HAMBURGER BEAN SOUP

Steps:

• Brown hamburger, bacon and onion in large skillet, stirring to break up hamburger into small chunks.
• Drain, and transfer meat mixture into a large crockpot.
• Add the remaining ingredients, stirring to combine.
• Note: this soup is good with minimal cooking (just enough to get good and hot), but is best when cooked slowly for 6-8 hours.

WESTERN BEAN AND BURGER SOUP

Steps:

• Bring ingredients to boil in large saucepan on medium-high heat; cover.
• Simmer on low heat 15 min. or until crumbles are cooked through (160ºF), stirring occasionally.

SOUTHWESTERN SKILLET BURGERS

Steps:

• In a large bowl, combine the beef, bread crumbs and taco seasoning and mix well. Shape into six 3/4-in.-thick patties. , In a large skillet over medium heat, cook patties for 3 minutes on each side or until browned. Remove patties; drain. , Add tomatoes and soup to the skillet; return patties to the pan. Bring to a boil. Reduce heat; cover and simmer for 10 minutes or until a thermometer reads 160° and juices run clear. Sprinkle with cheese; cover and heat until cheese is melted.

SLOW COOKER BLACK BEAN AND HAMBURGER SOUP

Steps:

• Brown the hamburger meat, drain the fat and place the meat into a slow cooker.
• Add the beans, seasonings and broth. (You can soak the beans before if desired - I never do!).
• Cook on low for around 8 hours or until the beans are tender, adding water or additional broth as needed. I usually need to add about 2 cups of water as the beans cook and soak up the liquid.

VEGAN BLACK BEAN BURGER SOUP

Steps:

• Heat olive oil in a medium stockpot over medium-high heat. Add onion, celery, and garlic and saute until soft, about 5 minutes. Stir in tomato paste, mustard powder, salt, and pepper. Add vegetable broth and sweet potatoes and bring to a boil, uncovered. Cook, stirring occasionally, until potatoes are tender, about 6 minutes.
• Reduce heat to low and add black beans, vegan "ground beef," spinach, and nutritional yeast. Cook until spinach has softened and soup is heated through, about 10 minutes.
