WESTERN NORTH CAROLINA VINEGAR BARBEQUE SAUCE
This is a Southern vinegar barbeque sauce with a splash of ketchup. I transfer some of the sauce to a plastic squeeze bottle for serving, and keep the rest in a glass quart jar in the refrigerator. Be sure to let the sauce come to room temperature before serving (you can warm it in the microwave if you want.)

EAST CAROLINA VINEGAR BBQ SAUCE RECIPE
Create your own amazing East Carolina vinegar BBQ sauce and mop with this simple to follow recipe. Tangy and spicy, Low Country vinegar sauce is great for finishing fatty pork and does double duty as a baste (or mop) for adding layers of flavor to the meat as it cooks. Because it is so thin, it penetrates deep.

Steps:
- Prep. Pour all the ingredients into a jar and shake. Let it sit for at least 12 hours to allow the flavors to meld. A week is better.
- Use. You can use it as a mop when you cook, you can use it as a finishing sauce when you serve the meat, or both. In the Carolinas, it is usually used as both a mop and a finishing sauce.
- To use it as both a mop and finishing sauce, warm it, pour a few ounces (~89mL) into a cup and paint it on the meat with a basting brush once every hour or so while it is cooking. If you use it as a mop, the sauce in the cup can get contaminated with uncooked meat juices on the brush. That's why you don't want to dip the brush in the whole bottle. Discard contaminated mop and serve untouched sauce at the table.
EASTERN NORTH CAROLINA BBQ SAUCE
I have tried a lot of recipes of Eastern North Carolina BBQ Sauce. This is the closest to what you will find in any of the BBQ Restaurants here in North Carolina. It is on the hot side, so you may wish to adjust the cayenne pepper and Tabasco™ sauce for milder flavor.

WESTERN NORTH CAROLINA VINEGAR BARBECUE SAUCE
I was searching for a western NC bbq sauce for some beef for my husband and there were none on here so I am posting this one. There are disputes about how western versus eastern NC bbq sauces are made. Some say no tomato based and some say add that ketchup! I don't really know, but this is good! Transfer some of the sauce to a plastic squeeze bottle for serving, and keep the rest in a glass quart jar in the refrigerator. I don't eat meat but love to dunk my toast in this. It's also good over grilled vegetables! I borrowed this from Allrecipes, submitted by Ogreugly.

VINEGAR-BASED BBQ SAUCE
It's not a proper Southern feast without a Vinegar-Based BBQ Sauce on the table. Most popular in eastern Carolina, this tasty condiment is typically made with just three simple ingredients: crushed red pepper, apple cider vinegar, and salt. But feel free to make it your own! Southern Living test kitchen director and host of BBQ&A, Robby Melvin, throws in a bit of brown sugar and hot pepper sauce for good measure. Add in a dash of cayenne pepper if your desired sauce packs a punch. Keep in mind vinegar-based sauce does not pair well with any form of BBQ beef. Pour it over ribs or pulled pork for the ultimate combination. Made with 8 ingredients that are probably already in your kitchen, this easy-as-pie recipe comes together in less than 10 minutes. Give it a try at your next backyard BBQ.
