BEER AND BROWN SUGAR STEAK MARINADE
I concocted this marinade on a lark and it turned out great. The flavors complement and do not overwhelm the natural taste of beef.

- Preheat grill for high heat.
- Use a fork to poke holes all over the surface of the steaks, and place steaks in a large baking dish. In a bowl, mix together beer, teriyaki sauce, and brown sugar. Pour sauce over steaks, and let sit about 5 minutes. Sprinkle with 1/2 the seasoned salt, pepper, and garlic powder; set aside for 10 minutes. Turn steaks over, sprinkle with remaining seasoned salt, pepper, and garlic powder, and continue marinating for 10 more minutes.
- Remove steaks from marinade. Pour marinade into a small saucepan, bring to a boil, and cook for several minutes.
- Lightly oil the grill grate. Grill steaks for 7 minutes per side, or to desired doneness. During the last few minutes of grilling, baste steaks with boiled marinade to enhance the flavor and ensure juiciness.

- Place your steaks in a large dish with a lid or ziplock bag.
- Blend all the marinade ingredients in your food processor until you have a smooth liquid with no significant chunks.
- Pour over steaks and marinade for 6-12 hours.
- Grill as desired.
- * This is a great marinade for beef and chicken, but really works it's magic on gamier meats such as lamb, turkey, kangaroo, venison and goat.

- Mix together the garlic, rosemary, tomato paste, Worcestershire sauce, mustard and beer in a non-reactive dish. Snip the skin of the beef at 5cm intervals to stop the steak curling up during cooking. Place in the marinade and refrigerate for 4-6 hours.

- Start your marinade with oil. Your marinade should be at least ½ oil. Why? Because oil is a great flavour carrier, helps the meat to cook evenly and emulsifies the marinade into a thick sauce that will easily coat the meat.
- Add an acid – but don’t go too crazy. Acid helps to tenderise the connective tissues in the meat. You need to be careful that you don’t add too much acid (or marinade the meat for too long in an acid-rich marinade), because this can give the meat a tough and chalky texture.
- Add your flavours. It’s now time to choose your flavours. Basically, you can get creative and add whatever you think will taste good – start by checking out all your condiments, spices and herbs, and go from there.
- Something salty, something sweet. To balance out the flavour of your marinade, a general rule is to add something salty and something sweet. Sweeteners can include a dash of honey, brown sugar or maple syrup.
- Marinate beef for 1-12 hours. Coat the beef in the marinade. You want as much of the beef surface as possible to be covered by the marinade, and the easiest way to do this is by using a resealable plastic bag.
- Pat beef down and start cooking! Once your beef is ready for cooking, remove the beef from the marinade and pat it down with an (unscented!) paper towel.
