaining water. And keep the cooked wheat berries aside.
  • In a food processor, combine all of the ingredients and blend until smooth. Taste, and add more salt and pepper if necessary. Keep it aside.
  • Note - We are going to use only half of the dressing. You can store the remaining dressing in the mason jar or container in the fridge for up to 2 weeks.
  • Take cooked wheat berries, cucumber, kale, onion, kale, almonds, cranberries, apple in a big mixing bowl.
  • Add half of the dressing (or as much as you like). Mix all the ingredients well.
  • Place the salad bowl in the fridge for at least 30 minutes. Taste it. Add salt, pepper, or more dressing if required.
  • Serve wheat berry salad cold. Enjoy! I hope you love it as much as we do.

2 tablespoons Dijon mustard
2 tablespoons honey
4 teaspoons coarse salt
1/4 teaspoon freshly ground pepper
1/2 cup extra-virgin olive oil
1 small fennel bulb, cut into 1/4-inch dice
4 medium cucumbers, peeled, seeded, and cut into 1/4-inch dice
2 celery stalks, cut into 1/4-inch dice
6 scallions, thinly sliced (about 1 cup)
1/3 cup chopped fresh flat-leaf parsley

Steps:

  • Cover wheat berries with cold water by 2 inches in a large saucepan. Cover; bring to a boil. Uncover; reduce heat, and simmer until tender, about 40 minutes. Drain; transfer to a serving bowl.
  • Whisk together lemon juice, mustard, honey, salt, and pepper. Pour in oil in a slow, steady stream, whisking until emulsified. Drizzle over wheat berries; toss.
  • Add fennel, cucumbers, celery, scallions, and parsley; toss. Cover; refrigerate 8 hours. Bring to room temperature.

1 cup finely diced red onion (1 onion)

Steps:

  • Place the wheatberries and 3 cups of boiling salted water in a saucepan and cook, uncovered, over low heat for approximately 45 minutes, or until they are soft. Drain.
  • Saute the red onion in 2 tablespoons of olive oil over medium-low heat until translucent, approximately 5 minutes. Turn off the heat and add the remaining 4 tablespoons (1/4 cup) of olive oil and the balsamic vinegar.
  • In a large bowl, combine the warm wheatberries, sauteed onions, scallions, red bell pepper, carrot, 1/2 teaspoon salt, and the pepper. Allow the salad to sit for at least 30 minutes for the wheatberries to absorb the sauce. Season, to taste, and serve at room temperature.
