My Great-Aunt Gladys was from a small mining town in England where pasties were popular. I loved to watch her craft each Cornish pasty, as she made them in different sizes depending on who was eating. Serve with a green salad to make a wonderful meal. -Verna Hainer, Pueblo, Colorado

Number Of Ingredients 15

3 cups all-purpose flour
1-1/2 teaspoons salt
3/4 teaspoon baking powder
1 cup shortening
8 to 10 tablespoons ice water
FILLING:
1 pound beef top round steak, cut into 1/2-inch pieces
1-1/2 cups finely chopped onion
1-1/2 cups cubed peeled potatoes (1/2-inch cubes)
1-1/2 cups chopped peeled turnips (1/2-inch cubes)
1 teaspoon salt
1/4 teaspoon pepper
4 tablespoons butter
1/2 cup evaporated milk, optional
Ketchup

Steps:

  • In a large bowl, mix flour, salt and baking powder; cut in shortening until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Cover and refrigerate for 30 minutes., Preheat oven to 375°. In another large bowl, combine beef, onion, potatoes, turnips, salt and pepper. Divide dough into 4 equal portions. On a lightly floured surface, roll 1 portion into a 9-in. circle. Mound 1-1/2 cups filling on half of circle; dot with 1 tablespoon butter. Moisten edges with water; fold dough over filling and press edges with a fork to seal. Place on a parchment-lined rimmed 15x10x1-in. baking pan. Repeat with remaining dough, filling and butter. Cut slits in tops of pasties. Bake 50-60 minutes or until golden brown. (If desired, pour milk into slits halfway through baking time.) Serve with ketchup., Freeze option: Freeze cooled pasties in a freezer container. To use, reheat pasties on a parchment-lined baking sheet in a preheated 375° oven until heated through.

Yield Makes enough for one double-crust or two single-crust 9 1/2-inch pies

Number Of Ingredients 6

2 1/2 cups all-purpose flour
3/4 teaspoon salt
1/2 cup (1 stick) plus 3 tablespoons unsalted butter, cut into small pieces and chilled
2 1/2 tablespoons vegetable shortening or 2 tablespoons lard, cut into small pieces and chilled
5 tablespoons ice water
2 tablespoons granulated sugar

Steps:

  • Combine flour, sugar, and salt in a large bowl. Cut in butter and lard using a pastry blender until mixture is crumbly. Add 2 tablespoons water and continue mixing. Add remaining 3 tablespoons water, one at time, mixing well after each addition, until dough just comes together.
  • Turn dough out onto a clean work surface. Divide in half, and place each half on a piece of plastic wrap. Shape into flattened discs. Wrap in plastic, and refrigerate for at least 30 minutes and up to 2 days before using.

1/4 teaspoon ground mustard

1 cup frozen peas, thawed
2 hard-boiled large eggs, chopped
Pastry for single-crust pie (8 inches)

Steps:

  • Melt butter in a saucepan; stir in flour, salt, mustard and pepper until smooth. Gradually add milk and onion; bring to a boil. Cook and stir for 2 minutes or until thickened. Stir in ham, peas and eggs. Pour into an ungreased 8-in. square or 11x7-in. baking dish. On a floured surface, roll pastry to fit top of dish; place over filling. Seal and flute edges; cut slits in the top. Bake at 425° for 25 minutes or until crust is golden brown and filling is bubbly.

225 g plain flour
100 g butter, unsalted
pinch salt
2-3 Tbsp water
3 lb potatoes, mashed roughly
6 white onions
3 lb smoked bacon, thick slices
1 1/2 lb cheese, shredded (strong)
8 sausage (spicy)
2 leeks
1 egg, beaten

Steps:

  • 1. To make the pastry...sift the flour into a large bowl, add the butter and rub in with your fingertips until the mixture resembles fine breadcrumbs
  • 2. Stir in the salt, then add 2-3 tbsp. water and mix to a firm dough. Knead the dough briefly and gently on a floured surface. wrap in cling film and chill while preparing the filling
  • 3. Pie filling.... Fry the smoked bacon and spicy sausage in virgin olive oil, until golden brown. Leave to cool. Then add to the roughly mashed potato
  • 4. Grate cheese and put to one side
  • 5. Peel and slice 1 leek and 4 onions into bite size pieces, peel potatoes, slice into quarters. Boil together with a pinch of salt, until soft. Drain once cooked, add 1lb of cheese, leave to cool then mash roughly
  • 6. Wash and cut up remaining leek and onions, set aside.
  • 7. Roll out pastry to fit your selected pie dish(es). Then add the cooled potato mix, before adding the pastry to the pie top, add raw onions, remaining leek and rest of cheese. place pastry topping to pie mix, cut two small slits in pastry top
  • 8. Egg wash to pastry top
  • 9. cook 180C, 350F. Cook for 35-40 minutes, or until golden brown. Use 4" or 6" pie cases or 1 large pie dish

1 whole chicken (4 pounds), rinsed and patted dry
4 cups homemade or low-sodium store-bought chicken stock
1 large onion, halved
2 bay leaves
1/2 teaspoon whole black peppercorns
3 sprigs fresh thyme, plus 2 tablespoons thyme leaves
1 celery stalk, cut crosswise into thirds
5 tablespoons unsalted butter
9 ounces medium red potatoes, cut into 1/2-inch chunks
12 white, red, or yellow pearl onions (halved lengthwise if large)
1 medium leek, white and pale-green parts only, cut into 1/4-inch-thick rounds and rinsed well
2 medium carrots, peeled and cut into 1/4-inch-thick rounds
6 ounces white mushrooms, halved lengthwise (quartered if large)
1/4 cup plus 1 tablespoon all-purpose flour, plus more for dusting
1 cup milk
2 tablespoons coarsely chopped fresh flat-leaf parsley
Finely grated zest of 1 lemon
2 teaspoons coarse salt
1/2 teaspoon freshly ground pepper
Pate Brisee for Mini Chicken Potpies
2 tablespoons mixed fresh herb leaves, such as flat-leaf parsley, sage, chives, thyme, dill, rosemary, and oregano
1 large egg

Steps:

  • Put chicken, stock, large onion, bay leaves, peppercorns, thyme sprigs, and celery in a large (8-quart) pot. Add just enough water to cover the chicken. Cover pot; bring mixture to a boil. Uncover; reduce heat. Simmer 1 hour.
  • Transfer chicken to a cutting board (reserve stock in pot). Remove skin from chicken; discard. Cut meat from bones; discard bones. Using a fork, shred meat into bite-size pieces; set aside.
  • Pour stock through a fine sieve into a large bowl; discard solids. Set aside 2 cups stock. (Reserve remaining stock for another use; cooled stock can be frozen in an airtight container up to 4 months.)
  • Melt butter in a large skillet over medium-high heat. Add potatoes and pearl onions. Cook, stirring occasionally, until potatoes begin to turn golden, about 5 minutes. Add leek, carrots, and mushrooms; cook, stirring occasionally, until softened, about 5 minutes more. Add flour; cook, stirring, 1 minute.
  • Stir in reserved 2 cups stock and the milk. Bring mixture to a simmer; cook, stirring constantly, until thick and bubbling, 2 to 3 minutes. Stir in chicken, parsley, thyme leaves, zest, salt, and pepper.
  • Divide chicken mixture among 8 (4-by-2-inch) ramekins, filling them almost to the top. Let cool slightly.
  • Preheat oven to 375 degrees. Roll out pate brisee on a lightly floured surface to 1/4 inch thick. Arrange mixed herbs on top; roll out dough with a lightly floured pin to 1/8 inch thick, gently pressing herbs.
  • Using a fluted (or plain) round dough cutter (4 1/2 inches in diameter), cut out 8 rounds from dough. Lightly beat egg with 1 tablespoon water. Brush top edges of ramekins with egg wash. Place a dough round over each ramekin; gently press to seal. Chill in freezer until dough is firm, about 10 minutes.
  • Brush dough with egg wash. Cut 4 slits in top of each round for steam vents. Bake until crust is golden brown and filling is bubbling, 35 to 40 minutes.

WELSH COLD PORK PIE

In Wales a cold pork pie always seems to be sitting about and waiting for you. The local bakeries in Wales all sell them. This does not have a bottom crust. First you bake the ingredients drain the fat and then put on the crust and bake till done. Use 1/2 the recipe of the basic easy crust. Freeze the other half or make another pies.

1 1/2 lbs coarsely ground lean pork (Best to grind your own)
1 yellow onion, peeled and chopped
2 eggs, beaten
1/4 teaspoon cayenne pepper
1/4 teaspoon ground sage
2 tablespoons Worcestershire sauce
salt & freshly ground black pepper
3 cups all-purpose flour
1 teaspoon salt
1/2 cup butter or 1/2 cup margarine
1/2 cup shortening
1 egg
1 tablespoon distilled white vinegar
3 -4 tablespoons ice water

Steps:

  • FOR THE FILLING: Mix all of the ingredients together, except the crust, and place in a 8 inch deep dish pie plate. Bake covered, in a preheated oven at 375°F for 1/2 hour. Remove from the oven and pour off the accumulated fat. Make the pie crust and use only 1/2 of the recipe, freeze the other half for future use. Cover with the crust and return to the oven for 45 minutes, or until the top crust is golden brown and flaky.
  • Allow to cool completely before serving.
  • This is great for a first course, a midnight snack, or a luncheon dish.
  • FOR THE BASIC EASY CRUST: In a medium size bowl stir the flour and salt together. Cut in the shortenings using a pastry blender. Keep working the flour and shortening until the mixture is rather grainy, like coarse cornmeal. Mix the egg and vinegar together and, using a wooden fork, stir the mixture into the flour. Add enough ice water so that the dough barely holds together. Place on a marble pastry board or a plastic countertop and knead for just a few turns, enough so that the dough holds together and becomes rollable.
  • I roll out my dough on a piece of waxed paper. It is easy to handle that way. I sprinkle the table with water and then put a piece of waxed paper on top, this way the paper does not move around as I am rolling. If you have a marble rolling it will be even easier. If you a wooden rolling pin, be sure to dust a teaspoon of flour on it a couple of times when you are rolling out the dough.
  • NOTE: This recipe will make enough dough for one 9-inch pie with two crust, top and bottom, or two single pie crusts. Serves 6.

1 lb ground pork
1 lb leek, washed and sliced
1/4 cup butter
2 teaspoons cumin
1 teaspoon cayenne pepper
salt and pepper
3 1/2 cups flour
3/4 cup lard or 3/4 cup butter
1 cup water
1 pinch salt
2 1/4 cups chicken stock
gelatin

Steps:

  • In a saucepan melt the butter and sweat the leeks without browning for five minutes on a medium heat until soft and buttery. Add the cumin and cayenne pepper and cook for a further five minutes. Put onto a tray to cool.
  • In a bowl add the ground pork, leeks and season. Mix well and then divide into four balls. Cover with plastic wrap and put into the fridge until needed.
  • To make the pastry, mix the flour and salt in a bowl and make a well in the centre. Bring the water and lard to the boil in a saucepan then stir it into the flour with a wooden spoon to form a smooth dough. Divide into four portions and leave the pastry for 10 minutes to cool.
  • Lightly grease each individual pie pan. Place it on a baking tray.
  • Take two thirds of each quarter of pastry and on a lightly floured table, roll it to fit the pie pan and overlap the edge. Carefully press into the corners and allow it to just hang over the edge. Roll the remaining pastry into an circle for the lid. Repeat this process with the remaining portions of dough.
  • Fill each pie with the pork filling. Brush the pie edges with egg wash and place the lid on top. Pinch the lid edge and the top of the pastry edges together with your thumb to crimp the pie and create a seal. Trim the edge with a knife so no pastry is hanging over the edge.
  • Pre-heat an oven to 350°F Brush the top of each pie all over with beaten egg yolk, make a hole in the middle of the pastry lid and cook for one hour.
  • Remove from the oven and leave to cool. Once the pie is cold, refrigerate for two to three hours.
  • Follow the instructions for the gelatin and add to the stock to make a firm jelly and refrigerate. Once the pie is cold, check around the pastry for any holes and fill them with softened butter so that the jelly doesn't escape. Take the jelly/stock from the fridge, remove the layer of fat from the surface and gently reheat to melt the jelly. Pour the stock into the round hole in the top of the pastry until the pie is filled. Cool in the fridge until the jelly is set.

  • Heat oven to 350F. Unroll crusts onto a greased cookie sheet. On each pie crust, place a layer of potatoes, one of onions, and beef strips on half the circle. Season with salt and pepper. Layer again with potato, onion and beef. Season again. Fold the pie crust over the potato/meat filling and crimp securely to seal the crust closed. Brush tops of the pastry with egg wash. Bake for 60 minutes. Serve with butter

Steps:

  • In small bowl, mix flour and salt. Set aside. In separate bowl, mix sugar. lard and margarine. Add flour mixture and work with a pastry blender until the mixture resembles fresh bread crumbs. Sprinkle water a tablespoon at a time until dough holds together. Form dough into three balls. Wrap 2 balls with saran wrap and place in refrigerator until ready to use. Sprinkle work surface with a dusting of flour. Roll dough for size of pie shell and place into pan. Fill with favorite filling. Roll out additional pie dough for top and seal with water and press both dough together, trim sides and decorate with extra dough. Cut vents on top of pie. Bake according to pie directions. Bon Appetit!
