1 tablespoon butter
1 small onion, chopped
2 garlic cloves, minced
1 cup ketchup
1/4 cup packed brown sugar
1/4 cup lemon juice
2 tablespoons apple cider vinegar
2 tablespoons tomato paste
1 tablespoon yellow mustard
1 tablespoon Worcestershire sauce
2 teaspoons chili powder

Steps:

  • In a large saucepan, heat butter over medium heat. Add onion; cook and stir 2-3 minutes or until tender. Add garlic; cook 1 minute longer. Stir in remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, 15-20 minutes to allow flavors to blend.

This is one of my favorite tomato-based barbecue sauces. It's great on turkey, chicken, pork and, of course, beef! This is the sauce on turkey meatballs.

1 cup ketchup
1 tablespoon molasses
1 tablespoon red wine vinegar or 1 tablespoon red wine
1 tablespoon Worcestershire sauce
2 teaspoons chili powder
2 teaspoons granulated onion
2 teaspoons ground black pepper
1 teaspoon ground cumin
1/2 cup water (optional)

Steps:

  • 1. In a medium bowl whisk together the ingredients in the order they are listed.
  • 2. I enjoy using a mortar and pestle to grind the black pepper and cumin fresh but you can use pre-ground pepper and cumin.
  • 3. Simmer over low heat for 10 minutes (optional).

This is a true West Texas recipe that goes back to the 1870s which chuck wagons were known to use on the Goodnight and Chisholm trails.

Number Of Ingredients 13

1 small onion
3 small garlic cloves or 2 tablespoons garlic powder
1/4 cup sesame oil in place lard
1 star anise
1 (12 ounce) can tomato paste, instead of can tomato cooked crushed through sieve
1/2 cup apricot jam or 1/2 cup wild west texas plum jelly
1/4 cup honey, if desire sweeter version of bbq
1/4 cup cider vinegar or 1/4 cup red wine vinegar
1 ounce lime juice instead orange juice
1 dash salt and pepper, to taste
1/4 teaspoon sage
1 tablespoon chili powder
1 jalapeno pepper, if desire hot bbq

Steps:

  • Steep star anise in warm sesame oil for 5-10 minutes, do not let anise fry then remove the Star Anise. (Chinese Railroad worker method).
  • Combine onion in Star anise sesame oil under medium high heat and cook onion until starts to become clear.
  • Add garlic and cook until the garlic becomes aromatic
  • Add tomato paste and vinegar and cook for 2 minutes then reduce heat to simmer.
  • stir every 10 to 15 seconds until done.
  • add apricot or wild plumb jelly.
  • Continue stirring.
  • add sage.
  • add salt and pepper to taste.
  • add chili powder. You can add more or less depending on taste and heat desired heat ( add Jalapeno if desire hot BBQ).
  • add Honey if desired for sweeter BBQ.
  • add lime juice.
  • continue to simmer while stirring until reduced to desired consistency.
  • Use blender or immersion hand bender mixer to purify. Pass through fine sieve if desire extra smooth style texture like commercial bottled bbq.
  • Goes best with Wild Foul, pork, Turkey or chicken. Plum version is better with Beef, Deer or Buffalo.

3 tablespoons unsalted butter
1 small onion, halved and finely diced
pinch of kosher salt
1 tablespoon sweet paprika
1 teaspoon chili powder
2 cups tomato sauce
1/4 cup tomato paste
1/3 cup dark molasses
1/4 cup Worcestershire sauce
1 whole chipotle in adobo sauce
1/3 cup fresh lemon juice
freshly ground black pepper

Steps:

  • In a medium saucepan, melt butter over medium heat. Add the onion and a pinch of salt and cook, stirring occasionally, until soft, about 5 minutes. Reduce the heat to medium-low and add the paprika, chili powder, tomato sauce, tomato paste, molasses, Worcestershire sauce, and chipotle, whisking to combine. Bring to a gentle simmer and cook, stirring occasionally, until the flavors come together, about 30 minutes.
  • Remove from the heat and blend or puree until smooth. Stir in the lemon juice and season to taste with salt and pepper. Use immediately or store in the refrigerator for up to 1 month.

1 beef sirloin tip roast (4 pounds)
1 can (5-1/2 ounces) spicy hot V8 juice
1/2 cup water
1/4 cup white vinegar
1/4 cup ketchup
2 tablespoons Worcestershire sauce
1/2 cup packed brown sugar
1 teaspoon salt
1 teaspoon ground mustard
1 teaspoon paprika
1/4 teaspoon chili powder
1/8 teaspoon pepper
16 kaiser rolls, split

Steps:

  • Cut roast in half; place in a 5-qt. slow cooker. Combine the V8 juice, water, vinegar, ketchup, Worcestershire sauce, brown sugar and seasonings; pour over roast. Cover and cook on low 8-10 hours or until meat is tender. , Remove meat and shred with 2 forks; return to slow cooker and heat through. Spoon 1/2 cup meat mixture onto each roll.

TEXAS STYLE BABY BACK RIBS

Beautiful fall-off-the-bone ribs, packed with flavor and ready to impress any BBQ lover!

2 racks pork baby back ribs
3-4 tbsp Dijon mustard
1 tsp onion powder
1 ½ tsp garlic pepper (optional)
1 ½ tsp lemon pepper
1 ½ tsp smoked paprika
2 tsp ground black pepper
2 tsp seasoning salt
¼ tsp cayenne pepper
¼ tsp cumin
¼ tsp thyme
½ cup packed brown sugar
½ tsp garlic powder
½ teaspoon grated orange rind

Steps:

  • Cover the ribs in a light coat of mustard. You can either cover all sides, or simply just the top meat side.
  • Combine the rub ingredients in a small bowl. Sprinkle half a cup of the rub evenly over the ribs. Use your hands to rub the mix into the mustard. Wrap the ribs in aluminum foil and place in the refrigerator either overnight, or a couple of hours before cooking.
  • Heat up your charcoal grill with the coals all at one end (otherwise known as 2-zone cooking, or indirect grilling). Aim to heat up your grill's ambient temperature to 225°F.
  • Place the ribs (still in aluminum foil) on the grill side without hot coals underneath it. Cover the grill and leave the ribs to cook for 90 minutes.
  • Remove the ribs from he grill and unwrap the foil. Apply the remaining rub mixture, and transfer the ribs back to the grill (don't re-wrap the ribs), over indirect heat again. Cover the grill and cook for 10 further minutes, turn the ribs over and then cook for 10 minutes more.
  • Remove from grill, wrap in aluminum foil and leave to rest for 10-20 minutes.
  • Unwrap foil and serve ribs with your choice of BBQ sauce and sides.

The Real Texas BBQ sauce recipe consists of traditional variations of the same basic recipe, mostly served at home, or at local, low-key restaurants, the same way they once were served to locals in ranches and saloons.

1 cup ketchup or pureed tomatoes. If using tomato paste, use ½ cup paste and ¼ cup water.
1 cup Worcestershire sauce
1 cup coffee grounds (I use Moca Java)
2 cups chopped (white) onions
6 cloves minced garlic
¼ cup red hot chili peppers, chopped
1/2 cup brown sugar
1/2 cup cider vinegar
3 TBSP chili powder and 3 TBSP pepper flakes
2 teaspoons salt

Steps:

  • First, mix the ground coffee, chili peppers, pepper flakes, salt, and sugar, and blend well.
  • Separately, mix the tomato paste with the other wet ingredients which are vinegar, Worcestershire sauce, garlic and onions.
  • Combine the dry and wet ingredients in a sauce pan, and simmer for about 20 minutes on low heat.
  • Puree all the ingredients together, and then go back and simmer the mix again.
  • Allow for the sauce to thicken, or serve at room temperature.

1 chipotle chile from canned chipotle chiles in adobo,* minced with seeds
1/4 teaspoon ground cayenne

Steps:

  • Melt butter in medium saucepan over medium heat. Add garlic; stir 30 seconds. Stir in ketchup and all remaining ingredients. Bring to boil. Reduce heat to medium-low; simmer until reduced to 1 1/3 cups, stirring occasionally, about 15 minutes. Season with salt and pepper. do ahead Can be made 1 week ahead. Cool slightly, cover, and chill.
  • Dried, smoked jalapeños in a spicy tomato sauce called adobo; available at some supermarkets and at Latin markets.
