1 1/2 cups shredded mozzarella cheese
1 1/2 cups ground almonds
1/4 cup garbanzo bean (chickpea) flour
1/4 ground golden flaxseeds
1 tsp onion powder
1/2 tsp garlic powder
1/2 tsp sea salt
2 eggs
1/4 cup extra-virgin olive oil
1/2 cup water

Steps:

  • In a food processor, pulse the mozzarella until it becomes granular in size. In a large bowl, combine the mozzarella, almonds, garbanzo bean flour, flaxseeds, onion powder, garlic powder, and salt. Stir in the eggs, oil, and water and mix thoroughly. Spread a large sheet of parchment paper over a baking sheet. Place the dough on the parchment paper and lay a second sheet of parchment paper on top of the dough. Flatten with a rolling pin into a 14" round. Carefully remove the top layer of parchment paper. Use a spoon or your hands to form a crust edge. Bake for 20 minutes.

1 teaspoon white sugar
1 ½ cups warm water (110 degrees F/45 degrees C)
1 tablespoon active dry yeast
1 tablespoon olive oil
1 teaspoon salt
2 cups whole wheat flour
1 ½ cups all-purpose flour

Steps:

  • In a large bowl, dissolve sugar in warm water. Sprinkle yeast over the top, and let stand for about 10 minutes, until foamy.
  • Stir the olive oil and salt into the yeast mixture, then mix in the whole wheat flour and 1 cup of the all-purpose flour until dough starts to come together. Tip dough out onto a surface floured with the remaining all-purpose flour, and knead until all of the flour has been absorbed, and the ball of dough becomes smooth, about 10 minutes. Place dough in an oiled bowl, and turn to coat the surface. Cover loosely with a towel, and let stand in a warm place until doubled in size, about 1 hour.
  • When the dough is doubled, tip the dough out onto a lightly floured surface, and divide into 2 pieces for 2 thin crust, or leave whole to make one thick crust. Form into a tight ball. Let rise for about 45 minutes, until doubled.
  • Preheat the oven to 425 degrees F (220 degrees C). Roll a ball of dough with a rolling pin until it will not stretch any further. Then, drape it over both of your fists, and gently pull the edges outward, while rotating the crust. When the circle has reached the desired size, place on a well oiled pizza pan. Top pizza with your favorite toppings, such as sauce, cheese, meats, or vegetables.
  • Bake for 16 to 20 minutes (depending on thickness) in the preheated oven, until the crust is crisp and golden at the edges, and cheese is melted on the top.

That may sound like nothing special, but when we eliminate wheat from our lives, we also eliminate the unique viscoelastic properties of wheat gluten, the quality that provides wheat foods' portability and the unique sturdiness that allows you to stuff a pita full of ingredients or hold a sandwich between your hands. In this recipe, we re-create these properties by using a plentiful quantity of cheese mixed with nonwheat flours. This confers sufficient strength to the dough to allow you to confidently eat a slice of pizza with your hands without a lapful of tomato sauce! For a classic pizza, remove the baked crust from the oven and layer with pizza sauce, mozzarella cheese, Parmesan cheese, and your favorite toppings. 1 pound bulk or loose sausage
1 medium onion, chopped
2 cloves garlic, minced
1 wheat-free pizza crust, recipe here
2 cups sugar-free pizza or marinara sauce
8 oz fresh mozzarella, thinly sliced
1/2 red or green bell pepper, chopped
1 tsp dried oregano
2 tbsp grated Parmesan or Romano cheese

Steps:

  • Preheat the over to 350°F. In a skillet over medium heat, heat 2 tablespoons of the oil. Cook the sausage, onion, and garlic for 10 minutes, or until the sausage is cooked through and the onion is tender. Remove from the heat and drain if necessary. Place the pizza crust on a baking sheet. Top with the sauce, mozzarella, sausage mixture, bell pepper, oregano, and Parmesan or Romano. Drizzle the remaining 2 tablespoons oil over the top. Crisp, no flop, thin crust pizza

Yield makes one 30cm (12") thin crust pizza

Number Of Ingredients 11

85g [1⁄2 cup + 1 tbsp] brown rice flour
85g [3⁄4 cup] tapioca flour
7g [1 3⁄4 tsp] dried yeast (make sure it is gluten free)
2 tsp [2 tsp] xanthan gum
1 tsp [1 tsp] agar powder or agar flakes
pinch [pinch] salt
1 tsp [1 tsp] dried oregano (optional)
1 tsp [1 tsp] olive oil
1 tsp [1 tsp] vinegar
150ml [1⁄2 cup + 1 2⁄3 tbsp] warm water
toppings of choice

Steps:

  • In a mixing bowl combine the rice flour, tapioca flour, yeast, xanthan gum, agar, salt, and optional oregano. In a separate bowl mix the olive oil, vinegar, and warm water. Make a well in the centre of the dry ingredients and add the wet mixture. Beat well for 5-6 minutes by hand, or for 3 minutes in a food mixer. The dough should be soft and slightly sticky. Line a baking sheet with baking parchment, or lightly oil and rice flour. Put the dough on the baking sheet and using your hands knead the dough a few times until it is smooth. Using either your hands or a brown rice floured rolling pin, form the pizza dough into a smooth circular shape approximately 30cm (12") in diameter. Sprinkling with rice flour to stop it getting sticky as you work. Make the edges slightly thicker to retain the filling. Bake the pizza crust for 10 minutes. For the tomato sauce we used plain crushed tomatoes for quickness, however you can make a tomato sauce to suit your taste, or use a store bought version. Then top with grated cheese, chopped veggies, jalepenos, herbs etc. Put back into the oven for 25 minutes until golden brown and base is crispy.
