Number Of Ingredients 10

1 cup all purpose flour
1 cup wheat germ
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon kosher salt
3 medium sized very ripe bananas, mashed, plus 1 banana sliced approx. 3/4 inch thick for topping
1/2 cup agave or honey
3 tablespoon vegetable oil
1 tablespoon vanilla
1 large egg

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Combine flour, wheat germ, baking powder, baking soda, salt in a bowl.3. In a standing mixer combine the 3 bananas, agave, oil, vanilla and egg. Beat until combined and bananas are mashed.4. Gently mix in the dry ingredients in 3 stages until just combined. Do not over-mix.5. Grease or line muffin cups or mini loaf pans and fill 3/4 full with the mixture.6. Place the slices of banana on top of each filled muffin cup or decoratively over the loaf pan.7. Bake 15 minutes for mini muffin cups, 20 for regular muffin cups or 25 minutes for mini loaf pans or until a toothpick comes out clean.8. Cool and serve.

1 cup whole-wheat flour (spooned and leveled)
3/4 cup all-purpose flour, (spooned and leveled)
1/4 cup wheat germ
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, room temperature
1/3 cup granulated sugar
1/3 cup packed light-brown sugar
2 large eggs
2 ripe bananas (about 1 pound)
1/3 cup reduced-fat (2 percent) milk
1 teaspoon pure vanilla extract
1 cup frozen blueberries

Steps:

  • Preheat oven to 375 degrees. Line a 12-cup muffin pan with paper liners. In a bowl, whisk together flours, wheat germ, baking soda, and salt.
  • In a large bowl, beat butter and sugars with a mixer until light and fluffy. Add eggs, one at a time, beating well after each addition. In another bowl, mash bananas with a fork (you should have 3/4 cup); stir in milk and vanilla.
  • With mixer on low, alternately add flour mixture and banana mixture to butter mixture, beginning and ending with flour mixture; mix just until combined. Fold in frozen blueberries.
  • Divide batter among muffin cups. Bake until a toothpick inserted in the center of a muffin comes out clean, 25 to 28 minutes, rotating pan halfway through. Let cool in pan 10 minutes; transfer muffins to a rack to cool 10 minutes more.

FOR THE TOPPING
3 Tbsp wheat germ
2 Tbsp firmly packed brown sugar
1 Tbsp all purpose flour
1 Tbsp butter, melted
1/8 tsp pumpkin pie spice
FOR THE MUFFINS
1 1/2 c all purpose flour
1/2 c wheat germ
1/2 c firmly packed, brown sugar
2 1/2 tsp baking powder
1 1/2 tsp pumpkin pie spice
3/4 c mashed bananas (2 bananas)
3/4 c milk
3 Tbsp butter, melted
2 eggs, slightly beaten

Steps:

  • 1. Heat oven to 400 degrees.
  • 2. Grease and flour muffin pan or line with paper liners.
  • 3. Combine topping ingredients, mix well; set aside.
  • 4. In medium bowl combine bananas, milk, butter, and eggs. Mix well.
  • 5. In a large bowl, combine flour, wheat germ, baking powder, salt, sugar and pie spice; mix well.
  • 6. Mix together wet and dry ingredients.
  • 7. Fill muffin cups almost full.
  • 8. Sprinkle topping evenly over batter, patting gently.
  • 9. Bake 22 minutes.
  • 10. Cool for 5 minutes in pan. Next, remove muffins from pan and finish cooling on wire rack.

1 teaspoon baking powder

1 egg
2 tablespoons canola oil
2 tablespoons unsweetened applesauce
STREUSEL:
1/4 cup packed brown sugar
2 tablespoons toasted wheat germ

1 tablespoon cold butter
2 tablespoons finely chopped walnuts

Steps:

  • In a large bowl, combine the flours, brown sugar, baking powder, baking soda and salt. In another bowl, beat the bananas, egg, oil and applesauce until well blended. Stir into dry ingredients just until moistened., Coat muffin cups with cooking spray or use paper liners; fill two-thirds full with batter. For streusel, combine the brown sugar, wheat germ and cinnamon; cut in butter until crumbly. Stir in walnuts. Sprinkle over batter., Bake at 375° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
