WHEAT FLOUR HALVA
There are varieties of halva in the Middle East but this one is a Persian-style with saffron, rose water, and cardamom with a soft texture that melts in you mouth. Decorate as desired with almonds and pistachios. Serve it at room temperature.

Steps:
- Bring water and sugar to a boil in a small pot, stirring until sugar dissolves into a syrup. Stir rose water, cardamom, and saffron into the syrup. Reduce heat to low; cover to keep syrup hot.
- Melt butter in a large saucepan over low heat. Stir in flour until mixture is a smooth paste, about 1 minute. Cook, stirring constantly, until paste turns brown, 10 to 15 minutes.
- Remove flour mixture from heat. Whisk in hot syrup gradually until syrup is completely absorbed and mixture is the consistency of a smooth, soft paste, at least 4 minutes.
- Spread mixture in a shallow bowl. Cool to room temperature, about 20 minutes.

Steps:
- firstly, take 1 cup wheat flour and knead to smooth and soft dough adding ½ cup water or as required.
- soak wheat dough in 5 cup water for 3 to 4 hours.
- squeeze the dough well and mix with water to get wheat milk.
- strain the wheat flour water to remove the wheat flour residue.
- further, transfer the wheat flour milk into large kadai.
- keep stirring for 10-15 minutes, till the milk turns porridge consistency.
- now add 1½ cup sugar and ¼ cup ghee. mix well making sure the sugar dissolves completely.
- after 15 minutes, ghee has been completely absorbed by the wheat mixture.
- add a tbsp of ghee and keep stirring on medium flame.
- repeat this for at least 5-6 times or till the mixture starts to release out ghee.
- once the ghee is released, add 2 tbsp chopped cashew and a pinch of orange food colour.
- mix well making sure everything is combined well.
- turn off the flame and add ¼ tsp cardamom powder. mix well.
- transfer to a tray and cut into square pieces.
- finally, serve wheat halwa / tirunelveli halwa / godhumai halwa or store in airtight container for a week.

- Heat ½ cup ghee in a kadai. Add in nuts and raisan and fry till golden. Drain and set aside.
- In the same pan, add in wheat flour and roast on low flame for a good 5 to 6 mins till the raw smell leaves away.
- Now add in water and keep mixing.
- Now add in sugar and mix well. Cook this by keep stiring it.
- After 5 mins or so, if you see the halwa sticky, add ghee tblspn at a time and keep mixing.
- I added around 4 tblspn more ghee to make it glossy and non sticky.
- Now add in cardamom powder and fried nuts.
- Mix well and serve.

- Measure jaggery,ghee and wheat flour. If using jaggery powder, heat the jaggery powder with 1/4 cup of water in a saucepan until it melts completely. Switch off the flame once done and set aside. In a thick bottomed pan, heat and melt ghee.
- Add in the wheat flour and roast it in low medium flame for 10 minutes until golden brown and nice aroma comes.
- Once the wheat flour is roasted well, add water. stir it quickly. Keep stirring it continuously until the water is completely absorbed and it comes altogether. It may take 3-5 minutes in low flame.
- Then add jaggery water or syrup,now the halwa starts liquidized. Keep stirring continuously. When the halwa forms a whole mass and doesn't stick to the pan, add ghee fried cashews or almonds if desired. Switch off the flame once done. It hardly takes only 2-3 minutes after adding jaggery.
