BLUE RIBBON APPLE PIE

So named because I won a blue ribbon at the county fair with this recipe. I use recipe #13619 for the double pie crust. However, I especially love it with Recipe #109287. Prep time depends on if you are peeling & slicing the apples by hand or not.

8 cups peeled & cored thinly sliced apples
1 tablespoon lemon juice
3/4 cup sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2 tablespoons flour
1 1/2 tablespoons cornstarch
1/8 teaspoon salt
2 tablespoons butter
1 (9 inch) double crust pie crusts, unbaked

Steps:

  • Coat apple slices with lemon juice.
  • Combine sugar, spices, flour, cornstarch and salt in a large zip-loc bag.
  • Add apples and shake bag until thoroughly coated.
  • Immediately, put coated apples into prepared pie crust.
  • Dot with butter.
  • Cover with top crust.
  • Crimp edges to seal and cut vent holes into crust.
  • Brush with milk and sprinkle with cinnamon sugar.
  • Bake at 425°F for 15 minutes, reduce temperature to 350°F and continue baking for 45 minutes or until golden brown.

Came up with this over the weekend and it was a hit!! We devoured this pie and it will be a regular from now on!! Delicious!!!

Number Of Ingredients 18

7 c apples and pears peeled and sliced...i did half and half
1/2 c sugar
1/4 c brown sugar lightly packed
2 Tbsp a p flour
1/2 tsp ground ginger
1 tsp grated lemon peel
1/2 c candied ginger chopped fine
3/4 c chopped walnuts...more or less...u can use pecans too
pinch of salt
1 Tbsp lemon juice
1 Tbsp butter
DOUBLE PIE CRUST
2 c ap flour..i used organic ap unbleached
3/4 tsp salt
1 c shortening...i use earth balance
1 large egg
2 Tbsp cold water
1 Tbsp white vinegar

Steps:

  • 1. Preheat oven to 450 degrees. Make your favorite double pie recipe or use mine. Divide pastry in half Roll out your bottom pastry and line a 9 inch pie plate. Sprinkle your chopped nuts and candied ginger over the crust. Mix your peeled apples and pears together in a large bowl. Set aside. In a small bowl mix the sugars, flour, lemon peel ,ground ginger & salt.Mix with prepared fruit and turn into your pie plate covering the candies ginger and nuts. Sprinkle the filling with the lemon juice and dot with the tbsp of butter. Cover with top crust. Seal edges and prick or slit top all over for steam to escape. Bake at 450 for for 15 mins. Reduce heat to 350 and continue baking 40 to 45 until golden brown and fruit is bubbling through slits.
  • 2. Cool and enjoy!! We had organic vanilla yogurt on top!! Yummy!!
  • 3. Double Pastry: Combine flour and salt. Cut in room temperature shortening until it resembles peas. Beat egg, water and vinegar together. Add to flour and mix with a fork until mixture is moistened. DO NOT OVERWORK. It will make it tough. Divide dough in half and shape each in a ball. I always put a sheet of wax paper on my counter , put the dough in the middle, cover with another sheet of wax paper and roll out. I remove the top layer of wax paper, flip the crust over into the pie plate and peel off the wax paper. Discard. Repeat for top crust.

2 1/2 cups all-purpose flour, plus additional for rolling
1 tablespoon sugar
3/4 teaspoon salt
8 ounces (2 sticks) unsalted butter, cut into 1/2-inch cubes
1/4 cup ice water, plus more if needed
3 Granny Smith apples, peeled and thinly sliced
3 Macintosh apples, peeled and thinly sliced
2/3 cup sugar
2 tablespoons cornstarch
2 tablespoons crystallized ginger, finely chopped
1 teaspoon ground cinnamon
1 tablespoon fresh lemon juice
1 teaspoon vanilla bean paste
Pinch kosher salt
1 large egg
Vanilla ice cream, for serving

Steps:

  • For the crust: Put the flour, sugar and salt into the bowl of a food processor fitted with the pastry blade and pulse a few times to combine. Add the butter and pulse a few times until the mixture resembles fine gravel. Add 1/4 cup ice water a few tablespoons at a time until the dough comes together and forms a ball. Remove from the food processor, divide in two and form each piece into a disk. Wrap in plastic wrap and refrigerate for at least 30 minutes or until ready to use.
  • For the filling: In a large bowl, combine the apples, sugar, cornstarch, crystallized ginger, cinnamon, lemon juice, vanilla bean paste and salt.
  • Preheat the oven to 425 degrees F and remove one of the disks of dough from the refrigerator. If necessary, leave to soften for 10 minutes or so. On a floured surface, roll out the disk into a 12-inch round about 1/8-inch thick. Transfer to a 9-inch pie dish and gently press into place, eliminating any air pockets. Trim the dough overhang to 1/2 inch.
  • On a floured surface, roll the second disk into a 12-inch round about 1/8-inch thick. Transfer the apple filling to the dough-lined dish. On top of the filling, add the second crust, allowing each to overhang by 1/2 inch. Fold the top crust edges over the overhang of the bottom crust and crimp the edges to seal. Cut six slits into the top crust.
  • Beat the egg with 1 to 2 tablespoons of water. Using a pastry brush, lightly paint the crust with the egg. Using aluminum foil, make a "collar" around the edges of the pie to prevent it from browning too quickly.
  • Bake 15 minutes. Reduce the oven temperature to 350 degrees F and continue baking until the crust is golden brown and the filling is bubbly, about 1 hour. (Remove the foil collar for the last 10 to 15 minutes.)
  • Transfer the pie to a rack and cool completely.
  • Serve with a scoop of vanilla ice cream.

Buttery Pie Crust for a 9-inch double pie
5 or 6 large Granny Smith apples (to make 5 cups, sliced)
1 1/2 tablespoons fresh lemon juice
1/2 cup (packed) light-brown sugar
4 ounces crystallized ginger
2 tablespoons cornstarch
1 1/2 teaspoons ground cinnamon
2 tablespoons Calvados (apple brandy)
1 large egg white, lightly beaten with 1 tablespoon water
2 tablespoons cold unsalted butter, cut into small pieces
2 tablespoons milk
1 teaspoon sugar

Steps:

  • 1. Preheat the oven to 375°F.
  • 2. Prepare pie dough and form pie shell as directed through Step 4 in the Buttery Pie Crust recipe, rolling out the bottom crust to fit a 9-inch pie plate. Roll out the top crust and fold it into quarters. Beginning about 3/4 inch from the center point, use a knife to cut 3 slits on both of the straight sides, leaving 1/2 inch between each. This will allow steam to escape as the pie bakes. Place the top crust on a plate. Cover both crusts with plastic wrap and refrigerate until ready to use.
  • 3. Peel, core, and thickly slice the apples. Place them in a large bowl and toss gently with the lemon juice.
  • 4. Combine the brown sugar, ginger, cornstarch, and 1 teaspoon of the cinnamon in a food processor. Pulse the machine on and off until well mixed and the ginger has been finely chopped. Add this mixture to the apples, along with the Calvados; toss gently to combine.
  • 5. Remove the prepared pie shell from the refrigerator. Brush the bottom and sides with the egg-white mixture to prevent sogginess. Spoon in the apple filling. Dot the filling with the butter.
  • 6. Remove the top crust from the refrigerator and unfold it over the filling. Trim the overhang to 1 inch. With a little water, moisten the edges where the crusts meet, then press together lightly and turn under. Crimp the edge decoratively. Brush the top crust lightly with the milk. Mix the remaining 1/2 teaspoon cinnamon with the sugar and sprinkle the mixture over the pie.
  • 7. Bake the pie in the center of the oven until the apples are tender, the juices are bubbly and the crust is golden brown, about 1 hour. Let cool on a rack before serving warm or at room temperature.
