Steps:
- Heat olive oil in large saute pan over low heat. Add onions and salt and sweat until soft, about 10 minutes. Add garlic and continue cooking for 5 minutes. Add butter to pan and melt. Add mushrooms, and soy sauce, increase heat to medium and continue cooking for 5 to 10 minutes, until mushrooms release their liquid. Add wine and chicken broth and simmer 5 minutes, until wine begins to evaporate. Add wheat berries, rice, thyme, rosemary, and lemon rind to heat through. Adjust seasoning, to taste.
YUMMY WHOLE GRAIN WHEAT PILAF (WHEAT BERRY)
I made this tonight and we thought it was great. Even my 20-month old daughter LOVED it and that's saying something. I know a lot of people want more whole foods in their diet but have no clue what to do with them. Whole grains can get pretty intimidating. This is a healthy, whole grain recipe that's easy as can be. I've listed the fruit and nuts at the end as optional because this is good with or without those ingredients. I like it without. You can also add some grilled chicken or shrimp and make it an entree. Let your mood dictate how you make it. :) Also, I entered this under the Kid Pleaser category only because my picky 20-month old loved this so much! :D

Steps:
- Rinse the wheat berries.
- Bring 2 cups water to a boil in medium saucepan and dissolve the bouillon cubes.
- Add the rinsed wheat berries and cover.
- Return to boil then reduce heat to simmer for 45 to 50 minutes until most of the liquid is absorbed and grains are firm yet chewy.
- In a large skillet,heat olive oil over medium high heat.
- Add onions and saute for about 5 minutes until translucent.
- Reduce heat to medium and stir in the garlic and carrots, cooking 3 minutes.
- Add the mushrooms and saute until their released liquid has evaporated--about 10 minutes.
- Push the veggies off to the side and use the free space in the skillet to scramble the beaten eggs.
- Stir in the cooked wheat berries, pepper, onion salt and any OPTIONAL items you're going to add.
- Cook 2 or 3 more minutes to heat through.
- Voila!

- Cover wheat berries with cold water in a bowl, then chill, covered, 8 to 12 hours. Drain in a sieve and rinse.
- Make pastry while wheat berries soak:
- Sift together 2 1/4cups flour, 1/4 cup sugar, baking powder, and 1/2teaspoon salt. Blend in 1 1/4sticks butter (1/2 cup plus 2 tablespoons) with a pastry blender or your fingertips until mixture resembles coarse meal. Add 2 whole eggs and stir with a fork until a crumbly dough forms.
- Turn dough out onto a work surface. Divide in half and with heel of your hand smear each piece of dough twice with a forward motion to help distribute fat. Gather dough and form into 2 disks. Chill, wrapped in plastic wrap, until firm, at least 1 hour.
- Make filling:
- Bring soaked wheat berries and cold water to a boil in a 2-quart saucepan, then reduce heat and simmer, covered, until wheat berries are tender, about 1 1/2 hours. Add remaining 1/2 teaspoon salt and simmer 5 minutes more. Drain in sieve and rinse under cold water until cool. Drain well.
- Whisk together 2 yolks and 1/4 cup sugar, then whisk in cornstarch and remaining 3 tablespoons flour until smooth. Bring milk to a boil in a small heavy saucepan, then gradually add hot milk to yolks, whisking.
- Pour custard into saucepan and bring to a boil over moderately low heat, whisking constantly (custard will get very thick), then boil, whisking, 1 minute. Remove from heat and whisk in vanilla and remaining 1/4 stick (2 tablespoons) butter. Transfer pastry cream to a bowl and chill, its surface covered with wax paper.
- Beat together ricotta and remaining 1/3 cup sugar with an electric mixer at medium speed until sugar is dissolved, about 3 minutes. Beat in flower water, pastry cream, and remaining 2 yolks, then stir in zest, citron, cinnamon, and wheat berries.
- Assemble and bake pie:
- Preheat oven to 350°F.
- Roll out half of dough into a 13-inch round on a well-floured surface with a floured rolling pin. Fit dough into a 9-inch (24-centimeter) springform pan (dough is very tender and will crack). Press dough against side of pan and patch any cracks. Chill.
- Lightly beat remaining egg. Roll out remaining dough into a 10-inch round and transfer to a baking sheet. Brush dough with some of egg, then cut into 10 (1-inch) strips with fluted pastry wheel.
- Spoon filling into chilled pie crust (filling will not reach top of crust).
- Arrange 5 dough strips vertically on filling (1 inch apart), pressing ends of strips into crust. Arrange remaining 5 strips over them in same manner to form a diagonal lattice. Trim crust 1/2 inch from top of filling, then fold over lattice. Brush edge with some of egg.
- Bake pie in middle of oven until pastry is golden and filling is puffed and set, about 1 1/2 hours, covering top of pie with foil after 50 minutes to prevent over-browning. Transfer to a rack to cool. Run a thin knife around edge of pie and remove side of pan. Chill pie at least 2 hours. Bring to room temperature before serving.

- Place the Wheatberries and 3 cups of boiling salted water in a saucepan and cook, uncovered, over low heat for approximately 45 minutes, or until they are soft.
- Drain.
- Saute the red onion in 2 tablespoons of olive oil over medium-low heat until translucent, approximately 5 minutes. Turn off the heat and add the remaining 4 tablespoons (1/4 cup) of olive oil and the balsamic vinegar.
- In a large bowl, combine the warm Wheatberries, sauteed onions, scallions, red bell pepper, carrot, 1/2 teaspoon salt, and the pepper. Allow the salad to sit for at least 30 minutes for the wheatberries to absorb the sauce.
- Season, to taste, and serve at room temperature.

BASIC COOKED WHEAT BERRIES
A very chewy grain that can be cooked on the stove top or in a slow cooker. Cooked berries can be stored in the fridge for two days or in the freezer for a month. No you do not need to pre-soak. While toasting can be skipped we feel it improves the flavor.

- Place washed berries in a large frying pan over medium heat. Cook shaking the pan for around 3 to 5 minutes. Till they start to pop. Being careful not to over cook or burn.
- Stovetop: Combine water and wheat in a saucepan. Bring to a boil, then lower heat to a simmer. Cover and cook until all the water is absorbed and grain is soft and chewy, approximately 1 to 1 1/2 hours.
- Slow Cooker: Combine water and wheat in a slow cooker. Cook on low for 8 to 10 hours.

- Place the wheat berries in a large bowl. Cover with at least 6 cups cold water. Set aside to soak for at least 4 hours. Drain and place in a large non stick saucepan.

- Pour 3 tablespoons warm water into bowl. Sprinkle yeast over; stir to blend. Let stand until yeast dissolves, about 10 minutes.
- Whisk milk, melted butter, 2 tablespoons sour cream, egg yolk, sugar, and salt into yeast mixture. Add both flours; whisk until smooth. Cover with plastic wrap; let stand at room temperature until very small bubbles begin to form on top of batter, 2 1/2 to 3 hours (batter will not rise).
- Using electric mixer, beat egg white in another medium bowl until stiff but not dry. Fold beaten egg white and dill into batter. Brush griddle or large nonstick skillet with oil; heat over medium heat. Working in batches, drop batter by tablespoonfuls onto griddle; cook until bubbles form on top and blinis are golden on bottom, about 1 minute. Turn blinis over and cook until golden on bottom, 30 seconds to 1 minute. Transfer blinis to rimmed baking sheet. DO AHEAD: Can be made 2 hours ahead. Rewarm uncovered in 350°F oven 5 minutes.
- Serve blinis with sour cream and caviar.

- Place navy beans in large bowl and wheat berries in a separate bowl.
- Bring 6 cups water to boil and pour half of water over beans and half over wheat berries.
- Set both aside for two hours.
- Heat olive oil in large saucepan over medium heat.
- Add onion, leek, celery, carrot and garlic.
- Stir until soft and fragrant, about 8 minutes.
- Drain the beans and add them to the vegetables.
- Stir to coat.
- Add broth, boquet garni and bay leaf.
- Cover the saucepan, increase heat to medium high, and bring to a boil.
- Lover the heat to medium low and simmer until the beans have cooked, about an hour.
- Remove boquet garni and bay leaf, and transfer the soup to a food processor or blender.
- Blend in short pulses to make a chunky soup rather than a puree.
- Return the soup to the pan, Or use an immersion blender to process soup in pan.
- Drain the wheat berries and add them to the saucepan Bring soup to a boil again over medium high heat, cover and lower heat to medium low.
- Simmer until the wheat berries are tender, about 50 minutes.
- Stir often to keep the wheat berries from sticking to the pot, Just before serving, stir in the lemon juice, and adjust the seasoning with salt and pepper.
